The olfactory impact is of considerable aromatic intensity: it expands with notes of small, fully ripe red fruits, accompanied by clear balsamic and Mediterranean hints. In progression, typical mineral notes develop. The gustatory impact is austere, of remarkable freshness and of large volume. It develops in a balanced fusion between the broad minerality and the fine and enveloping tannins. Everything is found in the long final persistence that foreshadows a long life ahead.

Goes well with game, as e.g. local preparations of wild boar, roast, braised and stewed red meats, and medium aged cheese.

Dense and smooth, featuring black cherry, blackberry, plum, iron, licorice and menthol aromas and flavors. Fresh and featuring a spine of tannins, this finishes on the compact side for now. Shows balance, so be patient. Cabernet Sauvignon, Merlot and Sangiovese. Best from 2025.

The 2019 Bolgheri Superiore Grattamacco (a blend of 65% Cabernet Sauvignon, 20% Merlot and 15% Sangiovese) is a real beauty and shows very nicely today based on advancing vine age alone. Cabernet Sauvignon and Syrah vines show great results after seven years, whereas Merlot and Sangiovese vines need a few more years before they start to show that extra degree of complexity, the winemaking team tells me. This is a complete and beautifully balanced wine that shows soft extraction and especially sweet tannins. It fermented in truncated conical oak vats and finished in barrique for 18 months.

This is a cool, brilliant and mineral riesling with so much wet stone character alongside lime peel, white grapefruit and small white flowers on the nose. Coriander leaf and root. Sharp and exciting, medium-bodied, precise and full of mountain freshness.

Gigondas offers a rich bouquet, with fine, fruity and spicy aromas and a sunny color ranging from ruby ​​to dark garnet. The nose reveals a bouquet of red fruits and very ripe black fruits. On the palate, the Gigondas is full-bodied with a fleshy attack. The Grenache Noir releases all the expression of its power in this shimmering red wine with marked tannins, a structured body and a great aptitude for aging. Roland Champion Champagne Blanc de Blanc Grand Cru is made from 100% Grand Cru Chardonnay from the chalky soils of Chouilly.

This Champagne is full of elegance and finesse. Very complex nose, with a bouquet of aromas dominated by honey, brioche and notes of dried fruits, hazelnuts and sweets. Perfectly matured.

Manual harvest; then pressing immediately to avoid oxidation & preserve quality. Free run juice only. Aged six years on the lees.

Raats MR Mvemve Raats de Compostella is made from 63% Cabernet Sauvignon, 17% Cabernet Franc, 12% Malbec, 6% Petit Verdot, 2% Merlot

The name de Compostella (meaning “field of stars” or “compilation of stars”) was chosen to reflect the fact that each component is crafted to stand alone as a world class varietal wine. The wine exhibits a deep, dark ruby color. Blackcurrant and black cherry fruit with hints of violets, cedar and cinnamon are revealed on the nose. The palate is rich and complex with mineral, blackberry fruit and dark chocolate on the finish. The five Bordeaux varietals harmoniously convene in this consistent, linear flavor profile that is polished with a well-defined finish.

he 2020 De Compostella is composed of 30% Cabernet Franc, 28% Cabernet Sauvignon, 21% Malbec, 16% Merlot and 5% Petit Verdot. Beginning with a focused, juicy and complex nose of dark red fruits, the wine has impeccable balance between oak, fruit and earthy floral tones. Full-bodied and with succulent acidity, the palette offers a firm frame of fine-grained tannins, while the fruit profile makes way for elegant earth and notes of crème de cassis sway with subtle flavors of sage and spiced plum. description: This is a Pét-Nat Prosecco. 
Pét-Nat is short for Pétillant Naturel (French for Naturally Sparkling).
It is the same vinification method as "Methode Ancestrale" used in Bugey Cerdon. 
The wine is bottled before the end of the first alcoholic fermentation. Unlike Champagne method (in which the base wine completes his first fermentation in tank and only the secondary fermentation takes place in the bottle adding sugar and yeast also known as liqueur de tirage, which will requires the wine to be disgorged), Pét-Nat method doesn't imply the wine will be filtered or disgorged upon fermentation. 
This gives Pét-Nat its light and fizzy mouthfeel, generally with a little sweetness and low alcohol. Most of the times, bottles are slightly cloudy from the presence of lees.
The wine is vibrant with complex lemon citrus, pear and verbena. It finishes dry with delicate yeasty notes.
