Masumi is one of the great names of the sake world, admired throughout Japan for its satisfying taste and unshakeable, down-to-earth reliability. The brewery where it is made was founded in 1662 in the town of Suwa, where a tradition of precision craftsmanship had led to the development of the silk spinning trade. Attention to detail remains at the heart of the Masumi brewing philosophy to this day.
In 1920, the brewery's president, Masaru Miyasaka, appointed a 28-year-old sake prodigy named Chisato Kubota to the position of brewmaster. The two travelled throughout Japan in the manner of Zen monks, "knocking on the door of the master and seeking knowledge." This keen desire to elevate the quality of Masumi sake, combined with a shared openness of mind, was rewarded in 1936 when Miyasaka Brewing Company won the first of many top honors at the Japan National Sake Appraisal.
Masumi achieved even greater prominence in 1946 when brewmaster Kubota, discovering a lovely aroma emanating from one of the brewery's fermentation tanks, requested that an expert from the National Research Institute of Brewing be called in for consultation. Samples were taken and it was soon confirmed that a new yeast variety, Association No. 7, had been discovered.
In the sake world, discovering a new yeast is like receiving the Nobel Prize, and only a handful of breweries enjoy this distinction. With its gentle, pleasing aroma and ease of use, No. 7 soon spread beyond Nagano Prefecture, and today continues to be used by over half of the breweries in Japan. In 2002, Masumi released a redolent, old-style sake with an insouciant 21st-century attitude called "Nanago" (No. 7) in tribute to the famous microorganism to whom the sake world owes so much.

This beautiful block sits on the lower section of the Red Mountain side of the vineyard. Featuring a perfect southwest aspect, it gets the maximum sun exposure for depth and concentration. The land itself is wind-blown loess covering an alluvial floodplain, dotted with indigenous sage.
Winemaker's Notes
Explosively and exotically nuanced aromas of crème de cassis, Himalayan blackberry, black roses, dried violets, pencil shavings, crushed volcanic rock, and liquefied river minerals. While extremely dense and concentrated, this wine has a lot of grace and poise on the palate. The finish of inky deep black fruits, richly refined oak tones, and exotic floral notes, is utterly bewitching. Leave it for 5-7 years if you can or decant well before drinking. This is a 30-year wine in the making.
Review:
Lastly, and a wine that stopped me in my tracks, the 2021 Cabernet Sauvignon Block 47 might be the wine of the vintage. Revealing a dense purple hue as well as incredible aromatics of caramelized red and blue fruits, classy oak, lead pencil shavings, and a Latour-like sense of minerality, it hits the palate with full-bodied richness, building tannins, a stacked mid-palate, and a great, great finish. I love its balance and purity, but I suspect it’s going to demand bottle age.

Sestina: This wine is a blockbuster, with black currant, black raspberry, saddle leather, freshly tilled earth, vanilla, and violet on the nose. Exceedingly rich and balanced on the palate, with great poise and structure for long aging. The finish echoes with fresh black fruits, minerally touches, and floral notes.

The 2021 ‘Sestina’ is a gorgeous blend of 76% Cabernet Sauvignon with smaller parts Merlot and Cabernet Franc. Needing about 30 minutes in the decanter to fully unwind, this yields beautiful black florals that mingle well with wet stone, Black Forest Cake and suggestions of huckleberry with garrigue notes. The palate is soft and refined with a silky texture and beautiful sense of elegance and weight. This is seamless throughout the drinking experience, loaded with black fruit flavors with dark chocolate shavings and suggestions of underbrush. Refined tannins frame this stunning heavyhitter of a Cabernet that is already drinking beautifully now at the three year mark. Savor this beauty now and over the next fifteen to twenty years.

"The book end to the Right Bank-inspired Valery, this is the Left Bank-inspired wine which blends 76% Cabernet Sauvignon, 15% Merlot and 9% Cabernet Franc. Sourced from old vine Bacchus, Dionysus, Red Willow and DuBrul grapes, it’s given the rock star treatment with 21 months in 50% new French oak. I love the flavors of the well-chosen barrels, which match those spicy/toasty notes to fruit with both power and palate presence. Beautifully structured, powerful yet restrained, with ripe black fruits that trail into powdery tannins, this is a special wine with a long life ahead."
