2021 was a benchmark vintage for Cabernet in Paso Robles. The long, cool growing season was ideal for our Bordeaux grapes and allowed them to slowly ripen, creating complex flavors and wines built to age. The 2021 Cabernet Sauvignon was aged 21 months in French Oak barrels and is one that you’ll want for your collection. It is an elegant wine with a balance of dark fruit flavors and herbaceous notes with lush tannins.

O'Shaughnessy Cabernet Sauvignon is made from 93% Cabernet Sauvignon, 2% Merlot, 2% Malbec, 2% St. Macaire, 1% Petit Verdot.

This 2019 Napa Valley Cabernet Sauvignon has a dark blue/black color and an opaque center. This is a stellar wine with black cherry and blue fruits. The flavors are bright and focused with gorgeous layers of black cherry, plum butter, and mixed berry compote. This expansive Cabernet Sauvignon finishes with flavors of smoked cherry wood and smooth but age worthy tannins.

The base 2019 Cabernet Sauvignon Napa Valley is terrific, and while I don’t know the price, I suspect it’s a great value. Deep purple-hued, with terrific mulled currant and blackberry fruits, it has lots of ripe herbal, chocolaty spice notes, full-bodied richness, sweet tannins, and a great finish. This is pure Napa Valley goodness to drink over the coming 10-15 years.

The Opus One 2018 offers profuse aromas of blackberry, cassis, and black cherry. Elegant notes of violets, white pepper and rose petals follow and together they deliver a very seductive bouquet. The seamlessly layered flavors build to a crescendo of fresh and juicy black-fruit, accented with hints of orange zest, licorice and dark chocolate. Beautifully balanced, the smooth round tannins and fresh acidity combine to create a soft, creamy mouthfeel and extend the flavors into a long persistent finish.

Extremely perfumed and floral with lavender, lilacs and violets to the sweet, ripe berries, such as blackberries and blackcurrants. Some slate and graphite, too. It’s full-bodied, yet ever so balanced and refined, with super fine tannins that last for minutes. Fresh herbs, such as bay leaf and lemon grass highlight the dark fruit. The quality of tannin is exquisite with wonderful polish and refinement. Lasts for minutes. So wonderful to taste now, but better after 2026.

The purity of fruit is really something else here, with currants and fresh flowers, such as violets and roses. Flower stems as well. Fantastic length and structure to the wine, with tightness and focus. Wonderful fruit. Graceful. A blend of 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec. Cold soaked overnight. Inoculated with selected yeast. Fermentation temperature was between 24 -26 degrees Celsius. Regular pump-overs were given to enhance colour and flavour extraction. Different batches of wine matured with French oak staves and 2nd and 3rd fill barrels were all blended together to perfection.

Served at room temperature, this Cabernet Sauvignon pairs perfectly with red meat dishes, especially classic recipes like roasted leg of lam, grilled lamb chops and beef kebabs.
