Hightower Cabernet Sauvignon Red Mountain is made from 94% Cabernet Sauvignon, 6% Petit Verdot.

As Hightower Cellars' signature wine, Cabernet Sauvignon is a classic Red Mountain wine – bold and full of the flavors that make this region so special. As much as possible, Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.

Aromas of tart blueberry and lush red cherry dominate the nose, while firm tannins and full body lend structure to this inky, pigmented wine. The palate features notes of dark fruit, fresh cut wood, and dried tobacco. This wine is an excellent candidate for decanting, as the aromas evolve wonderfully over time to express softer, lush fruit and hints of herbs and spices.

I Brand Cabernet Franc Bayly Ranch is made from 100% Cabernet Franc.

This 100% Cabernet Franc is produced from vineyards located in Tres Pinot Creek, (along San Andreas Fault Line), at only 800 foot elevation. A great locale for Cabernet Franc to exhibit Loire-like structure overlaid with the bright fruit befitting California sunshine.

J Lohr Signature Paso Robles Cabernet Sauvignon is made from 80% Cabernet Sauvignon 6% Cabernet Franc 6% Saint Macaire 4% Petit Verdot 4% Malbec.

J. Lohr Signature Cabernet Sauvignon was first produced to honor the 80th birthday of founder Jerry Lohr. This limited release was specially selected and blended from the exceptional 2016 vintage in Paso Robles. It is both a tribute to Jerry's pioneering efforts in the region and our red wine portfolio's ultimate expression of Cabernet Sauvignon. VINEYARDS & CELLAR Beck Vineyard, in the Creston District of Paso Robles, is a unique, high elevation site that sits at 1,700 feet above the early morning fog line. Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Petit Verdot and Malbec add structure, color, and a component of bright fruit. The hand-harvested grapes were held separate at harvest and berry-sorted into six-ton open top tanks for fermentation. Maceration took place on the skins for five days, before early pressing to achieve ideal tannin extraction. Aged 19 months in 100% new French oak from coopers Nadalie and Sylvain.

Jip Jip Rocks Shiraz-Cabernet is made from 55% Shiraz, 45% Cabernet Sauvignon

Deep purple. Boysenberry and mulberry aromas with a hint of cedar and pepper. Similar berry fruits show through on the opulent, textured palate with a lingering finish.

Fermentation took place over 10 – 12 days in a combination of open and static fermenters. The temperature was closely monitored to ensure the wine retains its natural fruit expression. New and older French and American oak was used for the maturation of selected wine parcels over a period of 13 months.  These parcels were put together from our family estate to best demonstrate the depth and character of our fruit, balanced by integrated oak.

It's gorgeously ripe and perfumed on the nose showing blackberry, sweet cherry, vanilla and hazelnut characters with a touch of pepper spice. The palate displays lovely weight and plump mouthfeel, leading to a lengthy supple finish. Brightly expressed and immediately appealing. At its best: now to 2027.

Joseph Phelps Vineyards Cabernet Sauvignon is made from  94% Cabernet Sauvignon, 3% Cabernet Franc, 2% Merlot, 1% Malbec.

A classic Napa Valley Cabernet Sauvignon with inviting violet, dark fruit, tobacco, subtle baking spice and earthy dried herb aromatics. The palate is filled with expressive black cherry, blackberry and dark plum, hints of spice box and sweet vanilla bean. A focused, concentrated wine with youthful energy and freshness nimbly balanced by supple tannin structure and finesse.

Review:

This wine is lovely in juicy red fruit, dried herb and hints of allspice, the tannin structure firm and giving. Offering refinement and structure, it shows nuances of black currant, cherry and toasted oak. This will do well in the cellar.

Keermont Amphitheatre Red is made from 32% Cabernet Sauvignon, 23% Cabernet Franc, 22% Merlot, 17% Petit Verdot, 5% Malbec and 1% Syrah.

Starting with the 2015 vintage, this new cuvée replaces the Keermont Estate Reserve. It is now the winery's flagship red blend. With this blend they aim to bring to life the nuances of both the terroir at Keermont Vineyards and the particularity of each vintage. Venetian red in color, this wine exudes complex aromas of dusty, ripe strawberry complimented by hints of baked pudding, vanilla, and sweet citrus blossom.

"The maiden 2015 Amphitheatre has an intense bouquet of dark cherries, star anise, camphor and wild heather scents, all well defined and expressive. The palate is medium-bodied with supple tannins and fleshy ripe red fruit laced with white pepper and sage, fanning out wonderfully toward the finish. Keermont Cabernet Sauvignon grows in Keermont's Cottage Lane Vineyard on the mid-slopes of the Helderberg. This vineyard is situated on the crest of a ridge (320m above sea level) so has aspects ranging from East through North to West. It is very exposed resulting in small vines with low yields. This has allowed to make a relatively fine grained Cabernet, but the clay soils translate to a wine with power, tension and fresh acidity. They blend in a couple of barrels of other varieties to add to the complexity of flavor and tannin structure.

All grapes used in producing the wines are grown on Keermont Vineyards. Most of the vineyard parcels grow on deep red clay rich soil derived from sandstone and granite and are surrounded by indigenous ‘fynbos’ vegetation. The vineyards are planted on steep mid-slopes high up in the valley between the Stellenbosch and Helderberg mountain ranges. Aspects vary from North East through North to West facing between 250 and 400 meters above sea level.

Dark ruby red in color, this is quite a serious vintage with a complex bouquet of ripe red berry fruit, cedarwood, and typical ‘fynbos’ flowers. The palate is full bodied, but gentle. Tannin structure is full and dense and coats the palate while the natural acidity keeps the ripe fruit in check. Savory notes of tomato paste and cloves add character to the bright red strawberry and cassis flavors which linger into a long, tight finish. Drink 2020 – 2035.

Long Shadows Feather Cabernet Sauvignon is made from 100 percent Washington State Cabernet. 

Acclaimed Napa Valley vintner Randy Dunn has a reputation for producing world-class Cabernet Sauvignon. He brings more than four decades of winemaking experience to the Columbia Valley to produce Feather, his only wine made outside of California.

Tasting Notes: Deep crimson colored with pure and expressive Cabernet Sauvignon character. Generous aromas and flavors of dark fruits, violets, coffee and toasted herbs combine with a textured mid-palate to deliver a big, yet focused, wine with polished tannins and persistent finish.

Winemaking: Grapes were hand-harvested at the peak of ripeness, then lightly crushed and fermented in small stainless steel tanks. Once fermentation was underway, the cap was pumped over aggressively to extract color and structure. As fermentation neared completion, pump overs were handled more gently to further extract color and flavors without imparting harsh tannins. The finished wine was aged 22 months in 90% new Vicard French oak barrels (Randy's cooper of choice at Dunn Vineyards as well).

Located in the world-renowned Oakville appellation, in the heart of the Napa Valley, our Cabernet Sauvignon and Cabernet Franc vines benefit from the gravelly and loamy Bale soil derived from an alluvial fan in this warm yet temperate climate. The 2016 Cabernet Sauvignon Coeur de Vallée comes all from Beckstoffer’s portion of the To Kalon Vineyard and it’s a thrill a minute, offering awesome notes of blue fruits, chocolate, incense, candied violets, and high-class cigar tobacco. As seamless and elegant as they come, yet also opulent and sexy, this remarkable Cabernet Sauvignon could come from nowhere else in the world. Drink it over the coming 2-3 decades.

This is the last vintage when this wine will come exclusively from Beckstoffer’s To Kalon vineyard. In the future it will come (more and more) from Morlet’s own new vineyard in Oakville—just across from To Kalon. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. Full-bodied and laden with densely packed, muscular fruit, it has a rock-solid frame of ripe, grainy tannins and seamless freshness, finishing very long with those To Kalon spices lingering with fantastic persistence. 250 cases produced, to be released in the fall of 2019.

More masculine, backward, and austere, with a Chateau Latour-like character, the 2015 Morlet Estate gives up darker fruits, crushed rock, and ample lead pencil-like notions to go with a full-bodied, concentrated, structured feel on the palate. Lots of cassis and black raspberry fruits as well as classic Mount Veeder notes of lavender, violets, bouquet garni, and rocky, mineral-like notes emerge from the 2018 Cabernet Sauvignon. A deep, full-bodied mountain Cabernet Sauvignon, it has a plush, layered texture, beautiful tannins, a deep, concentrated mid-palate, and a great finish. Another head-turning wine from this label, it’s a candidate for the best Napa Valley Cabernet Sauvignon out there at the price point.

The 2018 Cabernet Sauvignon from Mt. Brave is fabulous. Inky, rich and explosive, the 2018 possesses tremendous depth and tons of personality. Graphite, blue/purplish fruit, blackberry jam, bittersweet chocolate, sage, lavender, menthol give the 2018 tons of character to match its explosive feel. The brooding, backward wine is going to need quite a bit of time to unwind, but boy is it gorgeous.

  The 2021 My Favorite Neighbor Cabernet Sauvignon fills the glass with a seamless culmination of black cherry, cassis and warm spice. An additional layer of red fruit and a pop of acid, combined with well- integrated tannins and a beautifully crafted structure, leave nothing to be desired. Neyers Cabernet Sauvignon Neyers Ranch is made from 100 percent Cabernet Sauvignon. 

"We harvested the 2017 Cabernet Sauvignon crop from our Conn Valley Ranch in the first week of October, a week later than we picked the same vineyard the prior year. The size of the crop was about 20% smaller in 2017 as well, mostly due to the cold, wet weather we experienced in spring during flowering. Grapevines are self-pollinating, and cold, windy or damp weather interferes with this process, a problem known the French call coulure. Ironically, the harsh spring weather of 2017 had a huge impact on the size of our crop. Still, this smaller crop ripened fully and evenly, and at harvest time we picked beautiful, dark-colored clusters under near-perfect conditions. The finished wine was immediately remarkable for its flavor and complexity, and the wine looks to be one that will improve for many years. During my career in the Napa Valley wine business, I’ve learned to expect the best wines from cold years like 2017. These are vintages that are viewed initially with lowered expectations, but my experience has been just the opposite. Going back to my first Napa Valley harvest in 1971, these ‘colder years’ invariably result in wines with brighter, more attractive flavors, and the wines age longer and more gracefully.

Following harvest, the wine was fermented using wild, native yeast in an temperature-controlled stainless steel tank. After 45 days or so, the tank was drained and the pomace pressed, and the wine transferred to 60-gallon French oak barrels, 25% of them new. During the first year, we racked the wine off of the yeast lees three times, and by May 2019 it had been sufficiently clarified to bottle without fining or filtration. I am especially impressed by its bright ruby hue, a color so commanding it reminded me of the 1995 red Bordeaux wines I tasted from barrel during my trip to France in the Spring of 1996. It’s loaded with flavors that range from wild cherry to chocolate, enhanced by the lovely hint of tobacco leaf and mint. Each aromatic component has its own individual fascination, but all of them together provide a remarkable experience. Here’s a complete Napa Valley Cabernet Sauvignon that we expect it to improve for 20 years.  It's a from a very small crop that will provide decades of pleasure." - Bruce Neyers

Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. Ptit Paysan Cabernet Sauvignon  is made from 91% Cabernet Sauvignon, 6% Petite Verdot, 3% Cabernet Pfeffer.

Oak: 11 months on lees in neutral barrels

The Cabernet Sauvignon is sourced from a vineyard at the foot of the Santa Cruz Mountains west of Morgan Hill, which grows in a mix of granitic and volcanic soils, and a 25-year-old vineyard east of Gilroy, which grows in deep, extremely sandy soils against the foothills of the Diablo Range. The Petite Verdot is sourced from the Paicines AVA and grows in rocky alluvial deposits above the Tres Piños Arroyo. All three vineyards experience the warm days and cold nights typical of the Central Coast, allowing these late ripening Bordeaux varieties to be picked at high acidity and moderate sugars.

Le P'tit Paysan offers intense blackberry, dark cherry aromas, chocolate, herbaceous and toasty notes on the palate. Medium-bodied, well-balanced with moderate and integrated tannins that give structure and liveliness to the wine.

Pairs well with steak, duck, game, hearty stews, ribs, and dark, rich sauces.

Piper-Heidsieck Rare Brut Champagne  is made from 70% Chardonnay, 30% Pinot Noir.

The effervescence of Rare Millésime 2013 is tinged with an intensely bright, light golden color. The nose, at first subtle and clean, emerges in two stages combining tonicity and elegance. It all begins with the delicacy of white flowers, a hint of black tea and touches of citrus, kiwi and kumquat. Then, notes of lime blossom, green tea and fern give way to aromas of white fruits such as greengage plums. Touches of chestnut honey, sweet spices, vanilla and marzipan round off the wine's rich bouquet. The two facets of Rare Millésime 2013 are confirmed in the mouth: smooth and vibrant, indulgent and dynamic. After hints of meringue, whipped cream and marzipan, kumquat, blood orange and kiwi then provide a refreshing tonicity. On the finish, the comforting texture of Rare Millésime 2013 appears as an aromatic and smoky indulgence punctuated by a freshness and a subtle bitterness. Such a pleasingly elegant and multifaceted Champagne with salty, creamy and toasty elements all wound together. Plenty of apricot pastries, pears, brown butter, fennel and salted almonds, with some iodine. It’s silky on the palate, with soft and supple bubbles, while remaining fresh and on edge. 70% chardonnay and 30% pinot noir, from 11 cru villages mostly in Montagne de Reims with Cotes de Blancs.

The nose opens with an initial whiff of creaminess, followed by hints of creamy polenta and tart yet aromatic citrus and chalk. The palate is immediately striking with saltiness and savouriness. The foam is rich and tiny bubbles burst, releasing the citric charm of lemon and white grapefruit. There is something driven, vertical and precise on the taut body, softened by that creamy generosity and subtle oyster shell appeal of the mousse. The finish holds a delicious frisson of white pepper and grapefruit zest spice. A very straight-laced wine for now that will unfold in its long future.

Poggio San Polo Podernovi Brunello di Montalcino is made from 100 percent Sangiovese.

Podernovi, San Polo’s new single vineyard Brunello, makes its debut with the extraordinary 2015 vintage. Crafted with Sangiovese grapes grown in the vineyard synonymous with the wine, it is among the most beautiful and archetypal of Montalcino. Podernovi is an elegant and poignant Brunello.

The winter was not particularly cold, and spring arrived slightly earlier than usual, with temperatures slightly above average, giving the vines’ shoots the opportunity to uniformly develop. The following weeks saw frequent rainfall, which allowed the land to build water reserves, alternating with periods of dry weather, enabling the vines to continue growing without any problems. The damp conditions during flowering led to the formation of bunches that were slightly more sparse than usual and with rather small berries, ideal preconditions for reaching harvest time with perfectly ripe and healthy grapes. However, the feature that will make vintage 2016 particularly memorable is the excellent temperature range that characterized the months of July, August and September, with sunny days and cool, breezy nights. We therefore reached the beginning of October with grapes that exhibited a superb combination of maturity, acidity and aromatic potential, perfect conditions for the production of wines with a distinct personality and a great balance of concentration, elegance and longevity; a perfect reflection of the production philosophy of San Polo.

Aromas of forest floor, grilled herb, camphor and pipe tobacco mingle on the nose of this full-bodied red. The firm, elegantly structured palate offers juicy Marasca cherry, red currant, licorice and coffee bean. Tightly wound, fine-grained tannins and fresh acidity grip the close and lend an ageworthy structure. Drink 2026–2041.

Delicately perfumed and finessed, the San Polo 2016 Brunello di Montalcino Podernovi is very floral and lifted in personality. This vintage is very different than the inaugural 2015 vintage. I remember the previous release for its darker and blacker quality of fruit. This cooler vintage is more lithe and lighthearted, with building aromatic intensity that unfolds with caution and care. Once you've had the wine in your glass, it reveals a succession of sour cherry, wild rose and fresh lavender bud. There are light mineral dustings as well, and the wine is ultimately quite solid and structured. This bodes well for its aging evolution. Fruit comes from a two-hectare parcel in a cool and high position some 450 meters above sea level. The soils are clayey with schistous Galestro. Production is 13,000 bottles.

This is a phenomenal new red from San Polo with superb depth and intensity with plum, wet earth and black truffle. Full body. Chewy and ripe tannins and a long and flavorful finish. The depth and beautiful is gorgeous. Needs three or four years to come together. Better after 2022.
