Michel Thomas Sancerre Blanc Silex is 100 percent Sauvignon Blanc.

Intensely aromatic and concentrated Sauvignon from the Silex soils, this is a wine of great concentration and excellent balance. Aromas of fresh herbs, with flavors of citrus, ripe gooseberry, apple and a hint of gunflint. A delicious apéritif and the classic match for goat cheese or asparagus.

The special bottling "Silex" is limited each year to between 400-500 cases. They grow grapes on three soil types: 40% Terre Blanche-Argilo-Calcaire, 40% Caillottes-calcaire, 20% Le Roc-Silex. This wine come from the hardest stone soil on the vineyard giving it pleasant notes of fruit and a very dry flavor: This wine is bottled using traditional methods without filtration, allowing for a authentic and natural taste to the wine.

A delicious apéritif and the classic match for goat cheese or asparagus.

This classy and poised Pinot Noir displays an array of dark berry notes, including raspberry, blackberry, blueberry, and ripe cherry, along with a hint of baking spices. Balanced tension and refined tannins on the palate make the wine both elegant and effortlessly delicious, with subtle flavors of cedar and cassis lingering on the finish.

Bright and perfumed aromas of raspberries, potpourri and orange peel. The palate is medium-bodied with fine tannins and bright acidity, giving notes of blackberry bush, dried herbs and earth. Balanced and fresh.

Morande Gran Reserva Sauvignon Blanc is made from 100 percent Sauvignon Blanc

The grapes for this wine come from Morande's estate located in Casablanca, a few miles from the Pacific Ocean. This valley is well-known for its cool climate that allows to obtain small clusters and grapes that develop colors, aromas, and flavors that are characteristic of a slow ripening process. Of limited production, the vineyard is trellised to the vertical shoot position and grows on clayey, granitic soils of low fertility that give life to remarkable wines.

Bright straw-yellow color, delicate aromas with fresh herbs, honey and orange-blossom, combined with white fruit and citrus fruit. The palate shows complex flavors, with edgy, mineral freshness and outstanding citrusy notes of grapefruit, herbs and white peaches. It is persistent, elegant and with a structure that makes for good aging potential.

The grapes were picked by hand in 10-kilo boxes. A large percentage was whole-bunch pressed and the rest underwent a cold maceration for eight hours in the press. The must fermented mainly in French oak foudres, but a part also in cement eggs. The wine was kept in both its containers during six months before bottling.

Pair with white meat, fish and seafood, fresh cheese.

Mordoree Chateauneuf-du-Pape La Reine des Bois is made from Grenache 75 %,  Mourvèdre 10%,  Syrah 10 % , Counoise 3% &  Vaccarese 2%.

This premium cuvee - whose name means "Queen of the Woods" - is from 65-year-old vines, planted on Villafranchian-era terrasses. Yield is 30 hl/ha.

Deep ruby red; opaque. Aromas of red fruits change to wooden touches of leather, black truffles and coffee. Fat, concentrated and full flavored with a very long liquoriced and fruity finish.

Pairs with red meats, sauce dishes, game animals (woodcock, wild boar) and semi mature cheeses.

"The 2020 Châteauneuf Du Pape La Reine Des Bois is a bigger, richer, more structured wine, which is normal. A blend of 80% Grenache, 10% Mourvedre, and the rest equal parts Syrah and Vaccarese, its deeper ruby/purple hue is followed by a brilliant perfume of blackberries, black raspberries, ground pepper, violets, and new saddle leather. The 2022 Châteauneuf du Pape Cuvée De La Reine Des Bois is based on 75% Grenache, 10% each Syrah and 10% Mourvèdre, and the rest Counoise and Vaccarèse. It's not massive yet just exudes class and elegance, with both red and black fruits that give way to more spice, peppery garrigue, and leather, with classic background licorice and black olive notes. Medium to full-bodied, beautifully balanced, and elegant, with silky tannins, this brilliant Châteauneuf du Pape will evolve for two decades.

 Mordoree Cotes du Rhone Dame Rousse Rose is made from 40% Grenache, 35% Syrah, 15% Cinsault, 5% Carignan, 5% Mourvèdre

Color : rosé, slightly orange (mordorée colour).

Aromas : crystallized oranges and cherries, slightly aniseed.

Palate : very rounded, fresh and long finish.

Ageing potential : 2 to 3 years

Pommeau de Normandie a mistel type of beverage. Same process as Floc de Gascogne, Pineau des Charentes and Ratafia de Champagne.

It is made with 2/3 Unfermented sweet fruit juice (apple and pear) with 1/3 distilled alcohol at 51% ABV (Calvados).

Excellent with desert, such as French crepes (very thin pancakes).

A balanced and memorable Chardonnay that starts with aromas of orangeblossom, Asian pear, crème fraiche, peaches and chamomile, complemented bynotes of toffee, honeysuckle, and graham cracker. On the palate, flavors of greenapple, Meyer lemon and stonefruit are finished with notes of tangerine and vanilla.This Chardonnay is smooth, creamy and balanced with a lingering acidity and a longfinish. This is the perfect wine to pair with a brie or gouda cheese plate drizzled withlocal honey and hazelnut.

Fruit is sourced primarily from the southern part of Napa Valley, and aged five months in French oak. With its billowy mouthfeel, the liquid seemingly floats above the palate. Pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse.

Ossian Capitel Verdejo is made from 100% Verdejo.

Ossian Capital represents a particular expression of very old Verdejo vines, taking its potential far finesse, elegance and longevity. It is made in selected years with a selection of extraordinary grapes.

Color: Old golden yellow color with greenish reflections.
Aromas: Surprisingly nuanced and profound.
Flavors: Fresh, full and very light.

"The 2020 Capitel is pure Verdejo from the oldest vines from the Peña Aguda vineyard in the village of Nieva on slate soils. This is the last vineyard to be bottled and has higher alcohol (14%) than the rest of the vineyards despite now harvesting earlier. The wine has a different aromatic profile but getting closer to the style of Ossian, less opulent than in the past, with more energy, quite fruit-driven with some exotic notes reminiscent of banana skin. The whole clusters were pressed and the juice put to ferment in barrel where the wine matured with the lees and, starting this year, without bâtonnage, because they feel the wines have enough volume and stirring the lees can bring more oxidation to the wine. 2,500 bottles produced. - Luis GUTIERREZ"

Ossian Quintaluna Verdejo is made from 100% Verdejo

Quintaluna is a young wine that is made exclusively from Verdejo in the province of Segovia. 60% is very old grape: pre-phylloxera (ungrafted). 40% is made of very young grapes on trellises, grown certified organic, with low yields. The key to success for the Verdejo grape is held in the soil. Ideal soil has a high content of sand and pebbles of different sizes. Some have higher proportions of clay and others have significant proportions of clay and limestone. As the pebbles and sand allow for good drainage, the clay holds enough moisture to allow the vines to thrive.

The color is a straw yellow with greenish reflections. On the nose, you will find aromas of white flowers, stone fruit (peach), and citrus (lemon, mandarin). It also displays tropical fruit aromas. The palate is complex. Natural acidity is evident in the freshness and length on the palate. Almond and ripe fruit flavors are found in the mid-palate with fresh grass and citrus on the finish.

It pairs wells with all kinds of appetizers, entrees and salads.

"The 2020 Quintaluna is pure Verdejo from small plots on sandy soils in the province of Segovia, fermented in stainless steel with indigenous yeasts. They still use grapes from external suppliers but are working toward using 100% their own grapes (which they might achieve in 2023); therefore, the wine is not certified organic, because some of the vineyards from the growers are not certified. It has a balsamic nose reminiscent of bay leaf, dried yellow flowers, chamomile and pollen intermixed with pit fruit. Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. This wine shows enough structure to be age-worth, yet soft and balanced enough to enjoy upon release. Flavors linger in this tasty, dense wine. Tastes like Oakville. -Heidi Barrett
