I feel this wine expresses the greatness of California and its hidden pockets where Cabernet can excel. The cold Pacific Ocean running the entire length of the state presents maritime influences – and with each small distance eastward the climate warms. Stony soils, south facing slopes and moderately warm conditions are the keys to producing dark, rich and good tasting Cabernet.
A small release from Caymus Vineyards, this wine is a California-appellation Cabernet Sauvignon – supple, dark and rich, bearing the signature hallmarks of Caymus. It is sourced from sites throughout the state which feature climatic conditions, soils and topography that are ideally suited to Cabernet. This project stems from excitement over California's diverse vineyard land, often in lesser-known areas, with the potential to produce exceptional Cabernet.
Calcareous gravels deposited by the Tunuyan river in the South of Valle de Uco and by the Las Tunas river in the North of Valle de Uco have created the two most promising growing areas of Mendoza, which are only now being developed and explored, bringing a new dimension to the wines of Argentina.

Vineyard Notes
The Poetry Vineyard, carved into a steep west-facing hillside, reaches from the highest elevations of the Stags Leap District appellation to the valley floor. This vineyard draws its uniqueness from shallow, volcanic soils atop fractured shale. Due to the stressful nature of the site, planted with high vine density and farmed to very low yields, the vines develop slowly and produce small flavorful berries. The vineyard is planted to legendary, proprietary heritage selections of Cabernet Sauvignon.
Production Notes
In the cool darkness of night, grapes were hand-picked into twenty-five-pound bins to minimize crushing. By early morning, the grapes were subjected to rigorous selection by our three-tiered sorting process, which includes our cutting-edge optical sorter and a slow, individual berry hand sort. Whole berries were gently delivered by gravity to tank by our unique crane system, which kept the berries intact. Cold soaks lasted from five to eight days, and fermentations were managed through a combination of pump overs and délestage. Extended maceration of up to six weeks ensured exceptional extraction and fine-tuning of tannin profiles.

There is an effortlessness and ease to the 2021 Poetry that springs from the continuity and familiarity of its caretakers and the experience of the vines themselves as their roots dig deep into the shallow unforgiving terraces of rock and rhyolitic crevices. Wafts of warm summer mulberries, fractured rock, and violet perfume envelop the glass. Wild blackberry preserves form the flavor on the entry and combine with tantalizing, black truffle, sea salt, and steak au poivre juices. Dark purple with vermillion-tinged edges, the plush and refreshing lures the taster with a multidimensional perfume that fills the glass with notes of jasmine, lavender, and spring flowers. Interwoven into the floral notes are unctuous layers of plum, blackberry, and black currants. Vineyard Notes
The Rhythm Vineyard is located on the subtle slopes of our Stags Leap District estate. Defined by two large hills at its southern border, this vineyard surrounds our winery and reaches west toward the Napa River. The Rhythm Vineyard’s soil is composed of gravelly loam of varying depths and rock content. The incredibly diverse soil profile enables us to farm several small blocks of Cabernet Sauvignon and additional Bordeaux varieties with unique combinations of clonal selections and rootstocks.

Powerful, seamless and saturated with flavor, this giant of a wine goes deep in black currants, black cherries and mint aromas. The dense, rather firm texture holds a tasty mélange of black cherries and black figs shaded by cedar, cocoa, tobacco and espresso. It needs several years to open up. Best from 2028–2040.

Clif Lede Cabernet Sauvignon Stags Leap is made from 82% Cabernet Sauvignon, 8% Merlot, 7% Cabernet Franc, 3% Petit Verdot.
Our Stags Leap District and Calistoga estate vineyards build the foundation of this wine with support from valued grower sites located in Oakville, Rutherford, and Howell Mountain. Composed of small batches from a variety of blocks of varying age, this wine represents a diverse range of carefully selected rootstocks and clones. Yields are maintained at sparse levels, with a focus on canopy management and vine balance. The resulting blend boasts a remarkable depth and complexity that is quintessential Napa Valley.
Grapes were picked in the darkness of the early morning hours. The freshly-harvested fruit immediately underwent rigorous selection by our three-tiered sorting process, which included our cutting-edge optical sorter. Whole berries were gently delivered by gravity to tank using our crane system, minimizing disruption of berry integrity. Cold soaks lasted approximately seven days, and fermentations were managed via a combination of délestage, pumpovers, and punchdowns. Extended maceration ranging from four to five weeks fine-tuned our tannin profiles, allowing us to perfect mouth feel and wine complexity. The wine was aged in French oak barrels, 48% of which were new, for twenty-one months.
Elegantly soft and lithe the 2021 coaxes the taster with warm dark chocolate and luscious black cherry aromas. More graphite, chocolate cake, crushed mulberries, and iron notes leap from the glass. Dark an brooding in the glass, our 2019 Hommage Cabernet Sauvignon is bursting with ripe plums, black cherries and notes of cassis. Our Tenma Vineyard is located in the foothills of Mount St. Helena northeast of the town of Calistoga. Currants, chocolate, toasted spices, and tobacco all define this beauty, and it has full-bodied richness, flawlessly integrated oak, good acidity, and a great finish. Anyone doubting the quality that can be achieved in Cabernet Sauvignon from Paso Robles owes it to themselves to try one of these wines.

DAOU Vineyards Reserve Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 23% Petit Verdot.
The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Trus Ribera del Duero Crianza is made from 100 percent Tempranillo.
Trus - an acronym for T-tierra (soil), R-roble (oak), U-uva (grape), S-sol (sun) - aims to reflect the uniqueness of each vintage, the aging potential of the wine in the bottle over the years.
Trus takes its roots in Palacios Vinos de Finca, the estate that was founded in 1999, then purchased by Javier Palacios who decided to focus on producing wines that express the purity and typicity of the Ribera terroirs.
The estate vineyards are located in Piñel de abajo, Pesquera de Duero, Quintanilla de Arriba. The winery also partners with winegrowers in Moradillo, Roa, Nava, Peñaranda or Baños de Valdearados. The clay-limestone soils of the high-altitude vineyards define the intense and complex personality of the wines. That is why Trus wines can be defined as classic, because an avant-garde look is the one that is directed towards the soil, preserving a typicity that is marked from its deepest roots.
Trus Crianza reveals a clean and bright cherry color with Burgundian tones at the rim. The nose is very intense and complex, offering ripe black fruits and liquorice aromas, toasty and vanilla nuances, spices and balsamic notes. The wine is tasty and unctuous on the palate, a perfect harmony between acidity and alcohol. Fresh and friendly mouthfeel, the ripe and soft tannins provide structure and great length. Fayolle Crozes-Hermitage Rouge La Rochette is made from 25-year-old vines planted on loess and red granitic soils. 100% Syrah.
Deep ruby red color.
The wine has plenty to offer with red and black fruit aromas, as well as a good minerality.
The finish is long, clean and juicy and offers some white pepper spiciness typical of the best Crozes-Hermitage.
Soil type is red brittle granite and white soil.
Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed).
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
They will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.
