The aging is as Mounir ages his Burgundies: extremely long, never racked, no fining, no filtration. It would be easy to say that we expected the experience running one of Burgundy’s leading producers, Lucien Le Moine, would show in Mounir’s wines. But the actual results need to be tasted to be believed and understood: a wine with beguiling fruit and savory richness, yet extraordinary finesse and detail.

Mounir Saouma likes to describe Châteauneuf-du-Pape as a mosaic, with all the wild traditions and differences together making for very different interpretations. Omnia, Latin for “all,” is his attempt to encompass the entire region’s terroir and winemaking history (and perhaps future) in one glass. The fruit comes from 9 vineyard parcels across all 5 of the Châteauneuf communes, Châteauneuf-du-Pape, Courthezon, Sorgues, Bedarrides and Orange (in early vintages, when the Saoumas did not have all the vineyards they have today, they would purchase fruit; today, Rotem & Mounir Saouma is 100% Estate). The wine is then vinified and aged in foudres, cement and 500 liter barrels – a little bit of everything.

2019 was another warm and dry vintage in the southern Rhône, marked by insistent drought and repeated heat waves during the season. With little disease pressure or frost, the crop was close to normal size, but bunch and berry-size was reduced during the growing season by the lack of water. The grapes were thus concentrated and rich in sugar and acidity, although potential alcohol levels were often quite high. Vineyards at higher elevations – Châteauneuf du Pape and Gigondas in particular — handled the heat better, and the wines from those AOPs are rich yet also remarkably fresh and energetic. Despite the initial concerns about the growing season, 2019 looks to be a watershed vintage in the Southern Rhône, producing rich wines with exceptional concentration and aging potential

Inviting aromas of sliced strawberries, red cherries and rose. Full-bodied with vibrant acidity and succulent fruit. Fine, structured tannins are vertically aligned with the fruit. More dark-fruited than the nose lets on and entirely delicious. I love the subtle spice here.

Made by Maayan Koschitzky (of Atelier Philippe Melka), the 2021 Cabernet Sauvignon Reserve is all varietal brought up in French oak. Its deeper ruby/plum hue is followed by a classic Cabernet Sauvignon nose of cassis and black cherries supported by plenty of sappy herbs, graphite, and obvious minerality. This medium-bodied, lively, elegant Cabernet has ripe, building tannins, a good spine of acidity, and outstanding length. Drink this classic, impeccably made 2021 over the coming 10–12 years, and I wouldn’t be surprised to see it evolve longer. (Jeb Dunnuck)

Rubus Cabernet Sauvignon Napa Valley is made from 100 percent Napa Valley Cabernet

Saint Pierre Saint Julien is made from 79% Cabernet Sauvignon and 21% Merlot.

Chateau Saint-Pierre Saint-Julien 4th Grand Cru Classé boasts a rich and brilliant purple color, a complex aromatic expression marked by beautiful ripe fruits combined with soft spices, chocolate and licorice nuances. Samuel Lindsay The Gandy Dancer is made from 98% Cabernet Sauvignon and 2% Merlot.

With its deep ruby color and aromas of ripe fruit, the early senses offer comforts of a quintessential California Cabernet Sauvignon. The wine opens with a subtle yet surprising coastal structure, with notes of cooking herbs, violets, and mocha. The 2020 Cabernet is a shining example of how delicious, elegant and beautiful our Cabernet can be. The aromas of ripe plum, black cherry and stone fruits entice the nose. Lastly, the 2020 Cabernet Sauvignon Shibumi Knoll Vineyard is all varietal and spent 22 months in 75% new barrels. It's another beautifully balanced and impeccably made wine from this team that has tons to love, and in this case, it certainly represents a relative value as well. Cassis, darker chocolate, scorched earth, and graphite are just some of its aromatics, and it's concentrated and has full-bodied richness, fine tannins, and the pure, layered, impressive style of the vintage front and center.

Siegel Gran Reserva Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 
Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occuring at 27-29 degrees C to better extract polyphenols from the wine. Post-fermentative maceration for 2 to 3 weeks. Once the wine has been blended it is smoothly clarified. Aged in French oak barrels for 10 to 12 months.

Siegel Reserve Red Blend 1234 is made from 50% Syrah, 30% Carmenère, 10% Cabernet Franc and 10% Petit Verdot.

Deep ruby color. Intense aromas of black fruits, white pepper, spices and a hint of clove. The blend of four varieties gives a complex, deep wine with juicy tannins, good volume and very balanced.

Pre-fermenting cold maceration for five days, alcoholic fermentation at 26-28 C to obtain color and structure. Viña Siegel Single Vineyard Cabernet Sauvignon is the result of our family's continuous search for quality wines with personality which faithfully reflect the best of our terroir. This wine comes from selected grapes from our "Los Lingues" vineyard in Alto Colchagua.

Located in the foothills of the Andes where the influence of the Andean winds result in an elegant Cabernet Sauvignon with great concentration of ripe red fruits, cassis and chocolate, and a balanced, richly structured, and long finish.

An intense violet color. Smells of cassis and is complemented with notes of mature red fruit and chocolate. A round and elegant wine with an excellent final persistence.

After carefully determining the moment for the harvest, the grapes are harvested by hand and later de-stemmed and marinated in cold temperatures for 5-6 days. Alcoholic fermentation is between 26ºC and 29ºC during which daily reassembly is implemented according to taste.Post-fermentation infusion lasts for two or three weeks. Once the blend is made, the wine is gently clarified and stabilized in cool temperatures if necessary.

Sojourn Cabernet Sauvignon Oakville is made from 98% Cabernet Sauvignon and 2% Petit Verdot.

This Cabernet Sauvignon was produced primarily from grapes sourced from Oakville Ranch Vineyard, sitting at 1,000 to 1,400 feet above sea level with a westward aspect overlooking Napa Valley. The vineyard was replanted in 2006 by esteemed organic viticulturist Phil Coturri, and is fast gaining a reputation for producing some of the best Cabernet Sauvignon in Napa Valley. The rocky clay, loam and basalt soils have a heavy iron influence providing structure, power and depth. Cabernet Sauvignon lots fermented separately from two other vineyards that reside in alluvial soils along the Oakville foothills were blended in to add expressive fruit character and lush tannins.

This blend of our generous and supple Oakville Cabernet Sauvignon is dominated by Oakville Ranch Vineyard. Located in the hills among famous neighbors Dalla Valle, Pedregal and Backus vineyards, Oakville Ranch produces powerful, rich, structured wines. Cabernet Sauvignon wines made from two other vineyards along Skellenger Lane were blended in to add expressive fruit character and lush tannins. Each component of this blend spent four weeks fermenting on skins to ensure that the tannins and fruit flavors were balanced. The resulting wine is rich and vibrant, offering vivid flavors of blackberry, raspberry, cassis and mocha.

This is, as usual, a beauty, perhaps more so thanks to a great vintage. It is classically Napa Valley, and classically “house styled” by Aron Weinkauf, with black and blue fruit, supple, approachable tannin structure and great depth of aroma and flavor. That said, keep in mind that this isn’t the winery flagship offering. Even in this price range Lyndenhurst is always a solid value, and is so again – maybe even a little more than usual. Sourced from one of our highest elevation vineyards, the 2017 Rockfall Vineyard Cabernet Sauvignon features a true wildness that expresses the rugged growing site 2,000ft above the fog line. Elegant aromas of blueberries, cassis, graphite and black tea with complex undercurrents of baking spices. This wine balances power with elegance through to its savory palate with a generous structure and ample tannins. The structure of this wine allows for many years of cellar aging to continue to bring out nuanced flavors and complexity.

The Rockfall Vineyard is between 2,000 and 2,200-feet in elevation, and the wine that originates there is powerful and concentrated in style, with robust red-fruit and mineral tones. A slope (un talud) leading up to a mountain where centuries of rock falls have left the soil beneath full of large angular rocks, and therefore useless for most agriculture. Deposited hugger-mugger amongst the clay and sand however, they offer perfect drainage and allow vines to grow, forcing their roots ever downwards in search of water, picking up minerals along the way. If you wanted to explain to someone what Cabernet Sauvignon tasted like, you could do a lot worse than showing them this beautiful expression of the variety which demonstrates great purity, concentration and elegance.

Talud is from the oldest cabernet sauvignon vineyards on Tabalí’s estate in the coastal Maipo zone, 50 kilometers from the Pacific, planted in 1999. The soils are colluvial, which often deliver firm, pointed tannins, and those are present here, but they’re very nicely accompanied by juicy red fruit and bright acidity that allows this wine to put its fresh, vibrant facet in the foreground. Take note, however, there are deep, dense flavors here. It’s still a very young cabernet, so make room in the cellar.
