This beautiful golden skinned grape is a beautiful white wine grape that creates sweet wines. The Semillon grape variety is said to be one of the most popular varieties of wine grapes in the world. Semillon blanketed almost all of Chilean vineyards during the 1900s. The type was also used to create white wines in France and Australia. Semillion creates white wines that are the longest lasting, and are responsible for some of the most popular sweet wines in the world today. Semillon is a variety famed from the region of Bordeaux and has also been grown in regions of Australia, in the oldest wineries in the region. In South Africa, the variety was also very popular, and covered roughly 90 percent of the vineyards in the South African Cape region in the 1900s. The popularity declined and today, the Semilion makes up around 1 percent of the vineyards. Because the variety can withstand difficult conditions such as rot and disease, Semillion has been a popular choice. These grapes tend to bear high yields, and are low in acid and contain a somewhat oily texture. Wines crafted from the variety tend to be sweet and dry. The ease of cultivation and the variety's nature to be harvested early in the year also lends to its popularity. When Semilion is grown in hot regions, the color of the grape can actually turn a nice light pink color because of its light skin. Australian wines with Semillon are sweet and contain honey-like aromas, and can include a apple or citrus flavor. Crisp flavors of lemon or lime can also be present.

Gravas Sauternes is a blend of 100% Sémillon.
The wine shows a lovely pale golden color with deep golden highlights. Round and well-balanced offering complex aromas of candied fruits backed up by a hint of exotic fruit (mango, guava) and white flowers. On the palate, it is ample and fleshy, leading into a silky and long finish.
The wine pairs well with white meats, scallops, exotic and spicy dishes, foie Gras, Roquefort blue cheese, chocolate desserts.
All older vintage wines have been purchased from a single collectors cellar. Pictures can be requested before shipment.

Kershaw Chardonnay Deconstructed Lake District Bokkeveld Shale CY95 is made from 100 percent Chardonnay.
The inspiration for this Chardonnay stems from my belief that the Elgin region has both a signature grape as well as particular terroirs within its demarcated boundary that reflect regional credentials. This Chardonnay was selected from a sub-region of Elgin from a specific vineyard and an individual clone.
Tasting Notes: Sourced from a parcel in the Western part of Elgin the 95 clone is known for its excellent quality creating wines that are aromatic, fuller bodied and rich yet tightly structured, well–balanced with length of flavor, managing to show restraint and mouth-watering passivity with a great line through the palate and fruit veering towards white peach flesh and nectarine. On Bokkeveld Shales it brings amplified perfume on the nose and persistence and elegance to the palate.
Winemaking:
Grapes were hand-picked in the early autumnal mornings, placed into small lug baskets and tipped directly into a press before being gently whole-bunch pressed up to a maximum of 0.6 bar or until a low juice recovery of 580 liters per ton was obtained. The juice gravity-flowed directly to barrel (no pumps were used at all) without settling. The unclarified juice had no enzymes or yeast added to it and therefore underwent spontaneous fermentation until dry, with malolactic discouraged. The wine rested in barrel for 4 months prior to judicious sulfuring and a further 7 months’ maturation in barrel before racking and bottling.

Murray Cabernet Sauvignon Red Mountain is made from 78% Cabernet Sauvignon, 10%, Merlot , 6% Malbec, 6%, Petit Verdot.
A beautiful ruby color, this wine is very fruity with lots of plum and just a hint of characteristic Red Mountain minerality. It is very smooth with a slight texture of tannin on the back. This wine is a real Cab crowd pleaser.
As much as possible, winemakers Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.
They age in the oak barrels until they are ready to bottle.Neutral Oak 52%, New Oak 48% (American 57%, Hungarian 15%, French 14%, European 14%).
After primary fermentation, all wines are pressed directly into 59 gallon oak barrels. Aging for 19 months.
