A slope (un talud) leading up to a mountain where centuries of rock falls have left the soil beneath full of large angular rocks, and therefore useless for most agriculture. Deposited hugger-mugger amongst the clay and sand however, they offer perfect drainage and allow vines to grow, forcing their roots ever downwards in search of water, picking up minerals along the way. If you wanted to explain to someone what Cabernet Sauvignon tasted like, you could do a lot worse than showing them this beautiful expression of the variety which demonstrates great purity, concentration and elegance.

Talud is from the oldest cabernet sauvignon vineyards on Tabalí’s estate in the coastal Maipo zone, 50 kilometers from the Pacific, planted in 1999. The soils are colluvial, which often deliver firm, pointed tannins, and those are present here, but they’re very nicely accompanied by juicy red fruit and bright acidity that allows this wine to put its fresh, vibrant facet in the foreground. Take note, however, there are deep, dense flavors here. It’s still a very young cabernet, so make room in the cellar.

Coming from the Winfield Vineyard in Calistoga, the 2016 Cabernet Sauvignon is another brilliant wine from the hands of winemaker Thomas Rivers Brown. This deep purple-colored effort boasts tons of blueberry and jammy blackberry fruits as well a medium to full-bodied, concentrated, yet elegant style on the palate. It has the purity of fruit that’s the hallmark of the vintage, ripe, sweet tannins, and no hard edges, and is already hard to resist.

The 2021 Titus Family Estate Reserve embodies the depth, concentration, and beauty of our Ehlers Lane vineyard with grace and elegance. A core of Blueberry, black currant, mulberry and warm coffee are rounded out with hints of lilac and maduro wrapped cigar. Inkiness in the glass gives the wine depth and length with rich finely knit tannins melting to chocolate pot de crème intensity. Lastly, the 2021 Cabernet Sauvignon Family Estate Reserve is based on 87% Cabernet Sauvignon, 9.5% Petit Verdot, and the rest Malbec. It's a touch more focused and linear compared to the Imperatus, but I love the purity and precision in its cr me de cassis, espresso, classy oak, and spicy, floral aromatics. Medium to full-bodied on the palate, with fine tannins and a seamless, layered mouthfeel, as well as ripe tannins, it's going to benefit from 2-3 years in the cellar and evolve for 15 years with ease.

Winemaking:  This wine is a classic Bordeaux blend of 78% Cabernet Sauvignon, 10% Malbec, 8% Merlot, 2% Cabernet Franc, 2% Petit Verdot.

.  The 2010 growing season was moderate, thus promoting slow ripening and full flavor development.  We hand-harvested and fermented each variety separately, then moved the wines to barrel, where they aged twelve months.  Once we determined our blend, we returned the wine to barrel for an additional twelve months, to 'marry' the varietals.  We used tight-grained French oak barrels (45% new) from coopers Taransaud, Vicard and Bossuet.

Winemaker Notes:

Complex, rich aromas foretell rich flavors of black currants, allspice and a hint of clove.  The wine is full bodied, with velvety texture, smooth tannins and an extensive finish.  Beautifully balanced, this Cabernet will age for ten more years.

Alcohol: 14.25 percent by volume

"Savory, dried red capsicum with cedar, cocoa powder and dried mushrooms on top of black cherries. Juicy and layered with some currants and savory earthy spices on the palate. The 2018 The Signature Cabernet Sauvignon Shiraz (the 48th vintage) is named for Nick Waterman (managing director and CEO of Yalumba 2015 - 2022). The 2018 vintage in South Australia (and specifically here, Barossa) was an excellent one: ripe/warm, even and long and produced wines with density, energy and gravitas. This is exactly that: plush and powerful. The fruit forms a perfect dovetail: the enveloping, mouth-filling abundance of the Shiraz, neatly wedged into the folds of the structuring and shapely Cabernet. Very impressive. This is one of the more impressive Signatures in recent times. It will cellar with grace and ease.

Since its first release in 1962, The Signature has been Yalumba's deep dive into the classic Australian blend from the Barossa and one that honors the people who have enhanced the traditions and culture of Yalumba. There is a resonance and depth to this release that I really like. Wonderfully pure and concentrated blackberry and plum fruits, layered with spice, dark chocolate, earth, cedar and oak nuance. Succulent and sinewy in the mouth, it flexes considerable muscle, yet remains purely fruited and approachable even at this stage of its evolution. Rich and balanced with fine, ripe tannin and plenty of energy for such depth of fruit. Lovely.

After 20 years of marketing Napa Valley and its wines, Karen Cakebread launched her own project in 2008 with two major goals in mind: to create beautifully structured wines that reflect the vineyards from which they come, and to be involved in every aspect of making the wines.Karen started ZIATA, named in honor of her mother, Mary Annunziata, in 2008 with three varietals: Cabernet Franc, Sauvignon Blanc and Pinot Noir, which she chose for their food-friendly qualities. She hired Anne Vawter, a protégée of Heidi Barrett, as winemaker and sourced grapes from sustainable sources, working closely with the grape growers through the growing season, knowing that efforts made in the vineyard would create better wine than those manipulated in the cellar. Alejandro Bulgheroni Lithology Beckstoffer Las Piedras Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

From a St. Helena vineyard planted by early Napa settler Edward Bale more than 150 years ago, and later serving as the estate vineyard for the area’s first winery built by Henry Pellet in 1860, the Las Piedras site always gives us our prettiest wine. When placed next to Dr. Crane and To-Kalon wines, the Las Piedras show a certain elegance, with a very graceful entry and finely detailed complexity. We produce it with at least 75% new French oak, so there is a floral, spicy, and vanilla accent to the intense red and black fruits, cassis, and black cherry liqueur. What distinguishes this bottling is the beautifully fine tannins, delicate texture, and stunning purity. (Less than 100 cases made.)

Avennia Cabernet Franc Champoux Vineyard is made from 100% Cabernet Franc.

This very limited bottling shows the compelling potential of Cabernet Franc from a top vineyard. Though it’s often used as a spice in Avennia's Bordeaux blends, this wine, from the legendary Champoux Vineyard, has its own unique character and complexity that convinced them to feature it alone.

"Exotic on the nose with Bing cherry syrup, red raspberries, black tea, sassafras, damp tobacco leaf, pencil shavings, and rubbed thyme. Avennia Sestina Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 17% Merlot, 6% Cabernet Franc.

The story of this wine - The Sestina is an ancient form of poetry from Medieval France. Just as a modern poet can fill this form with new expressions, Avennia uses the traditional Bordeaux blend to express Washington. Sestina is their vision for an old vine, complex blend where all of the components complement each other. This wine is designed for the cellar, so the emphasis is on structure, balance, and complexity.

Winemaker Tasting Notes - “Good deep ruby/garnet color, with aromas of black cherry, fresh black currant, dark mocha, cigar box, and graphite. The palate is lively and dense with mountain berries, mocha, vanilla honey, damp earth, and wildflowers. The finish shows a distinct chalky minerality and beautiful tension. The 2019 Heart of the Hill Cabernet Sauvignon is perhaps our most sophisticated bottling yet from this superlative site.   The color is an impenetrable purple/black with almost no rim variation.  The aromas are exotic and dusty: wild strawberries, black raspberries, dark chocolate, sandalwood, fennel and fresh violets explode in the glass.  On the palate, the wine is dynamic with incredible precision and finesse, managing vibrancy alongside terrific structure.  The tannins are fine and ripe, supporting deep flavors of currant, blueberries, black plum, fresh herbs and spice that broaden through a long, rich finish. Classy and age-worthy, this will continue to grow in the cellar over the next 15+ years.

  We know great wines are made in the vineyard. Vintage after vintage we work with our growers and vineyard managers on the best practices to yield the highest quality grapes we can for that given season. We share common goals, a work ethic, and meticulous attention to detail that increases our chances of success substantially. Whether it's pruning, thinning, changing the canopy, or varying the vine nutrition, we work side by side to get the best results.

  Harvest decisions are made by the ripeness of fruit, sensory analysis, and the weather. From year to year decisions are driven by both flavor and physical maturity. We are looking for the moment where the flavors and balance of the grape hit true phenolic ripeness. Our team did over 6,000 miles to and from the vineyards in Steve’s truck during harvest as we sampled 2-3 times per week to ensure our picking decisions were spot on. From bud break to the barrel and finally, to bottle our goal is to stay true to our ideologies. Exacting winemaking, cellar, and lab practices drive our goals of making the best wine we can.

  The art and science of winemaking is a continuous learning adventure. The true balance of winemaking is achieved when science and art collide creating a bottle of wine well worth drinking. That’s what excites us as a team. All of our flagship wines are made from only the best barrels that we painstaking select over several months. Once this is done, we begin the blending process, all double-blind, until months later we select each wine that we believe reflects the character and quality of the site and vintage.

"Simply stunning, the 2019 Cabernet Sauvignon, Heart of the Hill exudes focus and precision on the nose, with rich and chewy dark fruits and a clear line of oak through the center boosting the roundness and complexity. Dusty red and purple flower tones flutter out of the glass. Full-bodied, the palate shows a still tight and chewy core but should last a couple of decades. This wine lives at the intersection of complexity, finesse and precision. Blind Justice Beckstoffer To Kalon Vineyard Cabernet Sauvignon is made from 76% Cabernet Sauvignon and 24% Cabernet Franc.

The 2019 Cabernet Sauvignon Blind Justice Beckstoffer To Kalon Vineyard is creamy and super-expressive from start to finish. The balance of opulence and ‘energy here makes for an absolutely compelling Cabernet. Dark cherry, plum, tobacco, dried flowers, menthol and gravel lend quite a bit of complexity throughout. Impressive.

Enemigo El Enemigo Gran Enemigo is made from 100% Cabernet Franc. 

In the spectrum of people who pay attention to detail, winemakers are often incredibly detail-oriented.  This can sometimes spill over to become an internal battled, and, as Alejandro Vigil and Adrianna Catena state, "We are our own worst enemy." El Enemigo pays homage to this internal struggle.

The nose presents sweet aromas of black ripen fruits with hints of vanilla and chocolate, which appear after the oak ageing. The mouthfeel is sweet with structured, persistent tannins due to the natural acidity of this wine, leading into an excellent long finish.

The nose of the 2018 Gran Enemigo El Cepillo Single Vineyard, from a low-yielding and drier year, is full of curry, a note that was a constant across the three vintages I tasted together, but it tends to be stronger in low-yielding and dry years like this. It's also floral and comes through as aromatic and a little exotic, in a good way, with elegance, persistence and very pure flavors. It has fine-grained tannins, great acidity and balance. 7,200 bottles. All these single-vineyard bottlings mature in ancient 4,000-liter oak foudres for some 15 months.
