My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Patricia Raquin Nuits St. Georges les Vaucrains is made from 100 percent Pinot Noir.

"Vaucrains" comes from old French word meaning place with very little fertility (which is very good terroir for grape production)
Nuits-Saint-Georges AOC: AOC wines since 1936, 757 acres of grapes, 97 % red wine, 3 % white wine. Nuits refers to “walnuts in the area, not night”….41 Premier Cru vineyards

Tasting Notes: Powerfull aromas with lots red wild fruits, full bodied wine with great aging potential.

VINEYARD: Gravel and Silt

HARVEST: Harvest by hand.

VINIFICATION: Harvest by hand. Traditional vinification in thermoregulated stainless steel. Pre-fermentation – temperature controlled cold maceration during 10 days. Long fermentation during which pigeages and pumping over are performed. Post-fermentation - maceration at 30°C for 5 days.

AGEING: Aged in new French oak barrels for 16 months.

Patricia Raquin Santenay 1er Cru Beaurepaire is made from 100 percent Chardonnay.

The animals shown on the label are dogs. The breed is called Borzoi, also called "Russian Wolfhound", which means "fast" in Russian. Patricia and Alain are proud owners of 2 Borzois and they designed this label so that the dogs will be guardian of the vaulted ageing cellar inside their house.

The Santenay Santenay is coming from the Premier Cru called Beaurepaire. 

The contrast between our 10 Acre and West Block Pinot noirs exemplifies how slight geographical differences can have significant influence on the flavor profile of a wine. Planted in 1997, The 10 Acre block of Pinot noir is the oldest planting on the Patton Valley Estate Vineyard. Located on the east-facing slope of our vineyard, this area gets full sun in the cool morning hours, leading to a slower, more gradual ripening process and a wine that is typically elegant and lighter in body with prevailing red fruit character.

The 2011 10 Acre Pinot noir shows abundant aromatics, immediately woodsy but overwhelmingly fresh with lavender and red plum, sweet caramel and malt. The palate is lush and broad with sweet cherry, cigar box, and the faintest hint of peat smoke. Soft and very subtle tannins give this wine a solid backbone. A great acid profile makes this wine likely to offer boundless enjoyment when consumed in the short term, or if given some time to rest, the distinct potential of becoming something much more profound. Drink now or cellar 5-8 years.

Paul Hobbs George Menini Estate Pinot Noir is made from 100 percent Pinot Noir. 

Brilliant ruby red in the glass, the 2022 vintage follows the color with matching aromas of wild mountain strawberry, raspberry, and cherry infused with hints of black tea. On the palate, this wine has the texture of thick satin, evolving seamlessly with subtle energy and pleasant tension. Elegant, fine-grained tannins run through a lingering, juicy finish.

Review:

This has fantastic intensity and focus with firm and racy tannins that show blue fruits, orange peel, hibiscus flowers and plants. Medium body. Acid and tannin driven. Complex structure. 85% of this is heritage clones of Mount Eden, Calera and Swan. Drinkable, but better in two or three years.

Paul Hobbs West Sonoma Coast Pinot Noir is made from 100 percent Pinot Noir. 

Hailing from the newly established West Sonoma Coast AVA,.

Lovely ruby red shades catch the eye, while exotic notes of tart Morello cherry and pungent pine forest swirl with fresh raspberry. Bright, pure fruit carries through on the palate, layered with earthy hints of damp loam and rocky salinity, all backed by the elegant, fine-grained tannins and stylish grip that cool West Sonoma Coast offers at its best.

Review:

  A rush of sugared beet, pomegranate, and vanilla-soaked raspberry mingles with a touch of salinity on entry, while a soil component reflects the super-cool climate of the appellation. Power and elegance coexist in this red, which finishes with graphite, peony, basil, and exotic incense.
