Pure perfection in Cabernet, the 2019 Cabernet Sauvignon Alejandro Bulgheroni is all varietal and comes two-thirds from Oakville with the balance from sites in St. Helena and Rutherford. Aged 20 months in 70% new French oak and put together by Philippe Melka and Michel Rolland, it has an incredibly pure, full-bodied, massive yet weightless style that I suspect couldn’t be achieved anywhere outside of Napa Valley. Cassis, blackberries, leafy herbs, lead pencil shavings, and tobacco leaf are just some of the nuances here, and it’s full-bodied, deep, and concentrated on the palate while maintaining an ethereal, seamless, utterly perfect balance between its fruit, alcohol, tannins, and acidity. As good as it gets, it needs just 2-4 years in the cellar and will evolve gracefully for at least 20-25 years.

Alejandro Bulgheroni Lithology Beckstoffer Dr. Crane Vineyard Cabernet Sauvignon  99% Cabernet Sauvignon, 1% Cabernet Franc.

Here the Cabernet comes to us typically flawless, and the wines are as such. There is blue fruit, blueberries, black plums, blackberries, and cassis to the aromas, as well as stones, mineral, chocolate, fresh tobacco, and subtle herbs. It is incredibly full-bodied, but at the same time effortlessly drinkable, with ultra-smooth tannins and a positive, long, upturned finish. 70-75% new French oak is the norm for us with Dr. Crane, and those flavors are absorbed to become a vanillin complexity, sweetness, and length. An unbelievable wine.

You don’t see many Cabernet Franc-dominated wines from this site, but the 2019 Cabernet Franc Lithology Beckstoffer Dr. Crane Vineyard is certainly impressive. Offering more herbal, chocolate, gravelly earth, and espresso aromas and flavors, it has full-bodied richness and, as expected, is a powerful, opulent expression of this noble variety. The blend is 83% Cabernet Franc and 17% Cabernet Sauvignon, aged 20 months in 80% new French oak. It will benefit from short-term bottle age and drink nicely for 20 years.

The story of this wine - The Sestina is an ancient form of poetry from Medieval France. Just as a modern poet can fill this form with new expressions, Avennia uses the traditional Bordeaux blend to express Washington. Sestina is their vision for an old vine, complex blend where all of the components complement each other. This wine is designed for the cellar, so the emphasis is on structure, balance, and complexity.

The balance of opulence and ‘energy here makes for an absolutely compelling Cabernet. Dark cherry, plum, tobacco, dried flowers, menthol and gravel lend quite a bit of complexity throughout. DAOU Vineyards Reserve Cabernet Sauvignon is made from  77% Cabernet Sauvignon, 23% Petit Verdot.

The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Faust Cabernet Sauvignon—a blend of our Coombsville vineyard fruit with lots from other cool sites in the valley—sets the bar for elegant balance in Napa Valley Cabernet Sauvignon. In 2021, cooler-thanaverage temperatures produced that balance naturally, with flavors and tannins reaching maturity against a backdrop of ideal acidity levels. The wine is deliciously versatile, with generously ripe fruit that makes it an appealing sip on its own, but also enough lively acidity to make it an ideal partner for a range of foods.

The winter of 2021 brought little rain and deepening drought conditions in Napa Valley, setting up a vintage of low yields and small, concentrated berries. At the same time, temperatures from spring through the growing season ran slightly cooler than normal, lengthening the ripening period after veraison. Sugar levels rose very gradually while acidity levels remained high and bright. As a result, the fruit came in with notable flavor intensity, supple and mature tannins, natural complexity—balanced between ripeness and vibrant freshness

The Cabernet Sauvignon Casey’s Lakeview is similarly inky bluish/purple to the rim. Tasting like blood, this wine is dense and rich with lots of chocolate, espresso, earth and spice. It is deep, full-bodied, and again, a masculine style of wine that needs at least 4-5 years of cellaring and should keep for 25 or more years.

Lakeview Vineyard is the winery’s mid-block vineyard planted to a combination of clone 6 & 337 Cabernet Sauvignon on 101-14 rootstock. Excellent drainage from the rocky and chalky soils plus plenty of sunlight throughout the day produces wines of bold character with mouth filling flavors.

Organic farming methods are used to produce this Cabernet Sauvignon Casey's Lakeview vineyard. Vines are 17 years old. Ageing in French oak barrels (85% new) for 20 months, then 12 months in bottle prior to release. Non-filtered.

J. Lohr Signature Cabernet Sauvignon was first produced to honor the 80th birthday of founder Jerry Lohr. This limited release was specially selected and blended from the exceptional 2016 vintage in Paso Robles. It is both a tribute to Jerry's pioneering efforts in the region and our red wine portfolio's ultimate expression of Cabernet Sauvignon. VINEYARDS & CELLAR Beck Vineyard, in the Creston District of Paso Robles, is a unique, high elevation site that sits at 1,700 feet above the early morning fog line. Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Petit Verdot and Malbec add structure, color, and a component of bright fruit. The hand-harvested grapes were held separate at harvest and berry-sorted into six-ton open top tanks for fermentation. Maceration took place on the skins for five days, before early pressing to achieve ideal tannin extraction. Aged 19 months in 100% new French oak from coopers Nadalie and Sylvain.

Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. Deep garnet-purple in color, the 2018 Cabernet Sauvignon Snake Oil needs a little swirling to reveal emerging notes of freshly crushed blackcurrants, blackberry pie and mulberries plus suggestions of tilled soil, cedar chest and Indian spices with a touch of roses. The full-bodied palate completely coats the mouth with opulent black fruit preserves and exotic spice layers, supported by velvety tannins and lovely freshness, finishing long and perfumed.

The 2018 Priest Ranch Snake Oil is all Cabernet Sauvignon, from a trio of hillside vineyards on the Somerston Estate. It has beautiful blueberry and plum fruits as well as notes of sappy herbs, violets, and bouquet garni. More medium-bodied, focused, and elegant, it shines for its purity, freshness, and length. It’s a classic 2018 that will have 15+ years of longevity.

Our 2018 Snake Oil was handpicked, sorted, and fermented naturally, then aged for 24 months in 75% new French oak barrels and 25% once-used French oak barrels.

HARVEST NOTES 

The early half of 2018 brought us moderate temperature allowing for a long growing season.   We had a majority of our rainfall in February followed by a mild Spring.  Then summer brought consistent temperatures with little heat spikes.  This weather allowed for longer hang time and for the fruit to ripen at a slower rate.  The 2018 harvest at our estate began in late August and resulted in exceptional quality.
