Corinne Perchaud Chablis (half-bottle) is 100 percent Chardonnay.

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.

The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. There is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest. 2011 Vintage The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed vineyards. The dry and sunny weather of the second half of August brought the grape good maturity. The harvest began on September 2 under clement skies.

Crabitey Graves Rouge is made from 47% Cabernet Sauvignon, 47% Merlot and 6% Petit Verdot.

Château Crabitey Graves Rouge presents a dark cherry color with nice ruby glints. The nose is fresh, revealing a wide range of red fruits flavors, along with a mellow and elegant oak presence. The mouth is powerful and round, supported by smooth and subtle tannins. The wine reveals a good length on the palate, with fruity and slightly oaky notes.

Pairs well is grilled lamb, beef stroganoff and hard cheeses.

This new-wave Rioja (see below for info) is a blend of Tempranillo, Graciano and Garnacha. It combines maturity and complexity with freshness and elegance. Theres a core of dark plummy fruit, with some cherry notes, spice and earthiness and lovely ripe tannins giving complexity and body.

This is perfect with grilled lamb chops and salsa verde

 Rioja has traditionally been defined by its ageing. Wines would be blended from across the region and quality would be defined by a wines age - vineyards and regionality were not considered important. Now, theres a new movement in Rioja where new wave producers are pushing to label the wines from their villages and regions highlighting the difference in the terroir and individual parcels.

Creaciones Exeo is part of this movement , stepping away from traditional methods, to produce fresher styles of wine with a lesser reliance an oak influence. The important thing here is hard work in the vineyard to produce great fruit.

Located in the area of Labastida, Rioja Alavesa (this village is labelled on the bottle, until very recently producers were not allowed to do this), Carlos works with 24 hectares of the highest altitude vineyards of the area. In the shelter of the Sierra Toloo, the vines benefit from Atlantic influences and the soils here are mainly chalk and limestone which all help to give elegance the wine.

Early to bud and early to ripen, the 2014 vintage was our third drought year in a row. Dry, even temperatures marched the grapes along at a steady clip all year and created a wine with beautifully integrated fruit, acidity, and tannin.
Dense and dark magenta in color, this is a lithe and energetic vintage with lifted aromatics and a purity of fruit that lights up the medium-bodied tannin structure. The nose promises fresh black fruits, cherries and a touch of graphite, and the palate completely delivers. Juicy blackberry, plum, and bright cherry explode in the mouth, and develop into savory notes of baked black fruit and fresh pencil shavings on the mid-palate. 
Eagle Summit Vineyard’s signature eucalyptus appears on the back palate to brighten the fruit, showing fragrant peppermint and warm, toasty spices through the finish. Whether you open it young or wait a few decades, this vintage does Howell Mountain proud--sophisticated and smart, with a rustic wild side.

Cresta Velia Cabernet Sauvignon Howell Mountain is made from 100 percent Cabernet Sauvignon.

"The 2014 Cabernet Sauvignon is 100% Cabernet aged 20 months in 86% new French oak, with the typical suspects in terms of cooperage – Darnajou, Taransaud, and Remond. This opaque purple-colored wine has plenty of mulberry and blackcurrant fruit along with hints of blackberries, camphor and incense. The are some notes of unsmoked cigar and licorice as well. Ripe, medium to full-bodied and luscious, it is a classic to drink over the next 15 or more years. - RP"

Aromatically the wine lifts from the glass with a combination of perfectly ripened red and black fruits, with a graphite smokiness and a hint of mulling spices. On the palate, their is a youthful tannic structure and a floral flavors alongside the fruity notes. 

Spicy cologne lifts from the 2021 Pinot Noir Paul Gerrie Vineyard, with both high-toned and darker notes of sage, menthol, bergamot, and cranberry cocktail. Medium to full-bodied, it’s tightly coiled, with tremendous length, gripping ripe tannins, a bright spine of acidity, and mouthwatering salinity that lasts long on the finish. It offers up great mineral texture and will need 3-5 more years in bottle.

Deep ruby in color, this wine boasts aromas of cassis, blueberry, pomegranate, and currants. Notes of tobacco, chocolate, and toasted spices follow, bringing an immense depth to this wine. The palate is full-bodied and rich with ideal balance between concentrated fruit and freshness. From its mouthwatering acidity and flawlessly integrated oak, it finishes with notes of blackberry jam, cacao, and mocha complemented with herbaceous tones of fennel and thyme.

Review:

The 2020 Cabernet Sauvignon is cut from the same cloth as the 2019, yet is perhaps richer and more expansive, with slightly less elegance. Currants, chocolate, toasted spices, and tobacco all define this beauty, and it has full-bodied richness, flawlessly integrated oak, good acidity, and a great finish. Anyone doubting the quality that can be achieved in Cabernet Sauvignon from Paso Robles owes it to themselves to try one of these wines.
