Trouillard Brut Extra Selection NV is made of 35% Pinot Noir, 35% Pinot Meunier, 30% Chardonnay.
With a light amber color with fine bubbles, full-bodied with a full mixture of white fruits. Dominating taste of hazelnuts and grilled almonds.  This crisp, delicate, fresh, creamy and elegant champagne, with just a touch of yeastiness, is sure to enhance any special occasion or meal.  A very classic and delicate Brut.

Trouillard Comte Decrion Brut is made from 50% Pinot Meunier, 30% Pinot Noir, 20% Chardonnay.

The Comte Decrion is clear gold in color, offering fine and attractive bubbles. Elegant and fruit-diven. Supple, ample and well-balanced with good length and freshness.

This Champagne is ideal as an aperitif and throughout the meal.

Aromas and flavors of peach jam on toast, lemon marmalade, and praline with a supple, vibrant, effervescent, dry-yet-fruity medium-full body and a sleek, appealing, medium-long finish that shows accents of creme brulee and spiced citrus salad. Dense purple hues, with evocative aromas of black cherries, ripe plums, nectarines, boysenberry, wild bramble and exotic oak spice. The juicy and sweet-fruited palate entry, combined with crunchy tannins, lures one into a sense of overtness, yet the wine is sublimely elegant and poised. The complex layers of fruit is in perfect harmony with the oak, all bound together by a lively seam of acidity. The finish is pleasantly dry and savory, with lingering notes of Christmas cake and vanilla pod.

Verite Le Desir Red is made from 82% Cabernet Franc, 12% Merlot, 6% Malbec.

The 2018 Le Désir has a dark inky appearance with a violet hue that extends to the rim. The compelling characteristics of Cabernet Franc are expressed on the nose and palate with flavors of crunchy cranberry, ripe raspberry, red currant, dried sage, crushed mint, and cinnamon bark; followed by spice cake, subtle vanilla liquor, and singed toast. The persistent finish and bright acidity suggest the wine will continue to evolve in the cellar for many years to come.

The Cabernet Franc blend of the trio, the 2018 Le Desir is 82% Cabernet Franc, 12% Merlot, and 6% Malbec, and as with all these wines, it was brought up in new barrels. Ruby/purple and not completely opaque, it offers up a classic Cabernet Franc nose of mostly red fruits, spring flowers, damp earth, cedary spices, and truffle. Medium to full-bodied on the palate, it shines for its incredible elegance and purity more than outright power, yet it still brings plenty of richness. With ultra-fine tannins, perfect balance, and one heck of a great finish, it's another great, great wine from this estate.

 Vilerma Blanco Ribeiro is made from 80% Treixadura, 6% Torrontes, 4% Godello, 4% Albariño, 3% Loureira and 3% Lado

Ribeiro blanco is produced from estate-grown grapes using traditional winemaking.

Pale yellow color with green highlights.
Intense white fruit aromas when young, it develops complex nuances after a few years in the bottle.
In the mouth it is ample, full and pleasant with a long and fruity finish.

Fermentation in Stainless Steel tank at controlled temperature.

Vinsacro Rioja Blanco is made from 60% Chardonnay, 40% Viura.

Aged 7 months in oak barrels of 225 liters

The grapes come from vineyards located in Grávalos, on the southern slopes side of Mount Yerga at the foothills of the “Cordillera Ibérica” at an altitude of between 700 and 800 meters. A very high located area where you obtain fresh wines with little graduation, with very fine and elegant aromas.

Bright straw yellow color, intense aromas and elegance with outstanding floral and fruity notes. After some time in glass balsamic and spicy aromas with toasty notes rise, due to aging in oak and bottle maturation. Very cool and structured with an unusual  power for a white with a variety of flavors ranging from citrus to balsamic. A white wine that is full of sur­prises and capable of taking on many years in the cellar.

Vinsacro white has a long aging potential and presumably will have a positive development for 20 years.

The Chardon­nay grape is har­vest­ed dur­ing the sec­ond or third week of Oc­to­ber. The Viu­ra grape in the first two weeks of Oc­to­ber.
The col­lec­tion of the grapes is done man­u­al­ly.

The se­lect­ed must will go through the fer­men­ta­tion in Amer­i­can oak bar­rels of 225 liters with medi­um toast, re­main­ing in the bar­rel with its lees for sev­en months be­fore be­ing re­moved with a dai­ly battonage, dai­ly at first and then more spar­ing­ly.

Pairs great with roast lamb, grilled vegetables.

Vinsacro Dioro Seleccion is made from  100% Vidau (Blend of the de varietals Tempranillo, Graciano and Mazuelo with predominance of 70+ years old Garnacha).

Pair with Roast lamb or pork, game, beef steaks, stewed meats. During the aperitive, it will accompany as well with aged and blue cheese.

Grapes selected manually from our vineyards located on the southern slopes of Monte Yerga in the “Cuesta la Reina” estate. Grapes that are harvested with the utmost care, transported at low temperature in fruit boxes to the winery to avoid any damage to the fruit.

Fermentation is carried out with indigenous yeasts and the wine is kept in maceration for 30 days while breaking the cap daily. Afterwards, the wine is transferred to oak barrels where it remains for 17 months before bottling.

"The 2019 Vinsacro Dioro Selección is a Vidau field blend sourced from Monte Yerga in Rioja Oriental. Aged for 18 months in French and Eastern European oak barrels, it is only released after five years in the cellar. Dark garnet in color, time in the glass reveals soy sauce, bay leaf and thyme notes, along with black fruit and chutney-like undertones. Dry and rich on the palate, it flows with softened tannins and a clingy mouthfeel, lingering long with an impression of tomato leaf. Walt Clos Pepe Pinot Noir is made from 100 percent Pinot Noir. 

Deep ruby in color, the wine carries luscious fruit aromas of blackberry preserves and dark cherry, infused with exotic notes of spice, black tea and pomegranate. The palate opens to a dense and velvety texture laced with flavors of barrel char and salinity, leading to a structured and focused finish.

Review:

Big and rich, with luscious spiciness to the plush dark fruit and berry flavors that are supported by medium-grained tannins. There's plenty of creamy and toasty accents on the open-textured finish.

Another Sta. Hills release, the 2019 Pinot Noir Clos Pepe Vineyard saw 10% stems and 10 months in 40% new French oak. It's a little more focused and firm, with classic ripe black raspberry, red plum, and cherry fruits as well as orange blossom, spice, and floral nuances. It too is medium-bodied, textured, and beautifully balanced.

- The Clos Pepe Vineyard was founded in the late 1980s by Steven and Kathy Pepe. The vineyard is located just east of Lompoc in the Santa Rita Hills appellation. The 2019 ‘Clos Pepe’ revels in its aromatic range from peat moss and pipe tobacco to bright red fruits and wild blackberry. The palate is dense and fresh with beautiful red florals alongside orange rind with sandy soil undertones. Gorgeous now, this has a long way to go in the cellar.

Xavier Vignon Arcane Etoile Beaumes de Venise Rouge is made from 70% Grenache, 20% Syrah and 10% Mourvèdre.

All the wines from the Arcane range are limited edition. They are the reflection of something extraordinary that happened in the vineyard. The Arcane Etoile is a multi vintage blend from 2015-2016-2017 that reveals the complexity and remarkable freshness of these high altitude Beaumes de Venise terroirs. Maceration with viognier skins.

The Beaumes de Venise terroir neighbours Gigondas and Vacqueyras. These Triassic soils (sand, limestone, clay) at the foothills of the Dentelles Sarrasines and the Grand Montmirail were specifically chosen for their high altitude (up to 600 metres above sea level) in order to impart freshness and elegance to the wine. The objective here was freshness and counterbalancing the impact of global warming. 

It has something profound in its texture and balance. Notes of black raspberries, currants, dried flowers, lavender, and pepper are followed by a beautiful, full-bodied, elegant wine.

Pairs with porcini mushrooms in red wine - Foie gras - Piglet and prune stew - Honey glazed duck breast - Grilled swordfish - Dauphinois potatoes - Creamy garlic lentil and kale bake - Brie with walnuts

"Coming from the higher elevation sites, the NV Beaumes de Venise Arcane Etoile is another elegant, finesse-oriented wine from Xavier that has both richness and freshness. A blend of Grenache, Syrah, and Mourvèdre as well as a small amount of Viognier from 2015, 2016, and 2017, it has something profound in its texture and balance. Xavier Vignon Chateauneuf du Pape Rouge is made from 65% Grenache, 20% Mourvèdre and 15% Syrah.

A clear and very expressive nose with notes of black fruits, spices and licorice. The mouth reveals tanins that are already supple with a great balance.
The finish is long, on black fruits, licorice and a slight salinity.

Xavier Vignon Chateauneuf du Pape Rouge is made from grilled rib of beef, roasted duck with figs, boar stew.

"The ample nose of dried cherry, candied orange and fresh rosemary leads you into this rich, yet fresh Chateauneuf with fine tannins and enough acidity to keep it clean. Lively and moderately dry finish. A cuvee of 75% grenache, 10% syrah, 10% mourvedre and 5% clairette. Drink or hold."
