Sercial is a white grape variety used to create medium-bodied sweet wines, such as Bual & Terrantez and Malvasia. Sercial is mainly grown in the island of Madeira, Portugal and is found in small quantities. After phylloxera ravished the vineyards in Madeira, the grape started to grow more widespread on Portugal’s mainland, where it is called Esgana or Esgana Cao. Sercial ripens late in the year, which contributes to the grape variety’s high acid level. The name Sercial is thought to be related with the Madeira style rather than the grape variety itself, and is a very acidic and light type of Madeira wine that takes the longest to mature. Sercial grapes are harvested late in the year and at least 20 years of aging is required for the vintage Sercial Madeiras wine. The long aging process makes sure that the acidity of the wine is toned down and softened. When the vintage wine is mature, the color has a yellowish tawny tone and is similar to the smell of vintage Riesling wines. Sercial is the driest type of Madeira, and can contain up to 1.5 percent residual sugar. Sercial is also growing in popularity because of its perfume flavors.

Carmo Vinhos Madeira Sercial 10 Yr is the driest style of Madeira, a light bodied wine with a distinctive nutty nose. An excellent apertif. The concentration at this age has produced a very attractive and interesting wine, with a long finish.

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Ti Cuntu… means “I will tell you a story…” in Sicilian dialect and it refers to the ability of the wines made from these native grapes to tell the story of their terroir and of their history. The label shows the dry stone walls and the wild myrtle which characterize their territory.
Frappato is a rare native grape of Vittoria and is almost exclusively grown in Eastern Sicily. The vineyards lie on the sides of Mont Iblei at 300 meters above sea level on a south-west exposure. The relatively infertile terrain encourages the concentrated structure with a light color and beautiful aromatics. Irrigation is generally avoided. There are 4,000 plants per hectare. Agriculture is sustainable and no herbicides or pesticides are used and wild herbs fill the vineyard rows.
Color: Light cherry red with garnet reflections.
Bouquet: A ripe strawberry, black cherry, roses and violets fill the bouquet along with notes of blackberries, raspberries and blueberries.
Taste: Fresh and berry-filled with an intriguing root beer note. The tannins are refined and the acidity lively. The finish is notable and long.
Excellent with cold meats and salamis, seafood and light pasta dishes.
