Winemakers Notes

Most of the blend is tipped into open-top fermentation tanks for preferment soak prior to the fermentation starting naturally with indigenous yeast, another portion is tank fermented with pump over, then a very small portion is kept as whole berries and sealed for carbonic maceration fermentation. Once the fermentations have finished, a partial micro-oxygenation is started which helps the wine to remain softer and rounder earlier.

Grown on our Waipara Valley vineyards the grapes were harvested over a period of two weeks at varying degrees of ripeness allowing for a range of fruit flavours and complexity. This shows in the final wine with great depth of flavour throughout the palate with well-balanced acidity leaving you wanting more.

Siegel Gran Reserva Viognier is made from 100 percent Viognier. 

The grapes for the Gran Reserva wines are the product of a careful selection of Siegel's best vineyards in the Colchagua Valley, harvested by hand, and revealing a strong expression of the land.

Gran Reserva Viognier was aged for 6 months in French oak barrels with lees stirring to provide complexity and structure. The wine shows a pale yellow color with green tones. The nose offers intense notes of white peach, grapefruit and floral aromas. On the palate the wine is balanced, persistent and presents excellent balanced acidity.

Siegel Hand-picked Selection Carmenere is made from 100 percent Carmenere.

The handpicked Reserva wines are born out of a strong desire to offer the very best expressions of terroir from El Crucero vineyard, located at 360 meters above sea level. These carefully handpicked grapes deliver superb varietal characteristics and exceptionally well-balanced fruit concentration. The manual harvest behind the handpicked Reserva Wines, a stage prior to a second triage, highlights Siegel's commitment to delivering uniquely hancrafted wines from Curico Valley.

The wine shows an intense violet - red color, aromas of black fruits, pepper and mild notes of violets. The tannins are soft, and notes of black fruits linger through the palate with long persistence.

Siegel Naranjo Orange Wine Viognier is made from 100% Viognier.

This wine has a nice gold color with some pink hues. On the nose, it shows some sweet notes of spices, dry nuts, white flowers, as well as some light notes of huesillo (dry peaches). In the mouth it shows a beautiful acidity, with a nice mouthfeel and structure and a good length to the finish. 

Pair with rich fish and meat dishes, cheeses, appetizer and dessert

Siegel Reserve Red Blend 1234 is made from 50% Syrah, 30% Carmenère, 10% Cabernet Franc and 10% Petit Verdot.

Deep ruby color. Intense aromas of black fruits, white pepper, spices and a hint of clove. The blend of four varieties gives a complex, deep wine with juicy tannins, good volume and very balanced.

Pre-fermenting cold maceration for five days, alcoholic fermentation at 26-28 C to obtain color and structure. Post fermentation maceration of two to three weeks according wine tasting and then the wine is separated from the skins. The wine ends its malolactic fermentation in tank. Harvest: by hand (30 day harvest window)

Siegel San Elias Merlot is 100 percent Merlot

Soft, rich and concentrated with juicy plum and blackberry fruits, soft tannins and a velvety texture.

St. Nikolaus Brauneberger Juffer-Sonnenuhr Riesling Spatlese is made from 100 percent Riesling.

"Sonnenuhr" means sundial. The vineyard is facing the small town of Brauneberg formerly Dusemond. It's a steep slate slope on the Mosel, with a south-southeast exposure.

Full-bodied Riesling with typical Devonian slate qualities. Luscious fruit; nice minerality, length and acidity.

Tenute Mannino Etna Bianco Aurantica is made from 80% Carricante and 20% Catarratto. 

Carricante and Catarratto collected at the volcano’s feet united in this blend that is appreciated in expressing all the strength and charm of Etna. It has a straw-yellow color with light golden reflections and a beautiful light. The nose is elegant with notes of citrus but also flint and ginger. The taste is very easy to drink and highlights the mineral component, well balanced in all its parts.

Pair with fish ceviche, appetizer, grilled fish and grilled vegetable. Also delicious with goat cheese.

From the most recognized Napa Valley red blend comes a distinct, new wine. Made in the same iconic style as The Prisoner Red Blend, we proudly introduce The Prisoner Cabernet Sauvignon. Redefining taste once again.

On the nose, blackberry, currant, and plum are layered with dried, crushed herbs and licorice. On the palate, cedar, vanilla, nutmeg, and toasted coconut lead as plum and dried blackberries culminate in a lush, full mouthfeel and a lengthy, balanced finish.

Thierry Mortet Chambolle Musigny 1er Cru Beaux Bruns is made from a single vineyard. (0.55 acre). 30 years old vines, planted on clay, limestone and flint based soils.

The wine is produced from a single vineyard (0.55 acres) planted on clay, limestone and flint based soils. It shows a dark color, ripe black fruit and pepper aromas. Long and intense flavors. Smooth tannins, good length and red fruits on the finish. An elegant wine with a delicate, beautiful structure.

Thierry Mortet Gevrey Chambertin Vigne Belle is made from 100 percent Pinot Noir. 

The wine is produced from 20 different parcels (3 hectares total). The soils are a mix of clay and silt.
The age of wines varies between 15 to 60 years.
Yield: 45 hl/ha
Production: 15,000 bottles on average.
Manual harvest with a selection of the grapes; sorting table; 100% destemming; maceration for 15 days, cold stabilization for 4-5 days; M-L.; racking twice a day. Fermentation in stainless steel tanks for 4 months.  Aging in oak barrels for 12 months (new and 1 or 2 year old barrels). Kieselguhr filtration before bottling.

The wine offers a subtle and complex nose. It displays a sweet and delicate mouthfeel. Very nice wine with black fruit aromas. Dense, good concentration. Good length and well integrated oak.

Mortet Bourgogne Passetoutgrain  is mae from 60% Gamay and 40% Pinot Noir

Aged 11 months in Neutral French oak barrels.

Malolactic fermentation in barrel.
Slight filtration before bottling.

Bourgogne Passetoutgrains is an Appellation d'origine contrôlée (AOC) for wine from the region of Burgundy.
Most Bourgogne Passetoutgrains is red, although rosé wine may also be produced. Unlike other Burgundy wines, which are
primarily produced from a single grape variety, Bourgogne Passetoutgrains is essentially a cuvée of Gamay and Pinot noir.

This is a quintessential bistro wine. Fresh and fruity, displaying red and black fruit flavors. Well balanced, good structure and silky finish with excellent length. Serve slightly chilled.

Oeufs en Meurette (poached eggs served in a red wine sauce with onions and lardons).
Boeuf Bourguignon (beef cooked in red wine with carrots and patatoes).

Thorn Clarke Milton Park Chardonnay grapes were crushed, destemmed and then pressed using a membrane press. Pressings were not used. Fermented using French Yeast at 12-15 degrees Celcius. The ferment was kept slow and cool to retain all the natural flavors of the grape. The wine was then racked and filtered. Bottling took place soon afterwards so the wine was a true expression of the grape and the terroir from which it was made.

The color is a rich vibrant green. The nose shows lifted clean, sweet fruit of apricot and peach. The palate is medium to full bodied and exhibits predominantly peach and nectarine flavors, with cloves and cardamom evident from the use of a small amount of French oak. The wine finishes full and long with a nice balance of sweet fruit and creaminess.

This Thorn Clarke Mt. Crawford Riesling is a fine example of Mount Crawford climate, soil and aspect combining to display a varietal bouquet of spicy floral characters. With fresh, crisp citrus notes and a long finish on the palate, this wine can be enjoyed with a vast array of foods. The winemaker recommends enjoying this with spicy tandoori chicken.

Tres Ojos Rosado Calatayud is fresh, crisp and juicy Rose made of 50% Garnacha and 50% Tempranillo displaying beautiful strawberry and raspberry fruits. Enjoy with salads, chicken or simply with a glass. Serve chilled.

True to its variety, this wine has delicate floral notes and aromas of peach, honeysuckle, and tropical fruits. Barrel aging creates a palate that is round, elegant, and complex, giving the wine additional hints of vanilla and toast. Enjoy with roasted chicken, Asian dishes, poached seafood, and crabcakes.
