Sake By Kysela has been a project in the making for three years now. In the end, we selected a Sake made from the famous Yamada Nishiki rice produced in the Southern Prefecture of Shimane. Flavorful, rich, and clean; this sake is best as an aperitif or with seafood like fluke, dover sole or halibut. Kanpai!!!
Salvaterra Amarone della Valpolicella Classico is made from 65% Corvina, 20% Corvinone, 10% Rondinella, 5% Oseleta.
Perfume of cherries, cocoa, tobacco and black pepper. On the palate it is complex and deep, elegant and robust at the same time, harmonious and with an excellent tannin.

San Giorgio Ugolforte presents a dark core of red and black berry fruit layered with earth, leather, smoke, and herbs. Complex and elegant, the wine is full on the palate and firm in tannin structure. Refreshing acidity frames a graceful finish. Classic Brunello di Montalcino.

"The inaugural release of the 2021 Proprietary Red Wine upholds the level of excellence expected from winemaker Thomas Rivers Brown. A robe of light where Dalhia or Strelitzia petals are subtly woven in iridescent Pop colours. Grapes from carefully selected plots are meticulously sorted and de-stemmed before going into the vats, and the controlled maceration helps with the color extraction and the development of the full aromatic richness of the Pinot Noir.

Slightly coppery salmon-pink in the glass, it displays a radiant nose of ripe red berries that pop against glimmers of spiced biscotti and roasted cashew. On a broad palate of pure silk, raspberry and black cherry are underlined by blood-orange rind and crushed rock before a long, almost voluptuous finish that's slightly savory with dried mint.

Review:
The word sidereal means relating to the stars, particularly when measuring time or astronomical events. Which is weird for an earthly delight of a wine that makes time stand still while you attempt to decipher a vast array of aromas ranging from blackcap raspberries and cherry blossoms to wet slate and moon dust. Blackberries rule on the palate, with Assam tea, bay leaf and black pepper flavors easing along a lithe and nimble mouthfeel. Sidereal is also balance personified
