Robert Mondavi Winery Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 5% Petit Verdot, 3% Cabernet Franc, 1% Malbec.

The 2022 Robert Mondavi Napa Valley Cabernet Sauvignon shows notes of plum, blackberry, licorice, chocolate, violet, and warm spice. Dark plum and black fruit carry through to the palate. Fresh and lively with plush tannins and a polished structure.

"A solid representation of Napa Valley Cabernet Sauvignon, this wine sources fruit from St. Helena down to Carneros, with the bulk of the blend coming from the Wappo Hill property in Stags Leap. All five Bordeaux varieties are included in the blend. Fermentation begins with a cold soak in stainless steel, followed by 26 days on skins, and 18 months of ageing in 31% new French oak. The wine opens with powerful Kirsch aromatics, lifted by bright Bing cherry, warm baking spices, new wood cedar, and white pepper. It is plush and layered on the palate, with black-toned fruit and robust, lingering tannins that carry through a long finish of dark red and black fruit, warming spices, and mineral tension. Roland Champion Champagne Blanc de Blanc Grand Cru 2014 is made from 100% Grand Cru Chardonnay from the chalky soils of Chouilly.

This Champagne is full of elegance and finesse. Very complex nose, with a bouquet of aromas dominated by honey, brioche and notes of dried fruits, hazelnuts and sweets. Perfectly matured.

Manual harvest; then pressing immediately to avoid oxidation & preserve quality. Free run juice only. Aged six years on the lees.

It matches magnificently with foie gras!

And very good it is, with some age after six years on lees while still having freshness, crisp acidity and a tight, steely edge. Sake Eikun Junmai Ginjo Water Lords is made with Iwai rice.

Eikun sake uses water from a source called "Fusui", rated as one of the top 100 sources of water in Japan. This water source is located just south of the ancient Japanese, and still cultural capital of Japan, Kyoto.

Aromas of macadamia oatmeal cookie, spicy zucchini bread, and vanilla cream with a satiny fruity-yet-dry medium-to-full body and a layered, banana custard, jicama, salted whole nut, apple, and radish nuanced finish. Sei Solo Ribera del Duero Tempranillo is made from 100 percent Tempranillo. 

Named after Bach's six solos for violin, Sei Solo represents Javier Zaccagnini's vision of elegant, high-toned Ribera del Duero from the powerful, mineral soils of La Horra and the top vineyards of Barroso and Acos that are planted with old vines of 60 to 90 years old.

Displaying wonderful clarity of fruit and excellent transparency to the multi-layered flavors, there is no new oak influence on this at all, resulting in a wine that has nothing to hide behind. Deft tannins support a taut, mineral, dark fruited wine that, while tight knit and brooding is tremendously refined and vital and not at all tiring to drink. A Ribera built on elegance, refinement and nuance that promises great things for the future. A star is born.

Fermented in stainless steel tanks of small capacity, adapted to the size of every vineyard, allowing to do individual fermentation for every different plot.
Short and careful pumping over, never reaching high temperatures to respect the fruit and avoid over extraction of the tannins, gaining the full potential of elegance and finesse of the old vines. After alcoholic fermentation the wines are racked to two-year-old French barrels to undergo malolactic at low temperature ( less than 14 degrees C) . This process takes several months. When malolactic is finished, the wines are racked to 600 liter big barrels of French oak, which are not new to avoid a loss of balance and style of the wines. Aging in barrels for 20 months.

 Review:

Made with Tempranillo from 60- to 100-year-old vines, this wine has a bouquet of purple plum, black currant and a hint of cedar. Plush tannins and striking acidity provide a backdrop to black cherry, Mission fig, caramel, milk chocolate and juniper-berry flavors. I did not want this wine to end; it is a gorgeous pour on its own, but to get the most out of it enjoy it alongside a Porterhouse or Tomahawk steak. Drink through 2034. — Mike DeSimone

Tasting Notes

This Pinot Gris is filled with great fruit intensity of ginger spice and pear drop aromas, beautifully balanced with a smooth juicy finish. A wine to be enjoyed on any occasion.

Winemakers Notes

Following harvest the fruit was fermented in batches using a number of fermentation techniques, including barrel fermentation (10%), on skins fermentation (90%), and lees aging for five months. The resulting blend of these techniques has resulted in a rich and complex Pinot Gris with concentration and balance.
