100 % destemming, 15 day maceration with a maximum of 30° C temperature

Deep red color. Blackcurrant and violet aromas. Melted and fine tannins, good finish.

Food pairing: cold meats and delicatessen, grilled meats, semi-mature cheeses.

a Plume du Peintre - "feather of the painter" - wines (Lirac, Chateauneuf-du-Pape and Tavel) are only made in select years representing outstanding quality.

Deep ruby ​​red, opaque. Aromas of red fruits, mocha, touches of leather, black truffles and coffee. Fat, very concentrated and full flavored, with an infinitely long liquoriced and fruity finish.

Pairs well with red meats, sauce dishes, game animals (woodcock, wild boar) and semi mature cheeses.

"Lastly, and a tiny production cuvée based on 100% Grenache brought up in new barrels, the 2019 Châteauneuf Du Pape La Plume Du Peintre reveals a saturated, almost inky purple color as well as a mammoth-sized bouquet of black currants, bloody meats, lead pencil, tobacco, chocolate, and crushed stone, it nevertheless has notable purity, a full-bodied, layered, seamless texture, no hard edges, and a thrilling finish that offers more and more minerality. with time in the glass. You don't see wines like this often today, but this is a singular, heavenly Grenache that's going to need 4-5 years of bottle age and live for 30-40 years if stored correctly given its concentration, structure, and purity. "From the small Padthaway region three hours' drive east of Adelaide, this is a full-bodied Cab that, despite the region's warm climate, avoids being bombastic. The nose feels Christmasy: baking spices laced with purple beets, dried mint and red berries. In the mouth it's ripe and generous, and there's a fair bit of oak showing but all is held at bay by taut, fine-grained tannins. Drink through 2025."

Milsetentayseis 1076 Ribera del Duero Tinto is made with 95% Tempranillo and 5% other native varieties.

TASTING NOTES: A product of its unique landscape, extreme altitude and mineral-rich soil, 1076 Tinto is a bold wine with a distinct character designed to evolve over time. Its freshness and intensely fruity expression are representative of a modern style, moving away from excess, in search of the elegance, smoothness and balance found in the great wines of the world.

TERROIR: A recently restored vineyard situated at over 3,280 feet of altitude where ancestral vines over 100 years old grow harmoniously together with new, indigenous plantings in varied soil comprised of red clay, sand and mineral deposits of quartz, mica, and feldspar.

WINEMAKING: Hand-harvested from a selection of the best plots in the vineyard then separated into concrete, oak or stainless steel fermentation vats depending on the characteristics of the grape and the soil where it was grown. Its production is defined by the team´s constant vigilance throughout the process and their in-depth knowledge of the region, the soil and the native varieties that thrive there.

The inviting nose offers up scents of Santa Rosa red plums, cassis, dried sweet figs and pomegranate backed by sandalwood and hints of tea rose. Bright and exciting on the palate, the entry begins with firm tannins and complex layers of red raspberries, bergamot tea, dried herbs and rose petal notes. Refreshing acidity carries the wine throughout the finish.

To match with the juicy acidity and bright nature of this wine, we offer up a vegan recipe for Spicy Quinoa with Asparagus and Shiitake Mushrooms. The shiitakes are a classic pairing with Pinot Noir, but when combined with the spicy ginger, garlic and crushed red pepper, all melds beautifully into a dish that pairs seamlessly with the 2020 Sonoma Coast Pinot Noir.

The 2020 Pinot Noir Sonoma Coast is ripe with raspberry candy, crushed rose petal, and turned earth. The tannins in the 2020 are a touch more present and emerge on the finish, and it also has more warmth. Drink this over the next 10 years.

Matthews Winery Columbia Valley Cuvee is made from 65% Merlot, 27% Cabernet Franc, 8% Malbec.

The 2021 Columbia Valley Cuvée sparkles with purple and deep garnet in the glass. Meadow flowers, fresh red berry, black plum, and cocoa powder aromas exhilarate leading to flavors of morello cherry liqueur, cardamom, mountain blackberry, and licorice snaps. This merlot-dominant blend is plush and weighty on the palate with powdery tannins. Dark stone fruits and dusty minerality coat the palate for a long, seamless finish.

The 2021 Columbia Valley Cabernet Sauvignon is deep ruby in the glass with purple hues. The rich bouquet of spiced black plum and cocoa nib are balanced with aromas of fresh earth and crushed flint. Intense and opulent flavors of ripe blackberry, cedar, mocha, and black currant coat the broad and balanced palate and the ripe tannin creates a perfect frame for the lush fruit expression. Cherry cordial and cola linger on the long, quenching finish.
