Vinification Methods: Grand Cru Clos des Hospices dans Les Clos parcel is handpicked, like all our 1ers Crus and Grands Crus. We generally start picking in Grands Crus parcels first because the grapes ripen earlier thanks to their ideal exposure. We vinified Grand Cru Clos des Hospices dans Les Clos in stainless steel tanks for both alcoholic fermentation, activated with natural yeast for 15-18 days at low temperature (18°C) and malolactic fermentation, thanks to natural bacteria at 20°C for a few months.
Aging Methods: From vintage 2013, Louis decided that our monopole Grand Cru Clos des Hospices dans Les Clos will age only in tank, on fine lees, with minimum intervention, to let it express all its minerality and purity. Just before bottling, the cuvee will go through a light filtration and bottling. Generally, the bottling takes place 18-20 months after harvest.

This Cabernet Sauvignon has an intense ruby red color with aromas and flavors of ripe blackcurrant, red pepper, mint, chocolate and vanilla hints.
35 years old vines. 14 day fermentation with selected yeasts at 26-28°C; 5 days post fermentative maceration; 1 day delestage; malolactic fermentation.
The fruit and tannins are perfectly balanced to give a wine of excellent structure making it ideal for grilled meats, game, pasta or pizza.

The nose reveals dried plum and dark fruits, exotic spices, with hints of violet and chocolate. Round and fleshy, with enticing crushed plum and boysenberry fruit enlivened by a liquorice snap note. Fresh acidity lies buried on the medium-weight, juicy finish.
The grapes are carefully chosen and fermented in small lots to preserve the vineyard identity. Alcoholic fermentation for 12 days with indigenous and selected yeasts, at temperatures of 26 and 30°C, combining, remontage, pigage and delestage in order to obtain the best quality of tannins and structure.

For our taste, no one grows finer Syrah in the state than Dick Boushey. We named this wine after the Provencal Troubadour Arnaut Daniel, who invented the Sestina poem form, thus creating a connection between our two flagship efforts.

Review:
Dick Boushey is the high priest of Syrah growers in Washington state for a reason, and it's all on display here at the deft hand of winemaker Chris Peterson. Dried lavender florals and notes of thyme, anise and wild oregano dance around alpine mountain berries and juniper. The palate shows notes of chicory root spice, smoky clove, and salted blood orange vibrance, lifts the mid-palate and finishes with mouthfuls of blueberries, thyme and black tea.
