Ayni is the quechua name of a principle of reciporcity practised for centuries by the andean cultures, it means in order to receive something you first have to give. Ayni is also the name of our most special vineyard, located in Paraje Altamira one of the best appelations within Uco Valley in Mendoza.

Argentina has a history of sparkling wine production since the early 1960’s.

Tasting Notes: Aged for 18 months on its lees before disgorgement. It’s a creamy with a nice toast aroma. It is made in a well-balanced style, with fine bubbles and a dry, palate-cleansing finish.

Soil type: Sandy loam over calcium carbonate coated gravels, 30 to 50 cm deep
Grapes: 100% Pinot Noir
Average age of the vines: 10 years 
Winemaking: Methode Traditionnelle (Champenoise). Aged sur lattes for 18 months. Made following the tratidional method, fermentation goes until it gets totallay dry. No liquor is added to keep the freshnes, elegance and purity of is clean profile.

"Perhaps with the same sort of structural power that Altamira reds possess, this sparkling rosé shows something immutable in body, lively texture, bracing acidity. The wine spent 18 months on the lees and this, no doubt, provides flavor complexities well beyond the fruit, but still the fruit predominates with intense aromas, substantial, and crisp, lively acidity. Bavencoff Pernand Vergelesses Blanc is made from Chardonnay.

The wine offers a white gold or pale yellow color turning into darker gold with age. It boasts aromas of white flowers, (may, acacia) developing into notes of amber, honey and spices. On the palate it is mineral, harmonious and easy to like.

Aged in new oak barrels (Allier).

Sushi, fresh-water fish in white sauce, and for pasta or a seafood risotto.

Excellent with roasted lamb, duck, pork, and beef. A great accompaniment to ham croquettes, hard cheeses, and sautéed vegetables.

On the nose there are fresh and intense aromas of black fruit with spicy notes.
On the palate, the flavor of black fruits (cherries and blackberries) is balanced by ripe, soft tannins with an intense and long finish.

Pair as digestive or pairing with strong cheeses and dark chocolate desserts.

Boeira White Diamond Port  is made from Malvasia Fin, Viosinho, Gouveio, and Côdega de Larinho.

Clear amber color, on the nose aromas of citrus, tangerine peel, peaches and honey. In the mouth it is full but elegant, well integrated and persistent finish

Boeira White Diamond Port is the perfect companion for a number of foods including appetizers, lean fish, salads, pasta or desert like apple pie or crème brulée.

Review:

The NV White Diamond Port is the estate's 10-year Tawny based on Málvasia Fina, Viosinho, Gouveio, and Côdega de Larinho. Caramelized orange, toffee, fig, and spicy white chocolate notes all shine on the nose, and this beauty hits the palate with medium to full-bodied richness and a round layered, incredibly seamless mouthfeel. It's all about its seamless, decadent, sweetly fruited, yet balanced style.

Booker Vineyard Oublie Red  is made from 33% Syrah, 30% Grenache, 28% Mourvèdre, 5% Tannat, 4% Petite Sirah

Oublié's blend is always Grenache, Syrah and Mourvèdre – the California version of a Châteauneuf du Pape. The namesake is a play on the French term for "forgotten." Rhône varietals grow beautifully on the estate and Booker believes that they are far-too-often forgotten when you think of a California wine. Deep ruby/purple in color, this hearty expression of a Paso GSM boasts confident notes of boysenberry, licorice and cedar on the nose. On the palate, the taster is rewarded with lively flavors of raspberry coulis mingled with blonde roast coffee and chocolate ganache. For lovers of Mourvèdre, this vintage of Oublié will show off. It drinks bolder than prior vintages, mostly because the Mourvèdre was so special in '19. 

Oublié is traditionally one of Booker's most food-friendly wines and should pair well with most dishes.

Review:

The 2019 Oublié is a blend of Syrah, Mourvèdre, Tannat and Petite Sirah with a medium ruby-purple color. The nose offers gregarious mixed berry preserves and accents of potpourri, mint and fragrant earth. The palate offers juicy appeal and powerful fruit with loads of spice and floral perfume, bursts of freshness and firm, pleasantly rustic tannins, finishing very long.
