Justin Isosceles Proprietary Red Paso Robles is made from 88% Cabernet Sauvignon, 6% Cabernet Franc, 6% Merlot.
Bright with a dark purple/black core and a lighter ruby purple rim showing slowforming, moderately stained tears on the glass. Attractively aromatic and complex with ripe black and red cherry, black currant, new book leather, cedar, tobacco, vanilla bean, licorice, and oak. Full-bodied on the palate with ripe complex cherry, cassis, and a subtle red berry fruit on entry, with vanilla and licorice baking spice leading into the midpalate, which shows complex savory notes of cedar, tobacco leaf, and leather. Thibaut-Janisson Blanc de Chardonnay is made from 100% Chardonnay

Winemaking Notes The grapes are handpicked in small baskets late August and are gently pressed as whole clusters. After a settling of 24 hours, the juice is inoculated with selected Champagne yeast and ferments in stainless steel tanks at low temperature. Once the fermentation is over, the wine ages on the fine lees until the spring of the following year. The blend is then put together and cold-stabilized prior to bottling. The bottling occurs in the spring when the cellar temperature is conducive to a second fermentation in the bottle. The now sparkling wine will age on the yeast for over 24 months. At disgorging, a small amount of dosage liquor is added in order to balance the natural acidity.

What a pretty nose. Lemon peel, fresh white flowers, lavender, crushed sage and wet stone. Medium-to full-bodied with carrying acidity. Extremely articulate and graceful on the palate with bright citrus and a dried-floral note. Impressive depth and length. Salty and tangy on the finish with vibrancy. Drink or hold.
