Dark violet with a ruby crown, the wine exhibits classic Napa Cabernet aromatics with our style: black fruits—plum and cherry—dark chocolate, leather and Rutherford Dust coalesce from the glass. The entry is elegant and begins to flood the palate with notes of cassis, blackberry, blueberry, caramel and a touch of brown sugar and cinnamon: rich and bold. Seamless and focused, the wine closes with lingering dusty tannins and a touch of baking chocolate.

Vintage Notes: A cool summer and early fall allowed a longer ripening season, helping benefit this years Cabernet Franc, as its natural spice was allowed to mature and become better defined.

Pearmund Cellars Cabernet Franc is made from100% Cabernet Franc. Known primarily as a blending grape in Bordeaux’s left bank. Its ability to grow and mature in Virginia makes it one of the States finest varietals.

This is a very thoughtful Seña that shows unique aromas of warm earth, mushrooms and conifer, turning to dark berries and black olives. The palate is more glamorous with ultra-fine tannins that envelop your palate. Shows power and vibrancy at the end. Toned muscles. It’s a very intellectual wine that harkens back to the 2015. My Favorite Neighbor Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 9% Petite Sirah, 8% Petit Verdot, 2% Malbec, 2% Cabernet Franc and 2% Syrah .

What started as an homage to Stephan Asseo of L'Aventure Winery and his Bordeaux roots quickly became an obsession. Stretching wide across the Westside Hills of Paso Robles is clay soil amazingly similar to those found in Napa and Bordeaux. Today, these special sites are farmed meticulously by the farmers who have become My Favorite Neighbors. Review:

The 2018 Cabernet Sauvignon is similarly deep purple/ruby-hued and has slightly more red fruits with lots of black raspberry, cassis, toasted spice, unsmoked tobacco, and incense aromas and flavors. It almost has a Margaux-like perfume and is medium to full-bodied, seamless, and wonderfully balanced on the palate. Some chalky minerality comes through with time in the glass, and it has plenty of tannins and a great finish. Corinne Perchaud Chablis 2018

Corinne Perchaud Chablis is 100 percent Chardonnay.

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.

The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.  

Pairs well with Oysters or shellfish and Sole Meunière.

Murray Cabernet Sauvignon Red Mountain 2018

Murray Cabernet Sauvignon Red Mountain is made from 78% Cabernet Sauvignon, 10%, Merlot , 6% Malbec, 6%, Petit Verdot.

A beautiful ruby color, this wine is very fruity with lots of plum and just a hint of characteristic Red Mountain minerality. It is very smooth with a slight texture of tannin on the back. This wine is a real Cab crowd pleaser.
As much as possible, winemakers Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.

They age in the oak barrels until they are ready to bottle.Neutral Oak 52%, New Oak 48% (American 57%, Hungarian 15%, French 14%, European 14%).
After primary fermentation, all wines are pressed directly into 59 gallon oak barrels. Aging for 19 months.
