Roland Champion Champagne Blanc de Blancs NV is aged for minimum 30 months (the minimum for NV is 15 months). This cuvee is made from 100% Chardonnay and is produced from the free run juice only. The current release is the result of the blend of the 2005, the 2006 and the 2007 vintage.
Fresh and delicate, its fine bubbles and wide range of aromas will be perfect as an aperitif. This Champagne will also match very well with seafood and shellfish.

The palate is expansive, and yet balanced and finessed. An amalgam of dark berried flavors and textural sensations. The 100% new oak is completely absorbed, meshed with ripe tannins, completing a palate of impressive length and youthfulness.

     Slowly the tide turned, Australians began drinking more wine and Dad with his uncanny ability to select and plant Clifton Park with the grape varieties of the future, saw fortunes change for Clifton Park and the Thorn family. I loved my Dad's wry sense of humor and his work ethic was an inspiration to us all.

   "My father, Ron, was born in 1923 at the Angaston Hospital not far from where the Thorn-Clarke Winery is currently located. He was the fourth born of the nine children my grandparents raised at Clifton Park in the Eden Valley Ranges. Dad's great-grandparents took up farming land in the Barossa in the 1840's and purchased Clifton Park, where Dad grew up, in the 1870's. To this day, Clifton Park remains in the Thorn family and the 1870's vineyard still produces quality fruit.

      As the family grew, Dad showed tenacity and judgment by pulling out orchards and extending the family vineyards. During the 1950's, 60's, and 70's, times were testing for a family business based on dry land horticulture and mixed farming. Dad's strong work ethic proved an invaluable asset during the tough years on the farm and he traveled widely as a shearer, drove bulldozers and worked at the local cement works to support his family.

     Ron Thorn Shiraz is made from the best fruit that we grow and is produced only in exceptional years. This wine is given the benefit of 20 months barrel maturation and 12 months in bottle prior to release. Deep red with a slight purple hue on release. Parcels of fruit for this wine were identified in the vineyard by the winemakers. Daily fruit inspection led to the fruit being harvested at optimum flavor ripeness. The fruit was harvested at night and quickly transported to the winery. The fruit was destemmed to 6T open fermenters for fermentation. A Shiraz specific yeast was selected to ferment the wine and fermentation was carried out at a maximum of 28°C. The fermenter was manually pumped over twice daily in the first half of fermentation to give the winemakers control of color, flavor and tannin extraction. Pump over regimes were adjusted toward the end of fermentation to suit the tannin and flavor extraction of the wine. The cap was completely broken up on each pump over. The wine remained in fermenters for 6-8 days (dependent on parcel) before being pressed, inoculated with malolactic bacteria and filled to American oak (100% new barrels). The wine was racked post malolactic fermentation and returned to the same barrels. The wine was topped every month and after six months racked and returned to the same barrels again. Prior to bottling the parcels were emptied from oak and blended. Minimal fining and filtration was carried out prior to bottling.

Review:

Only made in top vintages, the 2019 Shiraz Ron Thorn is 100% Shiraz from the St. Kitts Vineyard in Barossa. Killer notes of blackberries, black cherries, smoked tobacco, chocolate, and subtle menthol all define the aromatics, and it hits the palate with full-bodied richness, a round, layered mouthfeel, huge mid-palate depth, and a salty, decadent style on the finish. This monster of a Shiraz stays balanced and light on its feet and is beautifully done.

Spinona Bricco Faset Barbaresco is made from 100 percent Nebbiolo.

This single-vineyard Barbaresco comes from Pietro Berutti's 8 hectares of coveted vineyards on the top of the historic hill, Faset. It is 270 meters above sea level with a south, south-east exposure. The vines are an average of 35 years old. Only organic farming practices are used. The natural fertilizer comes from the 100 head of cattle that they have and no herbicides or pesticides are used.

Barbaresco shows a deep ruby red color with garnet reflections. An intense bouquet with hints of ripe cherries, wild berries and spice. White pepper, licorice and mint blend with enticing floral notes. Mouth-filling and well-structured with a full, velvety body and an austere and long finish.

HARVEST: late October. The grapes are harvested by hand in perforated baskets to allow air to pass through the bunches. The pressing is soft. Cold maceration for 24 hours at 12°C (for certain years).

WINEMAKING: Soft pressing with an initial cold maceration on the skins for 24 hours at 12C. Specially selected yeasts are used. Fermentation takes place for 12 to 14 days in stainless steel at 28-29 °C under temperature controlled conditions. There is a pumping over on the skins. After malolactic fermentation, the wine is racked and goes through a delicate pressing to obtain only the best wine.

AGING : 12-15 months in large 25 hectolitre wooden barrels of Allier and Slavonian oak.

REFINING: in the bottle for 12-15 months in a temperature-controlled environment.

Excellent with game, red meats, truffle dishes and aged cheeses.

Thorn Clarke Milton Park Shiraz is aged for 12 months in American oak barrels.

Deep red color. The wine is deep and rich smelling with dark fruits, plums and spice with some good oak. There is very rich fruit on the palate with plums, blackberry and sweet spice from the oak. The palate is vibrant and young with a flavorsome viscous mouthfeel which will develop complexity with time. There are some slightly chewy tannins which will soften with time and there is great length of fruit flavor.

Thorn Clarke Milton Park Shiraz is aged for 12 months in American oak barrels.

Thorn Clarke Shotfire Quartage is made from  47% Cabernet Sauvignon, 31% Cabernet Franc, 14% Merlot, 8% Petit Verdot .

The Shotfire range honors a family pioneer who worked the Barossa goldfields in the late 1800's. He had the hazardous job of being a 'Shotfirer'; one who handled the explosives to be used in finding that rich vein of gold.

Shotfire Quartage is based on the five traditional red varieties found in the Bordeaux region of France (Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec). The Thorn-Clarke winemakers use at least four of the varieties to create the blend each year (occasionally, they can get over excited and use all five). The blend is a reminder to not only look to the future but also to keep an eye on the past and tradition.

Thorn Clarke Shotfire Quartage is made from 58% Cabernet Sauvignon, 16% Cabernet Franc, 16% Merlot, 10% Petit Verdot.

The fruit was harvested at night. Fermentation was carried out in a variety of small capacity fermenters. After pressing the parcels were filled to French oak (12 months) for maturation. The wine was racked after six months and the parcels were blended to form the final wine.

Thorn Clarke Single Vineyard Malbec is made from 100 percent Malbec.

The Single Vineyard Selection range focuses on single site, small batch wines, highlighting the true characteristics of each individual variety. Each block is hand selected by our winemaker and viticulturist each year, choosing the wines that best reflect the strengths of each individual vintage.

The wine is sourced from the most Northern area of the Barossa and featuring a vibrant purple hue. The nose is lifted with perfumed blueberry and satsuma plum evident. The palate is full bodied and rich with layers of blue fruits, Christmas spices and subtle complex French oak.

Pairs with braised Lamb Shank or Blue Vein Cheese.

The House of Trouillard has incredible holdings on the Côtes de Blancs. The vineyard's rating average 94-95, just one of the reasons the Blanc de Blancs has such incredible raciness and elegance. It is a Cuvée of eleven different Crus in the Reims Mountain, the Côtes de Blancs and the Sézannaise region and is the specialty of the house.

Trouillard Blanc de Blancs Brut NV is made of 100% Chardonnay with a green-gold color, characteristic of Chardonnay, and with fine persistent bubbles. This wine has an aroma that jumps out of the glass and is very inviting. On the nose there are seductive scents of warm almond croissant and honey, lightened by some floral notes. Crisp and refreshing in the mouth and lively with a very refined fruitiness and a touch of smokiness typical of wines from the Côtes des Blancs. The elegance and subtlety of the Chardonnay are to be especially appreciated as an aperitif, and nicely accompanies shellfish and fish. 
It has become the favorite of those who know Champagne Trouillard.

Trouillard Blanc de Noir Extra Brut NV is made from 90% Pinot Noir and 10% Pinot Meunier.

Aged "sur lattes" for 2 years

Color: Golden, fine bubbles.
Nose: Deep, vinous with red berries notes
Mouth: Ample. Sugar dosage gives it wilderness. You will be seduced by its stout, its structure and its vinosity. You will be invaded by a sensation of freshness.

This sparkling wine is only vinified with white juice of black grapes hence its name "Blanc de Noirs", which litterally translate to "White from Black". The exact varietal breakdown is 90% Pinot Noir and 10% Pinot Meunier.
It is aged sur lattes, in the bottle, on the lees for 24 months minimum.
Its low sugar dosage makes it an extra dry.

Its full bodied and power features designate it to go with sweetbread, giblet, “bouchée à la reine” and whites meats

"Light yellow-bronze hue. Showing toasty lees aromas and a bright, energetic attack, the Blanc de Noirs Extra Brut offers good balance and complexity in a Champagne meant to be consumed with food. This wine reveals a complex and elegant bouquet that combines ripe fruit, leather and a fine woodiness. Round and warm on the attack, the palate is supported by solid tannins and a pleasant freshness in this harmonious and well textured wine.

The Merlot bring fruity notes and minerality from the clay-limestone terroir, enhanced by the incredibly expressive and spicy Cabernet Franc.

"The 2019 d'Aiguilhe has a really lovely bouquet of ample black cherry, mulberry and light floral scents, very pure and delineated. The palate is medium-bodied with cedar-infused red fruit. While not as exuberant as the aromatics, this is nicely detailed and quite poised on the finish. No, I still cannot pronounce its name, but this Castillon Côtes de Bordeaux is well worth seeking out. - Neal Martin"
