As Hightower Cellars' signature wine, Cabernet Sauvignon is a classic Red Mountain wine – bold and full of the flavors that make this region so special. As much as possible, Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.

Aromas of tart blueberry and lush red cherry dominate the nose, while firm tannins and full body lend structure to this inky, pigmented wine. The palate features notes of dark fruit, fresh cut wood, and dried tobacco. This wine is an excellent candidate for decanting, as the aromas evolve wonderfully over time to express softer, lush fruit and hints of herbs and spices.

So much pine needle, flowers, currants and ripe plums on the nose. Medium-bodied with fine and polished tannins. Linear and very tight with a clarity and energy. Vivid is the word. From biodynamically grown grapes with Demeter certification. Drink or hold.

J Lohr Signature Paso Robles Cabernet Sauvignon is made from 80% Cabernet Sauvignon 6% Cabernet Franc 6% Saint Macaire 4% Petit Verdot 4% Malbec.

J. Lohr Signature Cabernet Sauvignon was first produced to honor the 80th birthday of founder Jerry Lohr. This limited release was specially selected and blended from the exceptional 2016 vintage in Paso Robles. It is both a tribute to Jerry's pioneering efforts in the region and our red wine portfolio's ultimate expression of Cabernet Sauvignon. VINEYARDS & CELLAR Beck Vineyard, in the Creston District of Paso Robles, is a unique, high elevation site that sits at 1,700 feet above the early morning fog line. Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Petit Verdot and Malbec add structure, color, and a component of bright fruit. The hand-harvested grapes were held separate at harvest and berry-sorted into six-ton open top tanks for fermentation. Maceration took place on the skins for five days, before early pressing to achieve ideal tannin extraction. Aged 19 months in 100% new French oak from coopers Nadalie and Sylvain.

The nose on this luxury-level bottling is pure and refreshing, offering aromas of black cherry, loamy soil, dried mint and caramel-laced coffee. The palate is framed by upright tannins, yet is soft enough to enjoy now, showing deep flavors of black currant, dried herb, milk chocolate and toffee. Drink 2020–2040.

J. Lohr Cuvee St. E  is made from  80% Cabernet Franc, 20% Cabernet Sauvignon

The 2016 J. Lohr Cuvée St. E captures the ripe but savory side of the Bordeaux varieties. This wine is dark in color with a bright garnet hue. Aromas of red currant, coffee bean and dark chocolate lead to a palate of ripe plum and cassis. Tightly wound tannins are typical in Cabernet Franc and present the greatest reward after a few years of bottle age.

A perfect pairing for filet mignon with a shallot cream sauce or Osso Bucco (braised veal shanks) over a bed of polenta.

Review:

Strong aromas of black cherry, toasted oak, caramel, vanilla, charred coffee bean and milk chocolate make for a heavy nose in this blend. Blackberry and dry elderberry flavors are framed by firm tannins and asphalt on the palate.

Keermont Amphitheatre Red is made from 32% Cabernet Sauvignon, 23% Cabernet Franc, 22% Merlot, 17% Petit Verdot, 5% Malbec and 1% Syrah.

Starting with the 2015 vintage, this new cuvée replaces the Keermont Estate Reserve. It is now the winery's flagship red blend. With this blend they aim to bring to life the nuances of both the terroir at Keermont Vineyards and the particularity of each vintage. Venetian red in color, this wine exudes complex aromas of dusty, ripe strawberry complimented by hints of baked pudding, vanilla, and sweet citrus blossom.

"The maiden 2015 Amphitheatre has an intense bouquet of dark cherries, star anise, camphor and wild heather scents, all well defined and expressive. The palate is medium-bodied with supple tannins and fleshy ripe red fruit laced with white pepper and sage, fanning out wonderfully toward the finish. Long Shadows Pedestal Merlot is made from 82% merlot, 15% cabernet sauvignon and 3% petit verdot.

Michel Rolland, Pomerol vintner and consultant to many of the world's top wineries, teamed with Washington State wine visionary Allen Shoup to produce this limited release wine.

With its intense color and inviting aromas of dark berries, licorice, baking spice and a hint of smoke, the Pedestal is a bold wine that leaves a lasting impression. Dark fruit flavors integrated with sweetness from the barrel and richness from the tannins come together seamlessly, lingering across a structured mid-palate and lengthy finish.

Winemaking: Hand-harvested grapes were double-sorted to remove green material that might impart harsh tannins, then most of the lots were cold soaked to build richness and flavor before undergoing whole-berry fermentation in 55L upright French wood tanks. This, combined with gentle pump-overs throughout fermentation, enhanced the wine’s color, texture and mouthfeel. The finished wine was aged 22 months in 85% new French oak barrels.

The nose opens with a firm backbone of fresh and ripe black plums and dark cherries before delightful oaky essences sway from the glass with notions of baked earth. Full-bodied, the palate offers a firm mouthfeel that lifts with time to reveal a succulent tannic edge and juicy flavors of spiced plums and blackberry skin with brown baking spices, vanilla and nutmeg that resonate with vibrancy and power. The wine continues to evolve and reveal elegant complexities before ending with a long spicy finish with delightful oak tones. Linear and precise, the 2016 M by Michael Mondavi opens with expressive aromas of quince, plum, juniper, cassis, blackberry & dark roasted coffee beans. With time and swirls of air, notes of dried rose petals, coriander, cinnamon and clove develop. This wine enters the palate with subtle tannins at first, and soon broadens into a silky expanse of vanilla bean, cocoa, roasted dates, black cherry, and orange blossom tea. The evolution of flavors continues with candied figs, bramble-berry, and cocoa covered strawberries. The 2016 Cabernet Sauvignon Coeur de Vallée comes all from Beckstoffer’s portion of the To Kalon Vineyard and it’s a thrill a minute, offering awesome notes of blue fruits, chocolate, incense, candied violets, and high-class cigar tobacco. As seamless and elegant as they come, yet also opulent and sexy, this remarkable Cabernet Sauvignon could come from nowhere else in the world. Drink it over the coming 2-3 decades.

This is the last vintage when this wine will come exclusively from Beckstoffer’s To Kalon vineyard. In the future it will come (more and more) from Morlet’s own new vineyard in Oakville—just across from To Kalon. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. Full-bodied and laden with densely packed, muscular fruit, it has a rock-solid frame of ripe, grainy tannins and seamless freshness, finishing very long with those To Kalon spices lingering with fantastic persistence. 250 cases produced, to be released in the fall of 2019.

Lots of cassis and black raspberry fruits as well as classic Mount Veeder notes of lavender, violets, bouquet garni, and rocky, mineral-like notes emerge from the 2018 Cabernet Sauvignon. A deep, full-bodied mountain Cabernet Sauvignon, it has a plush, layered texture, beautiful tannins, a deep, concentrated mid-palate, and a great finish. Another head-turning wine from this label, it’s a candidate for the best Napa Valley Cabernet Sauvignon out there at the price point.

The 2018 Cabernet Sauvignon from Mt. Brave is fabulous. Inky, rich and explosive, the 2018 possesses tremendous depth and tons of personality. Graphite, blue/purplish fruit, blackberry jam, bittersweet chocolate, sage, lavender, menthol give the 2018 tons of character to match its explosive feel. The brooding, backward wine is going to need quite a bit of time to unwind, but boy is it gorgeous.

  The 2021 My Favorite Neighbor Cabernet Sauvignon fills the glass with a seamless culmination of black cherry, cassis and warm spice. On the palate, you are rewarded with a full body displaying blackberry and plum with underlying notes of tobacco. An additional layer of red fruit and a pop of acid, combined with well- integrated tannins and a beautifully crafted structure, leave nothing to be desired. This is a serious wine that can be enjoyed and respected by all.

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

This wine is deeply pigmented with ruby/garnet color. First sniff is Oakville Cabernet all the way. Nice layers of ripe berry and cherrylike fruit with a matching complement of toasty French Oak from an assortment of Coopers and different barrel ages. Gorgeous across the palate with a silky yet dense mouthcoating impression. Ripeness is key and the result is a wine with perfect balance and flow - just plain delicious. It’s a big, beautiful wine now but has tremendous aging potential. — Heidi Barrett

The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length.
