Beliere Bugey-Cerdon  is made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation. 
This is also wonderful served with chocolate cake! 
8% ABV.

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

J. Davies Nobles Vineyard Pinot Noir is made from 100 percent Pinot Noir. 

The Nobles Pinot Noir starts off with aromas of rich strawberry, black cherry and Earl Grey tea, followed gracefully with coriander and exotic spices. The palate offers a juicy mid-palate of blueberry and plum layered with mocha and rhubarb, closing with a long-integrated acidity.

Elegant and pure-tasting, with red berry, plum and raspberry flavors that are well-structured. Toasty midpalate, with a rich finish that offers spicy minerality. Drink now through 2026.

J. Davies Nobles Vineyard Pinot Noir is made from 100 percent Pinot Noir. 

The 2020 Nobles Vineyard Pinot Noir’s aroma elegantly opens with blueberry compote, dark cherry and dried citrus peels, followed with a touch of baking spice and a hint of forest floor. The palate’s bright entry leads to notes of cranberry, red raspberry and a sprinkle of black tea, while a crisp acidity supports silky tannins to a clean finish.

Review:

Bountiful black-cherry flavors and good balance make this full-bodied wine difficult to resist. Black-fruit flavors are rich and well concentrated, backed by a light touch on the oak spices that emerge on the finish and add nice complexity.

This carries the forest green scent of the far-coast hills, a savory pinot noir with mineral intensity. The wine’s cherry-red fruit ripens on the eastern, leeward slopes of the second ridge in from the Pacific, that ripeness tamed by an earthy evergreen scent lasts for minutes, as if breathing the air at the edge of a redwood grove.

Fayolle Crozes-Hermitage Rouge La Rochette is made from 25-year-old vines planted on loess and red granitic soils. 100% Syrah.

Deep ruby red color. 
The wine has plenty to offer with red and black fruit aromas, as well as a good minerality. 
The finish is long, clean and juicy and offers some white pepper spiciness typical of the best Crozes-Hermitage.

Soil type is red brittle granite and white soil.
Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed). 
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
They will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.

The Stone Terraces 2021 Vintage Port has incredibly fresh and lifted aromas with the hallmark tropical fruit character. The wine is concentrated whilst being supremely refined with polished tannins and taut acidity combining to deliver sublime elegance and balance.

What a polished and beautifully structured vintage port with ultra-fine tannins that run the length of the wine. It’s medium-bodied with a terrific intensity and brightness. Seems slightly drier than normal for a Graham’s vintage. Fantastically fine tannins. Black berries and tangerines with other tropical fruits. Hints of nuts at the end. Racy and muscular.

Michelet Courtaullt Chablis AOC is made from 100% Chardonnay.

Golden colored and very aromatic with white flowers, fresh fruit, lime, citrus aromas as well as a bergamot. Pleasant mouthfeel, supple, crisp, fruity flavors. There is a touch of acidity, revealing a deliciously integrated minerality.This Chablis is produced from vineyards located on slopes benefiting from a mainly south, southwest sun exposure in villages of the Northwestern part of the Chablis area (Lignorelles, Beine, Villy and Chablis).

Ideal as an aperitif, the wine is an excellent companion to seafood, smoked salmon for example.

4 Gatos Locos Cabernet Sauvignon Gualtallary is made from 100% Cabernet Sauvignon.

4 Gatos Locos is a project created by Gabriel Bloise, Facundo Bonamaizon, Mariana and Juan Pelizzatti - winemaker, viticulturist and founders of Chakana Winery (respectively). The project centers on a 20-hectare vineyard in Alto Gualtallary, the most prominent growing region in Argentina. The vineyard is situated 1,360 meters above sea level, on a 10% slope on the Sierra del Jaboncillo - a relatively old geological formation near the alluvial fan of the Las Tunas river, in the Tupungato area. The long exposure to arid conditions of calcium rich gravel has created one of the most calcium carbonate-rich areas in Mendoza. This combination of altitude, slope, gravel and the calcium carbonate create uniquely deep, textured wines, with intense color and mineral freshness. Moderate high temperatures controlled by high altitude in sunny conditions produce perfectly ripe grapes of unusually intense color and great vitality, balanced by the mineral freshness of calcium carbonate. Local aromatic plants, naturally occurring in native vegetation areas interspersed in the vineyard, give the wine a unique herbal touch that underline the character of the place.

Deep purple red colored with intense complex notes of red berries and spice, well integrated aromatic oak and very fine tannins structuring a powerful and elegant palate.

A comfort wine for all seasons and reasons, it has an aroma evocative of roses. Alexandre M Mon Mouss Petillant Naturel NV is made from 100% Chenin Blanc.

Mon Mouss is my nick name at school. Monmousseau = Mon Mouss.
Mousseux means bubbly ... Mon Mouss is also a play of word meaning MY BUBBLY.
The wine is a Pet'nat' produced using a Methode Ancestrale. Lime tree and litchi with apple and pear flavors.

Serve as Aperitif or with seafood, oysters, light hard cheeses, and just for fun, by itself.

Alexandre M Vouvray Brut Methode Traditionnelle is made from 100% Chenin Blanc.

Tasting: Nose lime tree flower and brioche.
Mouth: complex and very expressive, so fresh and balanced with a smooth touch in mouth, bubbles so small who just tease the tang, light and good length.

Nose of coconut and slightly vanilla. The very "Caribbean" mouth of nutmeg brown sugar, white rum and candied citrus fruits. Like a sweet wine, without the sugar.

La Serpette (pruning knife) is one of the most important vintner's tool. This is the symbol of the work made by hand, just to express the very important part of hand making in wine which reflect the terroir. Wine is not "made" in the cellar as everything stars in the vineyards, from the vineplant.

Asian cuisine as well as exotic food. Well pair with spices. Nice with the classic foie gras and with matured cheeses.

Alleme Getariako Txakolina is 100% Hondarribi Zuri

A very fruity, persistent and clean Txakoli. It reminds the white exotic fruits, such as lichy. It has a straw yellow color, without the slightest tone of rust and a faint natural gas pearl crown, due to the grape juice fermentation. In the mouth, it is greasy and unctuous, with a good balance of structure and acidity. In order to get such a Txakoli, we have combined the most traditional and the most innovative production methods to create it. Thanks to the batonnage (stirring of the lees), we have attained the characteristic unctuosity of this Txakoli.

After harvesting and pressing, the must is left to ferment in stainless steel tanks. Traditionally, and until recently, this was done in oak or chestnut barrels, called kupels, in Basque. Fermentation lasts 20–25 days and then the txacolí is left to lie on its lees. The CO2 prevents oxidation and dissolves the sediments and gives the wine its sparkling characteristic. The wines is not racked so it does not lose its sparkle and is clarified by natural sedimentation by gravity in the tank or barrel. Traditionally, the wine is tasted on the feast of San Antonio on 17 January, which is known as Txacolí Day (Txacoli Eguna, in Basque).
