Ayni is the quechua name of a principle of reciporcity practised for centuries by the andean cultures, it means in order to receive something you first have to give. Argentina has a history of sparkling wine production since the early 1960’s.

A versatile wine, good on its own or paired with any food.

"An impressive first release for this all-Pinot Noir bubbly from Paraje Altamira, aged for 18 months on its lees before disgorgement. It’s a creamy, bready, well-balanced style, with fine bubbles and a dry, palate-cleansing finish. A fizz to watch. 2017-22"
- Tim Atkin (Argentina Special Report 2017), 92 pts

"Perhaps with the same sort of structural power that Altamira reds possess, this sparkling rosé shows something immutable in body, lively texture, bracing acidity. The wine spent 18 months on the lees and this, no doubt, provides flavor complexities well beyond the fruit, but still the fruit predominates with intense aromas, substantial, and crisp, lively acidity. If what you’re looking for is a sparkler for carpaccio or roast beef, this is it."

Winery: Ayni

The Ayni Estate
Ayni is produced in a state-of-the-art winery, Chakana, built with the purpose of achieving outstanding quality.

Chakana winery was founded by Juan Pelizzatti on May 2nd, 2002. Juan was driven to enter the wine industry first and foremost by his passion for wine, and also by the desire to invest his time and money on a product of agriculture. Although Juan did not know it at the time, the company was founded on the same day the Chakana was celebrated on the Andes highlands: on that same day, the Southern Cross (the Chakana for the Inca people) becomes vertical in the night Andean sky.
Juan's mission is to create an integral experience to introduce world consumers to the taste and culture of the Andes. His vision is to become one of the top 20 exporters of wine from Argentina, by consistently offering outstanding value for money.

Wine is currently produced in four different levels at Chakana, by winemaker Gabriel Bloise:
          Entry Level: Maipe
Reserve Level: Maipe Reserve, Cueva de las Manos, Nuna
          Estate Selection
          Ayni

The winemaking process is focused on treating the grapes with great care and with strict control of every step of the production.
Wines are designed under the responsibility of the renowned international wine consultant Alberto Antonini.
The winery is located on a 150 ha. estate, 34 km South of the city of Mendoza, in Agrelo, Lujan de Cuyo.
The grapes grown are 35 year-old Malbec, Bonarda and Cabernet Sauvignon.
Deep and textured soils facilitate plant development and confer great body and structure to the wines.
The year-long sunny and dry conditions allow almost organic viticulture practices. The outstanding feature includes a great daily thermal amplitude, with mild days and cold nights, permitting a particular richness of polifenols that improves the wines flavors and color.
A drip irrigation system has been set up to achieve a precise control of the vegetative cycle and a rational use of water. Waters are processed and used in the vineyards.

    Review:

"Intensely fragrant, this wine boasts aromas of citrus, perfumed white flower and yellow stone fruit. The elegantly structured, precise palate delivers juicy grapefruit, ripe apricot and energizing minerals while bright acidity lends balance. A bitter almond note graces the finish. Drink through 2024. - KERIN O’KEEFE"

Gaudrelle Cremant de Loire Sparkling Brut NV

It is an interesting experience as a sparkling wine for people who want to have a fine and elegant wine comparable to Champagne for a very good price.

This methode traditionnelle sparkling wine is aged for minimum 18-24 months in cave before disgorging. The dosage is 12 g/l residual sugar and the wine is aged for minimum 3 months after disgorging .

    Review:

"The two sparkling wines should not be missed. They're both terrific examples of how good sparkling Vouvray can be. Both are 100% Chenin Blanc cuvees. Even better is the slightly richer, more honey and lemon-scented and flavored non-vintage Cremant de Loire. A blend of equal parts Chenin Blanc and Chardonnay aged for a minimum of 18 to 24 months in their cellars before disgorgement, this is a real beauty and a superb wine. Unfortunately, just under 100 cases are imported to the United States." -Wine Advocate 92 pts

    Pierre Olivier Sparkling Rose NV

Pierre Olivier Sparkling Rose NV is a value sparkling rosé, made with Tempranillo grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.
This wine is aromatized with a very little amount of Raspberry flavor, giving a nice mouthfeel, with an extra aromatic boost.

The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.

"Pale pink salmon. Just a touch off-dry, this is a very pleasant sparkler that reveals aromas of spicy red apple with a hint of cinnamon that carry through to the palate. Well made and exceedingly pleasant to drink."

    Montino Rose NV

Montino Rose NV is made from 85% Muscat and 15% Pinotage

Naturally lighter in alcohol, mouth-wateringly fruity, Montino offers fresh and lively wines. Delicate, fruity and light, it's perfect for those mid-week occasions when you've got a lot on and would like a lighter, lower alcohol option.

Montino Natural Sweet Rose offers an abundant bouquet of red berries in a refreshing, lightly sparkling wine.

    Tasting notes:
An irresistible juicy natural sweet rosé, Montino Rose is a pretty cherry pink with tempting crushed strawberry and Turkish delight aromas that explode in succulent candied red berry flavors. The light alcohol, lively wine is easy-drinking and a great lunch time wine.

Only free run juice is used for the purest fruit expression (i.e. no pressed grape must: as pressing the grapes add astringent flavors from the skins and pips). After settling and acid adjustment, the fresh grape must was inoculated with selected yeast. Fermentation was colder than usual to capture the delicate floral and upfront fruit flavors. Varietals are vinified separately and blended to perfection before bottling with CO2 in a petillant style (lightly sparkling).

This wine should be served well-chilled. It is an ideal lunchtime wine, complementing light summer salads and tapas style meals. However, it is versatile enough to be served at most occasions.

    Rebuli Prosecco In Fondo NV

description: This is a Pét-Nat Prosecco.
Pét-Nat is short for Pétillant Naturel (French for Naturally Sparkling).
It is the same vinification method as "Methode Ancestrale" used in Bugey Cerdon.
The wine is bottled before the end of the first alcoholic fermentation. Unlike Champagne method (in which the base wine completes his first fermentation in tank and only the secondary fermentation takes place in the bottle adding sugar and yeast also known as liqueur de tirage, which will requires the wine to be disgorged), Pét-Nat method doesn't imply the wine will be filtered or disgorged upon fermentation.
This gives Pét-Nat its light and fizzy mouthfeel, generally with a little sweetness and low alcohol. Most of the times, bottles are slightly cloudy from the presence of lees.
The wine is vibrant with complex lemon citrus, pear and verbena. It finishes dry with delicate yeasty notes.

    Alcohol 11,0% vol.
    Acidity 5,1 g/l.
    Residual sugar 0 g/l
    PH 3.3
    Pressure 2.4 atm

    Area of origin: Vittorio Veneto
    Soil: calcareous
Varietal: 95% Glera (known as Prosecco)
Harvest: Manual, with selection of the grapes.
Vinification: Soft pressing with bladder membrane press, settling of must, fermentation at controlled temperature
Fermentation: Processed according to the traditional method of fermentation in yeast bottles. Is normal his natural “bottom” deposit in the bottle, which is why it is brilliant or velvety straw yellow if shaken; the bubble development is brilliant.

Extremely digestible wine, suitable for casual moments or tasting the typical sausages of the local tradition such as the sopressa. Great with pizza daisy.

    Review:

"Showing orchard fruit aromas, this wine offers exuberant fruit with light lemon and herbal notes. It offers bright acidity and finishes complete dry. One of the best Pet-Nats we’ve had this year. Made of 95% Glera, this is a sparkling wine made the ancestrale method where the wine is bottled before the end of fermentation, resulting in dissolved carbon dioxide that lends a light sparkling quality to the wine."
