The Domaine Saumaize-Michelin Estate
This family estate is owned by Roger and Christine Saumaize-Michelin and is located in the Village of Vergisson, the best of the five villages for Pouilly-Fuisse. The estate built new cellars in 1991 and uses 10 - 25% new oak per vintage.

The Domaine Saumaize-Michelin Vineyards
This 9 hectare estate is planted to 8.5 hectares of Chardonnay and half an hectare of Gamay for Macon Rouge. The vines are 40-45 years old of age on average. All of the wines are 100% barrel fermented and 100% M-L fermentation. Roger Saumaize makes about 3,800 cases of wine per year under three different appellations: Mâcon-Villages, St Véran and Pouilly-Fuisse.

Soil type DOMAINE GRAND VENEUR “Les Champauvins” stretches on 34 ha classified in Côtes du Rhône. The plots are located in the northern border of Châteauneuf du Pape, exactly from 3 meters outside the appellation. A small lane of rocks going through the rocky plateaux has been decided to be the AOC limit in 1936. Here, soils are made of red clay and rocks (pebbled stones of quartz). The quantity of rocks can be amazing as they can completely cover the soil (see picture). In summer and during the day, the rocks temperature will increase to 55°C. This accumulated heat will be get back to the vines during nights . Day after day, this unique phenomenon allow the grapes to reach a perfect maturity and produce a unique wine. Winemaking & Ageing Traditional, in stainless steel vats. Harvest crushed and destemmed. Fermentation in temperature controlled vats at 28°C. Eighteen-day vating period with “pigeage”. Grenache is aged in concrete vats, Syrah and mourvèdre in 4 year old barrels. Intense, brilliant garnet-red colour. It reveals lovely fruit, loads of body and a heady bouquet of ground peppers, raspberries cherry liqueur, currants, and spice box. This beautiful Chardonnay offers abundant floral and white fruit aromas, toasty and buttery notes and brioche scents. Well-balanced and concentrated on the palate with a rich structure and refreshing notes of zesty lemon and mineral purity that brings a vibrant energy to the finish.
Complex aromas of soft citrus fruits and minerals. Densely packed and fresh, with intense, complex flavors of white fruit as well as a hint of spice. The finish is very firm, long but not dry.

Saumaize Michelin Macon Vergisson Sur Roche is made from 100 percent Chardonnay.

Fayolle Crozes-Hermitage Rouge La Rochette is made from 25-year-old vines planted on loess and red granitic soils. 100% Syrah.
Deep ruby red color.
The wine has plenty to offer with red and black fruit aromas, as well as a good minerality.
The finish is long, clean and juicy and offers some white pepper spiciness typical of the best Crozes-Hermitage.
Soil type is red brittle granite and white soil.
Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed).
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
They will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.
The nose reveals aromas of blueberry, raspberry, and black tea, while the palate offers cranberry and plum fruit complemented by subtle notes of forest floor and exotic spices. Integrated tannins and balanced acidity carry through to a long, refined finish.

A more widely distributed wine starting with this vintage, the 2022 Pinot Noir has plenty of finesse and delicacy given the mountain fruit that goes into it, including some from the producer's Sable Mountain Vineyard, which adds intensity to the luxurious red fruit and baking spice that accent the well-integrated oak, refined tannins, and moderate length of this medium-bodied effort. Age through 2032.

This wine is bright, with aromas of black strawberry, boysenberry, citrus, mulled spices and toasted vanilla on the nose. The flavors on the palate are dark cherry, sweet maple, blood orange, crushed dried herbs and grapefruit rind. It finishes with dry, juicy tannins. Pair with mushroom risotto.

Holocene Apocrypha Pinot Noir is made from 100 percent Pinot Noir.
Apocrypha Pinot Noir tends to showcase the blue and black end of the fruit spectrum, along with a brambly, floral, dried sage and thyme profile, higher acid than the Memorialis and more power.
We tend to enjoy this wine with lamb merguez sausage and saffron rice.

The outstanding 2023 ‘Apocrypha’ was aged for 9 months in 25% new French oak and saw100% whole cluster fermentation. This is lush, round and rich on the mouth with serious texture, tannin and mouthfeel. Dense red and dark fruits collide with salty minerals and volcanic stony accents on the palate. A stunning wine that is already drinking well, enjoy over the next fifteen plus years to come.
