Corinne Perchaud Chablis AOC 2022

Corinne Perchaud Chablis is 100 percent Chardonnay.

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.

The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.

Pairs well with Oysters or shellfish and Sole Meunière.

Review:

"Pale straw color. Bright, attractive aromas and flavors of roasted lemons and kiwis, green nectarine, nougat, and grass with a soft, vibrant, spritzy, dry-yet-fruity medium body and a tingling, complex, medium-length spiced clementine and delicate herbal honey finish with silky, crunchy, fruit tannins and no oak. A delicious, nicely layered Prosecco with an elegant style." - Beverage Testing Institute (November 23rd 2015), 91 pts, Best Buy

Damilano Barolo Cannubi 2018

Damilano Barolo Cannubi is made from 100 percent Nebbiolo.

Garnet ruby red in color with orange reflections. The bouquet is ample and embracing, with pronounced fruity notes of cherry and plum and notes of tobacco, licorice and cocoa. On the palate, the wine is harmonious, pleasantly dry with soft tannins, broad and full-bodied. Persistent finish.

Cannubi is a sumptuous wine, perfect with the full-flavored Piedmontese cuisine such as white truffle -based dishes and braised meat. Ideal with the refined dishes of the great international gastronomy.

Review:

Sweet berries, tar and hazelnuts on the nose with some iodine and dry earth. Full-bodied with a solid center palate of juicy fruit and powerful, fine tannins. It’s racy and very long. Needs time to soften. Better after 2023.

This wine is excellent with typical piedmontes pasta (tajarin, ravioli); perfect with red meat, braised and roast meat, game and absolutely ideal with all types of cheeses.

Review:

“Incredible, reserved ripeness and depth already evident on the nose after one whiff, offering plum, cedar, rose hip, sandalwood, and licorice. Full-bodied with superb depth of fruit and an abundance of polished tannins that give the wine poise and grace, even though it’s long and powerful. The quality of the tannins are exceptional. Sheer and refined. This comes from the center of Cannubi.”
