Lady Hill Cabernet Sauvignon Columbia Valley is made from 100% Cabernet Sauvignon.
Intense hues range from wine purple to sangria showcasing Cabernet Sauvignon’s genetic predisposition to tiny berries packed with color making molecules called anthocyanidins. Chocolate covered cherry and subtle blackberry liqueur combine New World fruit flavors with savory olive tapenade, dried herb de provence and a tinge of minerality found in ancient volcanic soils. The 2021 Columbia Valley Cabernet Sauvignon is deep ruby in the glass with purple hues. The rich bouquet of spiced black plum and cocoa nib are balanced with aromas of fresh earth and crushed flint. Coming out strong out of the gate, the 2021 ‘Columbia Valley’ Cabernet Sauvignon is nearly all varietal. Dark chocolate shavings, baking spices and anise come together on the nose. I think the wine of the vintage, the 2013 Cabernet Sauvignon from the Columbia Valley is flat out sensational, and flirts with perfection. Its inky ruby/purple color is followed by incredible notes of cassis, black currants, smoked herbs, licorice and graphite. These give way to a full-bodied, utterly seamless Cabernet that has full-bodied richness, ultra-fine tannin and a killer finish. While it possesses the elegance and purity of the vintage, it has a stacked mid-palate, and deserves 4-5 years of cellaring. Bertani Valpolicella Ripasso Classico Superiore Catullo is made from 70% Corvina Veronese, 20% Corvinone, 10% Rondinella. Valpolicella Classica, Tenuta Novare Estate in Arbizzano di Negrar.
Wine of medium structure with elegant spicy notes of vanilla and chocolate accompanied by typical notes of cherry, sour cherry and white pepper. The palate offers the easy drinkability typical of Valpolicella and, at the same time, silky tannic structure and intense, prolonged aromatic persistence. The finish is fresh, soft and savory. A wine in the classic style, elegant, balanced, harmonious.

If I was forced to choose a number of wines that can steer the anachronistic Ripasso category into a brighter future, this would be among a very few. A mid-weighted, streamlined expression with just enough fruit on the bones. Think strawberries, lilacs, Asian plums, cloves and a hint of licorice. A noble, almost alpine bitterness lifts the finish. Brilliant. Drink or hold.

Bachelet Bertrand Chassagne Montrachet Blanc Premier Cru Morgeot is made from 100 percent Chardonnay.
The Chassagne-Montrachet appellation is located in the southern part of the Côte de Beaune and produces mainly white wines. 'Morgeot' is located in the south of the village, characterized by compact limestone soil containing iron oxide, which gives the soil its particular red-brown color.
The wine offers a golden color, a subtle nose of white flowers and honey notes. Full-bodied and well-structured on the palate.
The softness of the Chardonnay on the palate makes an interesting pairing with cooked foie gras; it also sits well with lobster, spiny lobster, or even morel mushroom dumplings or Bresse chicken in a cream sauce.
