The 2021 Quilceda Creek Cabernet Sauvignon is a wine for the ages. Potent aromas jump out of the glass, showing framboise candy, black tea, and a strong classic note of sandalwood. Savory cumin, sage, and garrigue round out this powerful nose. The palate is sweet and velvety, leading to an amazing crescendo of power and refinement.

The 2021 ‘Columbia Valley’ mainly comes from the Champoux Vineyard (90%) with the remainder coming from the Mach One Vineyard. A range of Cabernet Sauvignon clones are blended into this wine that spent 20 months in all new French oak before bottling. The aromatics really pop here with violets alongside potpourri and Turkish coffee, sandalwood, allspice dusted dates and shades of black licorice. The palate is generous, weightless and very generous as this is a total show stopper. Concentrated blue and black fruits with walnut, with creme de violette all brilliantly combine with the elegant mid-palate mouthfeel. Finishing extremely long, this is nothing short of perfection in a bottle. I don’t say this lightly but this is arguably the finest ‘Columbia Valley’ Cabernet Sauvignon that I have ever tasted. Sestina is our vision for an old vine blend where the focus is on structure, balance, and complexity. This wine is designed for the cellar, but is enjoyable now.

Sestina: This wine is a blockbuster, with black currant, black raspberry, saddle leather, freshly tilled earth, vanilla, and violet on the nose. Exceedingly rich and balanced on the palate, with great poise and structure for long aging. The finish echoes with fresh black fruits, minerally touches, and floral notes.

Joseph Phelps Vineyards Cabernet Sauvignon is made from  94% Cabernet Sauvignon, 3% Cabernet Franc, 2% Merlot, 1% Malbec.

A classic Napa Valley Cabernet Sauvignon with inviting violet, dark fruit, tobacco, subtle baking spice and earthy dried herb aromatics. The palate is filled with expressive black cherry, blackberry and dark plum, hints of spice box and sweet vanilla bean. A focused, concentrated wine with youthful energy and freshness nimbly balanced by supple tannin structure and finesse.

Review:

This wine is lovely in juicy red fruit, dried herb and hints of allspice, the tannin structure firm and giving. Offering refinement and structure, it shows nuances of black currant, cherry and toasted oak. This will do well in the cellar.

In 1992 the Hill-Smith family counted themselves amongst those fortunate enough to own a vineyard upon the famous Coonawarra terra rossa soil over limestone. Experimentation, innovation, minimalist intervention and small batch winemaking has resulted in The Menzies’ reputation as a wine of longevity, elegance and structure.

Situated in the heart of Coonawarra’s terra rossa strip, The Menzies Estate vineyard lies on a flat plain, approximately 70km from the coast. Given the terrain and influence of the cooling Bonney upwelling, Coonawarra is an ideal location to grow premium Cabernet Sauvignon. Our soil is red sandy loam over limestone, which is classic Cabernet Sauvignon country. The grapes for The Menzies 2017 are from vines planted in 1994 and 1996. Bunches are usually small with small berries, giving concentration via an ideal skin to juice ratio favouring the making of fullbodied reds.

Experimentation, innovation, minimalist intervention, and small batch winemaking has resulted in The Menzies' reputation as a wine of longevity, elegance, and structure. 

Aromas of fresh rosemary, mulberry, violets and exotic spices. Take a sip and you will feel the poise and tension for which great Cabernet is renowned. A wine of great complexity with flavors of blackcurrant, bitter chocolate, and mulberries, wrapped in divine tannins and a lovely sweet, dark fruit finish. With decanting in its youth, it is enjoyable as an elegant full-bodied red wine.

The 2017 The Menzies Cabernet Sauvignon is looking good next to the 2016 tasted beside it. It is fresh and vibrant, with layers of complexing dark earth characters, with cigar box, black olive brine, cassis, bramble, milk chocolate and cracked black pepper. This is very good, and it has what I am coming to recognize as a "Yalumba red character": dried herbs, particularly oregano. The juicy splay of fruit through the finish is a highlight.

DAOU Vineyards Reserve Cabernet Sauvignon is made from  77% Cabernet Sauvignon, 23% Petit Verdot.

The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Opulent textures expand across the palate with flavors of red fruit, blueberry, and chocolate-covered raspberry. The overall experience is fresh and rich, concluding with velvety tannins and impressive length.

The 2021 Cabernet Sauvignon Reserve is blended with 23% Petit Verdot, made entirely with free-run juice, and it will be matured for 16 months in 50% new French oak. Opaque ruby, it offers pure aromas of cassis, violet, grilled meats, desert sage and bell pepper. The full-bodied palate is powdery, energetic and detailed with a long, layered finish.

 Heritage School Julies Creekside Cabernet Sauvingon is made from 100 percent Cabernet Sauvignon.

The Cabernet Sauvignon Julie’s Creekside Vineyard is an impressive, opaque purple colored wine that is super-concentrated and extracted with relatively sweet tannins, a touch of chocolate and espresso, a full-bodied mouthfeel and pure, dark, primordial fruits. This is a big, masculine, concentrated wine set for long-term aging. Saying that, it has a certain accessibility, but won’t hit its prime for at least another 8-10 years and keep 25-30.

Hickinbotham Trueman Cabernet Sauvignon is made from 100% Cabernet Sauvignon.

The 2019 Trueman Cabernet Sauvignon possesses aromas of mulberry, Asian spices, tapenade, espresso beans and rose petals. The flavours evolve on the palate, with notes of bittersweet chocolate framed by vibrant acidity that gives way to a luxurious mid-palate and persistent finish.

Dark as night, packed with concentrated aromas of menthol, bay leaf, tobacco, cedar, vanilla and cassis, the 2019 Trueman Cabernet Sauvignon is a rich, powerful Cabernet with notable herbal overtones. J. Lohr Signature Cabernet Sauvignon was first produced to honor the 80th birthday of founder Jerry Lohr. This limited release was specially selected and blended from the exceptional 2016 vintage in Paso Robles. It is both a tribute to Jerry's pioneering efforts in the region and our red wine portfolio's ultimate expression of Cabernet Sauvignon. VINEYARDS & CELLAR Beck Vineyard, in the Creston District of Paso Robles, is a unique, high elevation site that sits at 1,700 feet above the early morning fog line. Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Petit Verdot and Malbec add structure, color, and a component of bright fruit. The hand-harvested grapes were held separate at harvest and berry-sorted into six-ton open top tanks for fermentation. Maceration took place on the skins for five days, before early pressing to achieve ideal tannin extraction. Aged 19 months in 100% new French oak from coopers Nadalie and Sylvain.

Review:

Keermont Cabernet Sauvignon grows in Keermont's Cottage Lane Vineyard on the mid-slopes of the Helderberg. This vineyard is situated on the crest of a ridge (320m above sea level) so has aspects ranging from East through North to West. It is very exposed resulting in small vines with low yields. This has allowed to make a relatively fine grained Cabernet, but the clay soils translate to a wine with power, tension and fresh acidity. They blend in a couple of barrels of other varieties to add to the complexity of flavor and tannin structure.

All grapes used in producing the wines are grown on Keermont Vineyards. Most of the vineyard parcels grow on deep red clay rich soil derived from sandstone and granite and are surrounded by indigenous ‘fynbos’ vegetation. The vineyards are planted on steep mid-slopes high up in the valley between the Stellenbosch and Helderberg mountain ranges. Aspects vary from North East through North to West facing between 250 and 400 meters above sea level.

Dark ruby red in color, this is quite a serious vintage with a complex bouquet of ripe red berry fruit, cedarwood, and typical ‘fynbos’ flowers. The palate is full bodied, but gentle. Tannin structure is full and dense and coats the palate while the natural acidity keeps the ripe fruit in check. Savory notes of tomato paste and cloves add character to the bright red strawberry and cassis flavors which linger into a long, tight finish. Drink 2020 – 2035.

Morlet Family Vineyards Mon Chevalier Cabernet Sauvignon is made from 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot .

Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.

Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and a great intensity. The hillside tannins and the classical aromatic complexity create a harmonious ensemble, leading to a very long and elegant finish. Built to age for decades, this collectible wine opens up after a few years of cellaring and is particularly representative of this special vineyard from the hillside of Knights Valley. Mon Chevalier features the interaction of the loamy, well drained and rocky volcanic soil, the typical sunny mountain climate and the low-interventionistic Morlet winemaking approach.

The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

Moving to the top releases, the 2016 Cabernet Sauvignon Mon Chevalier comes from Knights Valley and was brought up in puncheons. A gorgeous bouquet of sandalwood, violets, loamy earth, and incense as well as some iron-laced black and blue fruits flow to a rounded, supple, incredibly textured Cabernet that has sweet tannins, a stacked mid-palate, and a great finish. Viña Siegel Single Vineyard Cabernet Sauvignon is the result of our family's continuous search for quality wines with personality which faithfully reflect the best of our terroir. This wine comes from selected grapes from our "Los Lingues" vineyard in Alto Colchagua.

Located in the foothills of the Andes where the influence of the Andean winds result in an elegant Cabernet Sauvignon with great concentration of ripe red fruits, cassis and chocolate, and a balanced, richly structured, and long finish.

An intense violet color. Smells of cassis and is complemented with notes of mature red fruit and chocolate. A round and elegant wine with an excellent final persistence.

After carefully determining the moment for the harvest, the grapes are harvested by hand and later de-stemmed and marinated in cold temperatures for 5-6 days. Alcoholic fermentation is between 26ºC and 29ºC during which daily reassembly is implemented according to taste.Post-fermentation infusion lasts for two or three weeks. Once the blend is made, the wine is gently clarified and stabilized in cool temperatures if necessary.

Inspired by the three movements of Beethoven’s ground-breaking “Appassionata” Piano Sonata, there are three Appassionata Pinot Noirs, released at different tempos.

The second movement, Andante (gently, unhurried), is held longer in our cellar after bottling and released five years after the vintage. Made with the same patience and restraint, this bottling is selected to emphasize elegance and refinement, a style reflected in Beethoven’s own performancedirection for this movement: “Piano e Dolce” (softly and sweetly). The 2017 Andante exhibits great aromatic and textural finesse, with delicately pretty fruit and a silky, harmonious texture. The hint of extract sweetness that emerges on the finish is exactly what we are looking for as a Pinot Noir matures.

The 2016 Cabernet Sauvignon Hommage is deep purple-black colored and reveals notes of crème de cassis, stewed plums and fruitcake with touches of licorice, Chinese five spice and hoisin with a waft of cedar chest. Full-bodied, opulent and boldly fruited with loads of berry preserves layers, it has a chewy backbone and earthy accents on the finish.

On the palate, it is a tasty wine with a soft spell and a superb freshness, along with the elegance and power so characteristic of Puente Alto. This is a more direct, full-bodied Don Melchor, filled with solid blackberries and wrapped by tight, fine-grained tannins. Long and deep. 92% cabernet sauvignon, 6% cabernet franc, 1% merlot and 1% petit verdot. Better after 2024.
