Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.

The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.

Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. Maison du Midi Cotes-du-Rhone Rouge Vielles Vignes is 80% Grenache, 10% Syrah and 10% Mourvedre.

This ruby red colored wine with purple glints develops red fruits aromas and spicy overtones. In the mouth, this wine is smooth and its supple structure emphasizes aromas. Fruitforward and easy drinking wine showing light spices and silky tannins. A perfect everyday wine.

This delicious juicy wine can be enjoyed now with steak frites, any Mediterranean dishes, pizzas, grilled chicken and cheese.

The inviting nose offers up scents of Santa Rosa red plums, cassis, dried sweet figs and pomegranate backed by sandalwood and hints of tea rose. Bright and exciting on the palate, the entry begins with firm tannins and complex layers of red raspberries, bergamot tea, dried herbs and rose petal notes. Refreshing acidity carries the wine throughout the finish.

To match with the juicy acidity and bright nature of this wine, we offer up a vegan recipe for Spicy Quinoa with Asparagus and Shiitake Mushrooms. The shiitakes are a classic pairing with Pinot Noir, but when combined with the spicy ginger, garlic and crushed red pepper, all melds beautifully into a dish that pairs seamlessly with the 2020 Sonoma Coast Pinot Noir.

The 2020 Pinot Noir Sonoma Coast is ripe with raspberry candy, crushed rose petal, and turned earth. The tannins in the 2020 are a touch more present and emerge on the finish, and it also has more warmth. Drink this over the next 10 years.

Paradigm Merlot  is made from 98% Merlot - 2% Cabernet Sauvignon.

Deep ruby color with aromas of black cherry and plum, a hint of cedar and soft touch of toasty French oak. Seamless and silky across the palate with a nice mouthcoating texture and nicely balanced acidity for many food pairings. Flavors are similar to the aromas, dark plums and cherries, pomegranate, spice and complimentary sweet vanilla toasty oak. Flavors linger making you want another sip.

Rinaldi Joyful NV is made from 85 % Barbera, 10 % Cortese and 5 % Moscato

Straw yellow color, fruity with hints of apple and mint.

Joyful is a modern sparkling wine made using the method charmat process with the secondary fermentation made in a stainless steel tank.

Zone of production: Ricaldone’s territory on the hills called "Bricco Rioglio" and "Valmorana" and Celle.
Average altitude: 280 m above sea level, calcareous soil with tufa layers.
Training system: guyot with a cultivation density of about 3500 vines per hectare.
Vinification: manual harvest into crates, usually in September. Soft pressing. Settling in steel vats to have a natural clearing of musts. Further temperature and pressure controlled fermentation.

Joyful is great as an aperitif but also pairs very well with seafood.

Rinaldi Red Dream is made from 100% Malvasia

this wine is obtained with  a cold maceration (13° C) for 48 hours. We work in this way just to extract the color and the wine scent from the peels.
Then we soft press the grapes and we separate the solid part from the liquid part and we have the juice.
Then we keep the wine at 0 degree Celcius (32 degrees Fahrenheit) temperature and we have a natural cleaning of the must.
When we decide to bottle it the temperature increased at about 17 degrees Celcius, and when we reach 5.5% Alcohol by Volume and the desired atmospheric pressure is obtained, about  2 atmospheres, we block the fermentation with the cold and we filter it again and
finally, we put it in bottle.
The wine is ruby red but not too deep, fruity and pleasant. It's a dessert wine, it is possible to appreciate it at his best if you serve it chilled.

This frothy and fruity red wine delivers flavors of honeysuckle and black pepper. Light, fun and exciting; it’s great for parties and light fare. 100 % Malvasia Nera.

"The non-vintage Rinaldi Red Dream, which comes from 100% Malvasia Nera, has about 7% alcohol, so it is slightly more potent than its two siblings. Gorgeously fresh and frothy, with loads of cherry, honeysuckle, spice box and spring flowers, this is an exciting party wine that is brilliantly packaged, and I doubt a person can be found who would dislike it. Rudi Pichler is among the elite growers of the Wachau producing wines of precision, power, and longevity. Grüner Veltliner and Riesling make up 95% of the production with the remaining 5% shared between Weißburgunder and Roter Veltliner. Rudi Pichler belongs to the prestigious Vinea Wachau and vinifies under the strict parameters of their codex.

Yields are kept low between 30 and 35 hectoliters per hectare with botrytis carefully removed by hand.  Grapes are crushed by foot and receive between three and 36 hours of maceration on the skins. Vinification is entirely in stainless-steel tanks and malolactic fermentation is avoided.

I love the deep and delicate, peachy nose of this extremely attractive Wachau dry riesling. Wonderful fresh fruit with a touch of mint and lemon balm on the ripe but rather sleek and very precise palate. The power and concentration show themselves first at the stunningly long and pristine finish.

Schwarz Meta Mataro is made from  100% Mataro (a.k.a. Mourvedre).

Meta: An abstraction from a well-known concept. Fruit sourced from Bethany and Marananga.

Dark, spicy and built for max expression. Built over a foundation of blackberry and red plums this is a punch, expressive Mataro of spice rubbed meat, tea smoke and beef jerky. All dark, brooding and masculine in its fragrance, the palate is expansive with punchy tannin and sweet cinnamon spice.

Coming from 2 different vineyards. Average age of the vines is 90 years old for the first parcel and 70 years old for the second parcel. Hand-picked, wild yeast, 72% whole bunch.
Minimal use of Oak, the majority is aged in tank in order to avoid oxydation.

Pairs with pizza, pasta, burger, charcuterie and mild cheese.

Schwarz Nitschke Block Shiraz is made from 100 percent Shiraz.

This Bethany vineyard was planted by Jason Schwarz's parents in 1968 and has been tended to by the hands of his family ever since. The vines are dry-grown and produce small crops of intensely flavored fruit.

A display of the purest blood-plum and black cherry, with cracked black peppercorn and streaky bacon over some seriously fine oak. Some subtle herbaceous qualities, nettle and thyme bring life to an otherwise immense nose. Very juicy on the palate, deeply flavorsome, long and with mouth-coating tannin for a very textured, very focused Barossa classic.

Slow cooked beef ribs, grilled meats, wild game and grilled vegetables.

The full spectrum of Barossa Shiraz's aromatic capability is here on show: from scorched earth, bitter couverture chocolate just-dried raisin, sweet red licorice and cola bean, all heady, defined and un-wound for all to see. Here. The fine line between luxurious fruit and energy is walked gracefully, it's warming and full-blooded nature tethered by lifted acidity.

Pair with marbled steak or rich beef stews, roast beef, grilled bbq meats.

Schwarz The Schiller Shiraz is made from 100 percent Shiraz.

The Schiller Shiraz is a wine rich in both flavor and history. The 400 Shiraz vines planted by Carl August Otto Schiller in 1881 are something to be treasured. Earmarked for bulldozers in 2006, a last minute reprieve would see these Ancestor vines remain in the ground. The grapes are hand-picked from the sixth generation Schiller family vineyard at Hallett Valley in the Barossa. Jason first made this wine in 2008, and since then it has been his flagship wine.

Thiele Road is a dusty track that crosses Bethany Creek at the foot of the Barossa Ranges. It is home to Jason Schwarz's family's 70 year old, deep rooted Grenache vines that produce wines with complex flavours and plenty of character.

Bouquet: The nose is floral and expressive with raspberry and pepper.
Palate: Red fruits, spice and earth with beautiful balance and structure. Medium weighted with fine acidity. A wine built on complexity and packed with interest.

Planted in 1941. The gnarled, old vines continue to produce fantastic fruit and the quality out of the 2014 vintage was evident. The vines are handpicked, 10% whole bunch and the remainder de-stemmed and into an open fermenter. Before too long the wild yeast population on the grapes kicks off fermentation and that continues with daily gentle pump overs and hand plunging until fermentation is complete and the flavour profile is just right. The wine is then basket pressed and matured in seasoned French oak for 18 months before bottling. Not filtered or fined.

Bright and pretty, red fruits, baked ricotta with thyme and honey, spice. It’s finely wrought and fresh, light emery tannin, raspberry and sweet strawberry, spice, blood orange and aromatic herbs playing out on a long finish. Oh, and it’s light to medium-bodied at most. "This is an intriguing, full-weighted wine of compelling dry extract and savory, forceful length. Far from the archetype, or at least what I had construed that to be in these parts. Smoky and ferruginous, with aromas of Islay peat from a wild ferment and old vine je ne sais quoi. A darker brood, lathered with clove, anise, brush smoke and iodine, over the usual red fruited paradigm. The finish, biltong meaty and a tad drying. That said, this may well be reduction as the wine opens beautifully with time, boasting oodles of personality. Drink or hold. - Ned Goodwin MW"
