Bavencoff Pernand Vergelesses Blanc is made from Chardonnay.

The wine offers a white gold or pale yellow color turning into darker gold with age. It boasts aromas of white flowers, (may, acacia) developing into notes of amber, honey and spices. On the palate it is mineral, harmonious and easy to like.

Aged in new oak barrels (Allier).

Sushi, fresh-water fish in white sauce, and for pasta or a seafood risotto.

Beliere Bugey-Cerdon  is made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation. 
This is also wonderful served with chocolate cake! 
8% ABV.

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Dairyman Vineyard is made from 100 percent Pinot Noir. 

Dark plum in color with abundant aromas of dark chocolate, black cherry, and sun-ripened blackberry with a hint of cedar. Layered flavors of blackberry and raspberry pie filling, accompanied by notes of cinnamon, chocolate, and nutmeg play on the palate. Smooth and focused with refined tannins and a medium finish.

Bertani Valpantena Amarone  is made from 80% Corvina Veronese, 20% Rondinella.

The best grapes are selected so that only the healthiest and ripest bunches are sent to the drying rooms in the historic winery at Grezzana, where they are laid out in single-layer crates. In mid- January, the grapes are destemmed and crushed, then fermentation starts, at first at a temperature of 39°F- 41°F, which then reaches 72°F in the final stages.

WINEMAKING

The vines are vertical-trellised and Guyot-trained, with a planting density of 2024 plants per acre. Hand harvest is carried out in the middle of September.

This amarone is produced in the Valpantena hills, north of Verona. The soils are calcareous-marl in the east and calcareous-clay in the west, rich in iron.

TERROIR & VINTAGE NOTES

Bertani’s impact on Veneto wine making, particularly in Amarone production, is so considerable that ‘Bertani’ and ‘Amarone’ are nearly synonymous. While respectful of their past, Bertani strives towards innovation, using progressive techniques and equipment allied with extensive experience and a deeply felt respect for tradition to provide wines of uncompromising quality.

On the nose, marked and intense aromas of very ripe cherries, sour cherries, spicy and nutty notes typical of the Valpantena. Good follow-through of red fruits on the palate, with supple tannins to give depth. This full bodied wine pairs well with rich dishes, mature cheeses and strong-flavored meats.

Betz Family Domaine de Pierres Syrah is made from 100% Syrah.

With our long history of making single site syrah's in Washington, it made sense for us to venture into the Rocks District of Milton Freewater in the Walla Walla Valley to bring you our newest syrah, "Domaine de Pierres."

The Rocks AVA produces syrah that shows a distinct character, separating it from any other site in Washington State. One thing in particular that has drawn people here is the gallet stones present throughout the valley. They are very similar to the pudding stones that are found in Châteauneuf-du-Pape, and can be anywhere from golf ball size, to softball size or larger. Since we purchased the vineyard in 2014 we have been tilling the earth multiple times every season to expose these rocks. The gallet stones act like a heat sink, giving a little extra push to help ripen syrah in an area with marginal heat accumulation. 

In the glass, Domaine de Pierres stands out from our other syrah's because of its incredibly savory profile. Notes of roasted meat, fresh herbs, olive tapenade, tobacco and graphite are supported by dark fruit, espresso, and lavendar. The wine has a lower acidity and higher PH than our other wines, which contributes to a velvety, full bodied mouthfeel. Even in the cellar, we immediately noticed a difference in the color, aromatics and flavor that these syrah grapes were able to express. 

The other big reason that we are so excited about the wine from this particular AVA, is that the history of the Rocks is happening right now! Our vineyard, “Ancient Stones,” has only been planted there since 2007, and the beginning of the Rocks as a wine growing region only really started in the 1990's. There is a lot of energy and exploration going on, and it has been a fun experience for our team to be a part of it.  We still have so much to learn about this region and it is very exciting to feel like we are on the upward swing!

Intense ruby ​​​​color of high layer with garnet edge, clean and shiny. Intense nose that, from the beginning, transmits complexity, penetrating, with aromas of black fruits, blueberries and currants, undergrowth, roasted memories, toffee, coffee powder, liquorice, cloves, vanilla and lebanese cedar. Mouth with freshness and balance, with tannins ripe and creamy, which highlight its elegance, with a step harmonious and intense. Long and pleasant aftertaste, with a great variety of balsamic and spicy memories.

Review:

The old-vine component of the El Otero parcel, running to around seven hectares, supplies the fruit for this ageworthy Tinto Fino. After a frost-induced break in 2017, it's back with interest in 2018. Aged in new French oak, but not dominated by the wood, it's a finely judged red from Julio Sáenz with notes of blackberry and tangerine, filigree tannins and a long, textured finish. 2023-33
