This 100% Chardonnay blend is made from Tête de Cuvée, or first pressing of the grapes, considered superior in quality, with a high percentage of reserve wines for extra complexity, depth and richness, and a low added dosage to preserve purity and freshness. 

 

Thibaut-Janisson Virginia Fizz is made from 100 percent Chardonnay.

Virginia Fizz is a fun and festive sparkling wine, great for all life’s celebrations. It is cremant style made of 100% Chardonnay. Packed with apples and peach flavors, the wine has a very creamy and smooth texture. The myriad of tiny bubbles will tickle your taste buds.

Refreshing on its own, but perfect mixed as a cocktail!

Thorn Clarke Milton Park Shiraz is aged for 12 months in American oak barrels.

Deep red color. The wine is deep and rich smelling with dark fruits, plums and spice with some good oak. There is very rich fruit on the palate with plums, blackberry and sweet spice from the oak. The palate is vibrant and young with a flavorsome viscous mouthfeel which will develop complexity with time. There are some slightly chewy tannins which will soften with time and there is great length of fruit flavor.

Deep purple red. Aromas of ripe plums, cherries and earth with subtle notes of vanilla and cloves. The aromas follow through onto the palate with a fruit focus, subtle oak notes and soft, rounded tannins. The wine walks the line between medium and full bodied with a plush mouthfeel.

Vinification Notes

The grapes are crushed and de-stemmed into fermenters. Yeast is added immediately once in fermenter and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction. Cooling is used to ensure ferment temperatures remain in the 22-25 degree celcius range which will allow the fruit to display maximum fruit expression. Pressing then occurs approximately seven days after crushing and the  wine is then put into predominately American oak to mature.

Tres Ojos Garnacha Calatayud is made from 100 percent 85% Old Vine Garnacha (40-50 year old vines) and 15% Tempranillo.

The wine has a brick red color with a bouquet of red raspberries, spice and white pepper. The palate is incredibly concentrated and rich. The modern styles of Garnacha in Spain are continuously being perceived worldwide as wines of extraordinarily good quality. This wine is fruity, juicy and shows a great depth, ripe tannins, length but yet with wonderful elegance and lightness.

The wine ferments for 7 days at 30ºC, followed by 14 days maceration on the skins. Aged 12 months in large stainless steel vats. Cold stabilized and lightly filtered before bottling

Enjoy with sausages, roasted meats, aged cheeses etc.

Tres Ojos Rosado Calatayud is fresh, crisp and juicy Rose made of 50% Garnacha and 50% Tempranillo displaying beautiful strawberry and raspberry fruits. Enjoy with salads, chicken or simply with a glass. Serve chilled.
