Pinot Noir is a variety of black wine grape that comes from the French words “pine” and “black.” These dark grapes are grown mostly in France’s Burgundy region, but it is also grown all over Europe, and in parts of South America, Canada, and the United States, and Pinot Noir vines thrive in cooler weather. The variety is especially sensitive to wind, frost and diseases. Although it is considered as a variety that produces the finest wines in the world, this variety is difficult to grow and cultivate. Pinot Noir wines are popular, with black and red cherry aromas, currant notes, and berry flavors. Depending on the growing conditions, Pinot Noir wines can also produce earthy tones, tomato aromas, or a wood-like flavor. The variety is also used to create Champagne, rose wines, and vin gris wines. The versatility that this wine has when pairing with food makes it very popular. It is one of the lightest red wines in its class. Pinot Noir is an excellent companion to various poultry dishes such as chicken, pork, ham, duck, or goose. Boussey Pommard is made from 100 percent Pinot Noir.
Pommard has been cultivated in the area for several Centuries. The name Pommard comes from Pomone, goddess of the fruits and gardens.
The wine boasts a nice cherry red color. The nose is complex and powerful with predominant notes of fruit (Morello cherry, citrus, fresh fig), forest and spice. In the palate, it is powerful and robust with flavors of cherry and spice with well-integrated tannins. Great balance.
Perfect with beefsteak, furred or feathered game, stewed poultry and cheeses like Epoisses.
Boussey Savigny les Beaune is made from 100 percent Pinot Noir.
The grapes for this wine arecoming from 3 different parcels of Savigny les Beaune loctaed in these 3 different lieux-dits: Les Saucours, les Petits Liards and Les Fourches.
The wine shows aromas of Red fruits with floral notes. It is elegant with a very pleasant long finish.
Boussey Volnay Premier Cru Les Taillepieds is made from 100 percent Pinot Noir.
The grapes for this Volnay Premier Cru Les Taillepieds are coming from the vineyard located in the middle of the coteau, halfway up the hill, with a very nice South sun exposure, allowing to reach an optimal ripeness every year.
The wine displays a nice ruby and garnet color. It boasts aromas of red and black fruit, fig, and violet.
It always has a lot of finesse and elegance, but also a great length to the finish, with juicy and round tannins.
Pair with frog legs with parsley and garlic, omelette, duck and cheese.
Slightly filtered before bottling.The wine is then aged in French Oak barrels for 12 months. (25% new barrels).
The Volnay Premier Cru Les Taillepieds is vinified in temperature controlled stainless steel tanks.

Bydand Pinot Noir Umino Vineyard is made from 100 percent Pinot Noir.
This small, sustainably farmed vineyard perches on a south-facing ridge in the Sebastopol Hills area of the esteemed Russian River Valley AVA, and has produced exceptional Pinot Noir for Bydand since their first vintage. Third-generation farmer David Umino rejected early assessments that the site was too cool for viticulture, and planted Pinot Noir there in 1996. The cold maritime winds in fact help to modulate ripening, and protect the grape’s natural purity and balance - resulting in fruit-driven wines with expressive red fruit and dark berry flavors, balanced with crushed rock and mouth-watering freshness. Velvety tannins coat the palate, providing an alluring and persistent finish.
This site combines the best of the earthy west Sonoma Coast and well-fruited Russian River.

It’s hard to believe that this pinot noir is from the Mosel, because of the spot-on ripeness of the cherry fruit, the subtle rooty character and the silkiness of the tannins. Beautifully integrated oak. Already delicious, but surely has many years ahead of it. Drink or hold.

The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.

At the bottom of the slope in the heart of Volnay, this plot lies on clay-sand soil.
Volnay is located on the steep sloping hill of Chaignot in the Côte de Beaune, where the southeast facing vines have been valued for centuries. These vineyards have been valued and exploited for centuries. Long before the French Revolution, the harvests of Volnay went to the Knights of Malta, the Abbeys of Saint-Andoche d’Autun and Maizières, or to the Dukes of Bourgogne and their successors, the Kings of France.
Volnay has a reputation for being among the most delicate, feminine of the Bourgogne wines. Limestone soil dominates the area, with deeper, gravelly soils at the foot of the slope, where Chavy Chouet’s vines are located.
This Volnay is full of character; broad and fruity. Smooth and elegant tannins make it a feminine wine, marked by aromas of black berries and leather.
"Sous la Velle" takes its name from its location 'under the village' of Saint Romain. The vineyards enjoy a steep and south facing exposure, planted on marl scree with the vines taking root in the limestone and offering a beautiful minerality to the wine. The nose expresses small red and black fruits, blackcurrant, cherry, raspberry and violet. The mouth provides a rich, supple and elegant wine with a good structure, pure fruit and vibrant acidity.
After destalking the grapes, the juice, skin and pulp are put into the vat for cold maceration. It lasts from 15 to 18 days. The alcoholic fermentation will follow, lasting from 5 to 6 days. These steps may be punctuated by push-downs. Aging in oak for 12 months.

Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.
Bottled in December 2019.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. "Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. ER3 is the very essence of balance and delicacy – the intensity of Côte des Blancs grand crus and the complexity of its perpetual reserve are combined with immense finesse.
ER3 reveals an extremely delicate, blush pink hue. The nose is superb, with a beautifully complex and delicate aromatic palette that offers up aromas of white flowers, redcurrant, and wild strawberry, before unveiling slightly smoky notes. With a particularly fine and ethereal effervescence, the mouth is fresh and vibrant with superb white fruit and citrus evolving into more complex notes of candied fruit, soft spices, and toasted almonds. The finish is incredibly persistent, underpinned by a magnificent chalky minerality.
The wine is aged on lees in the dark in our cellars for three years.
