Lismore Pinot Noir is made from 100 percent Pinot Noir

The grapes were picked at optimal ripeness. 30% whole bunch fermented in large 5000 liter vats with gentle pump-overs twice a day. The process allowed for a long extraction period which lends to the fruit expression and structure of this wine. The free run wine was drained off and the fermented grapes were then pressed in a traditional wooden basket press. The wine was racked into 225, 300 and 500 liter barrels where malolactic fermentation took place and the wine was aged for 10 months. 35% new French oak was used.

"The 2018 Pinot Noir comes from Walker Bay and Kaaimansgat and includes 30% whole-bunch fruit, aged for 11 months in 25% new oak. The bouquet sports vivid red cherry and raspberry fruit that is exceptionally well defined and beautifully integrated with the oak. The palate is medium-bodied with supple tannins, well-judged acidity and a slightly fleshy texture. There is just the right amount of salinity here, and the finish is kept on a tight leash, allowing the detail and precision to be fully expressed. "Walker Bay and Elandskloof are the twin sources of 30% whole bunch-fermented Pinot from Sam O'Keefe. Juicy, floral and charming, it's a graceful, fruit forward style with some clove and tobacco spice and refreshing acidity. Long Shadows Saggi Red is made with 58% Sangiovese, 30% Cabernet Sauvignon 12% Syrah. Among Tuscany's oldest and most prestigious wine families, Ambrogio and Giovanni Folonari teamed with Allen Shoup to produce a wine that showcases Washington State's terroir with plenty of Italian character. Saggi (meaning "wisdom") is a stunning blend of two outstanding Washington Sangiovese vineyards. Candy Mountain Sangiovese gives the wine its dark fruit flavors and appealing notes of anise. Dick Boushey's Yakima Valley Sangiovese, planted in 1992, adds vibrancy and liveliness. Because Cabernet Sauvignon has the potential to overtake Sangiovese, the Folonaris work closely with Sagemoor Vineyards to carefully select blocks of Cabernet they know from experience deliver elegant character and refined tannins. Syrah, also from Sagemoor, adds to the wine's dark color and rich mid-palate.

The 2018 Red Wine Saggi is mostly Candy Mountain Sangiovese (58%) with Cabernet Sauvignon (30%) and Syrah (12%). Gilles Nicault has created a sensational, one-of-a-kind blend here. The wine explodes out of the glass with potpourri and anise tones alongside a beautiful core of red and dark fruits. The palate offers tobacco, milk chocolate and boysenberry flavors, serious depth and concentration, insanely good range and an opulent sense of texture. Complex and delicious with firm tannins and a touch of hedonism, this sensational and novel blend will provide drinking enjoyment for another 15 years to come.

Loring Cooper Jaxon Pinot Noir is made from 100% Pinot Noir

Aged 10 Months in French Oak (15% New)

A special blend in honor of Cooper Jaxon Loring - the next generation of Loring. We don't limit the wine to any
specific AVA, but rather look for a blend that is big, bold, and super tasty!

Juicy and vibrant, with aromas of raspberry puree, blackberry and spring flowers.

Vines are planted on Arroyo Seco Sandy Loam soils on the following vineyard sites: Rancho La Viña, Kessler-Haak, Clos Pepe, John Sebastiano, Aubaine, Rosella's and Sierra Mar.
Vinification is traditionnal with minimal intervention.
Wine went thought Malo-Lactic fermentation and was bottled without filtration.

Pairs well with steak and lamb, spicy foods & mild cheeses.

“Puteus” is a Salice Salentino DOP reserve, made of 80% of Negroamaro and 20% Malvasia Nera, as the disciplinary code requires. In the last stage of fermentation the wine is stored in stainless steel tanks for the first year, then aged in oak barrels. It has a deep red color with hints of violet.

Deep red color with hints of violet, balanced tannin, strong spicy bouquet, with notes of cocoa and coffee, fruity (cherry).

The best wine pairing is with meat dishes, roast meat with a juicy frosting, seasoned cheese and salami, and it sparks with spicy dishes!

Mordoree Tavel Rose Plume de Peintre is made from 60% Grenache, 20% Syrah, 20% Clairette.

Deep rosé color. Complex and intense aromas of red fruits. The palate is elegant and offers a great balanced acidity. The wine has a long lasting finish.  

Risotto with crayfish and asparagus, duck breast roasted with honey, poultry with morels.

The ultra-premium, tiny-production 2023 Domaine De La Mordoree Tavel La Plume Du Peintre is based on 50% Grenache, 20% Syrah, and the balance equal parts Clairette and Cinsault, all of which was brought up in barrel. It pushes the boundaries of what rosé is and can be, getting closer to a light red than a traditional rosé, which may be where Tavel fits best anyway. It shows a translucent ruby hue and offers complex yet still reserved aromatics of red cherries, sappy garrigue, spicy nuances, and a touch of background oak that’s beautifully integrated. This carries to a medium-bodied, almost medium to full-bodied rosé with a pure, layered, elegant mouthfeel, integrated acidity, and flawless overall balance. Despite being raised entirely in wood, this is one of those rare high-end rosés that brings greater richness, depth, and complexity while still staying light in feel, balanced, clean, and crisp. It’s geared for gastronomy and is an incredibly classy rosé that should have another year or two of prime drinking.

Napa Cellars Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

Napa Cellars Cabernet Sauvignon brims with ripe, concentrated aromas of black currant, loganberry and fig, underscored by threads of warm spice and mocha.

Paradigm Merlot  is made from 98% Merlot - 2% Cabernet Sauvignon.

Deep ruby color with aromas of black cherry and plum, a hint of cedar and soft touch of toasty French oak. Seamless and silky across the palate with a nice mouthcoating texture and nicely balanced acidity for many food pairings. Flavors are similar to the aromas, dark plums and cherries, pomegranate, spice and complimentary sweet vanilla toasty oak. Flavors linger making you want another sip.

Pernot Belicard Aligoté is produced from old vines planted in 1956 and 1971 by Philippe Pernot's grand father. 

Wine is very aromatic, with some tropical notes with a hint of white flowers and white peach. The wine is also quite mineral, due to the Aligote grapes grown on limestone soils in the commune of Puligny Montrachet. Finish is long and balanced. 

Oysters, St Jacques Cassolette, Roasted Gambas, Comté Cheese.

Its rosy appearance is delicate in color and an expressive nose lends charm to this blend. A palate dominated by wild berries: gooseberry and raspberry that reveal themselves in a crisp, silky mouthfeel enhanced with a touch of minerality.

Produced with Nebbiolo grapes from one of the highest plots in the area, at over 500 meters above sea level.

This is an elegant Nebbiolo - fresh and fruity with simple tannins (thanks to the white calcareous soil) and good minerality.

No oak. Aged on the lees for 4 months in Stainless Steel Tan

Pierin Valetta is one of the ancestor of the Family and these wines are dedicated to him as we would like to thank him for giving us vineyards that reach up to 70 years old.

Made from 20 years old vines planted on Limestone soils. 
No Oak. The wine was aged on the lees for 4 months in Stainless Steel Tanks. 
Wine was slightly filtered before bottling.

Praia Aveleda Vinho Verde NV is made from 40% Loureiro, 20% Trajadura, 20% Arinto, 20% Azal.

Praia, which means "beach" in Portuguese, is a smooth and fresh wine with delicate and lovely fruity flavors. Slightly spritzy, it is well balanced and very refreshing.

The region is typical for its unique wines that are fresh and light, combined with a very well balanced acidity. These characteristics result from the region's unique soil and climate, with a strong Atlantic influence that you will identify when you taste it.

The wine is ideal as an aperitif or throughout a meal, especially with fish, seafood, white meat and salads. Due to it freshness, it is particularly pleasant in a relaxed and informal ambiance.

Proidl Gruner Veltliner Ried Hausberg Kremstal DAC is made from 100 percent Gruner Veltliner. 

Medium yellow green colour with silver reflections. Ripe tropical fruits, a bit of candied clementines, a bit of apricot, dark minerality, inviting bouquet. Juicy, elegant, fine acidity, mineral and salty, a touch of yellow apples, lingers long, versatile.

The 2021 Quilceda Creek Cabernet Sauvignon is a wine for the ages. Potent aromas jump out of the glass, showing framboise candy, black tea, and a strong classic note of sandalwood. Quinta do Vesuvio, Vintage Port 1991 has been pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse. 

For many wine lovers or consumers, wine tasting is the preserve of professionals or real connoisseurs. People still have this image of it being a complex, technical, precise and highly-formalised process. In fact, wine tasting isn’t and shouldn’t be just that. No, it should be straightforward, convivial, interesting and fun. Tasting a wine should provoke curiosity, excitement, pleasure and dreams…

When you taste a Château du Retout wine, you use all five of your senses: the sense of touch when you pick up the bottle to gauge its temperature, the sense of hearing which allows you to enjoy the sound of he popping of the cork and the wine being poured into the glass, and then, of course, you use your senses of sight, smell and taste when you drink the wine: 

The Médoc grape varieties and soils give us wines with superb, dense, dark hues, ranging from deep garnet to ruby-crimson, taking on brick red shades with orange tints with age.

Very intense and expressive aromas with powerful notes of black fruit such as blackcurrants and blackberries. In older wines, the nose develops a spicy bouquet of liquorice, leather and marshmallow mingled with the vanilla scents created by well-integrated oak.
Harmonious, elegant and velvety, with smooth, round tannins, that can be appreciated from the wine's entry to the palate through to the finish. These are delightfully full-bodied wines with great aromatic persistence.
