Product Description
This organic natural cider from Astigarraga in the Basque Country is produced from freshly pressed juice that is fermented by native yeasts in large wooden casks (kupelas) for a minimum of 4 months. The cider is uncarbonated and unfiltered.
A typical golden color, intense, deep and fruity aromas, the cider is medium-bodied and fresh on the palate with tangy flavors and a slight fizz.
Pairs with cheese, quince paste, shellfish, grilled beef. Serve chilled.

Sidras Bereziartua Sagardoak is a family-run firm devoted to cider production since 1870. The first Bereziartua ciders were produced at the old facility in Ergobia. A century later, in 1970, the cider house finally committed itself to the production of sagardua or cider at its facilities in Astigarraga, where they are located today. Since then, and following various modernization processes, Bereziartua has become a beacon in the production of natural cider, while at the same time preserving its family character at the service of tradition, and out of respect and gratitude towards the loyal customers. The fourth generation is currently running the company.
Bereziartua is home to 60 kupelas (barrels with a capacity of over 1,000 litres) made of wood, polyester and stainless steel. Next to these kupelas there are two refrigerated warehouses to control the fermentation process in line with our requirements. The txotx is a tradition that is carried out following the first contact with the cider inside the kupela; that usually happens on the Friday before 20th January - Saint Sebastian's day. The txotx season at Bereziartua goes on until the end of May. This tradition began with cider tasting sessions involving the cider maker and the wholesalers, restaurants, private individuals, gastronomic clubs, etc. Prospective buyers used to turn up at the cider house to sample the various kupelas to choose the cider that they felt was in the best condition to be purchased. Today, it has become a popular gastronomic event in the Basque society.

Grape varieties: Parellada 40%, Macabeo 30% and Xarel·lo 30%.
Harvest: Occurs in 3 stages. Macabeo within the first fortnight of September, Xarello during the second fortnight in September and Parellada within the first fortnight of October.
First fermentation and vinification: This is a "Methode Traditionnelle" with
soft pressing of the grapes to obtain 60% of the must (flower must). It is decanted and fermented with controlled temperatures of 18ºC for 20 days until it fully develops the primary aromas of the grapes.
Secondary fermentation: takes place in the bottle for 40 days at a temperature of 16ºC and final ageing for 20 months. Residual sugar: 7 gr. per litre.
Color: Pale yellow with green tones. Shiny and clear.
Aromas: Powerful in the nose, clean. Ageing aromas.
Taste: Soft and well structured, long aftertaste and good balance of acidity and sugar contents.
Gastronomy: It should be served chilled between 5ºC and 7ºC. A flute type glass is recommended. Excellent with pasta, red and soft meats and white fish.Painous is unique in that it is a Cava-Joven style sparkling wine, meaning, the wine receives the minimum aging of 9 months. This allows crisp, fresh aromas and flavors to be expressed. It is delicious for aperitif.

The 2019 Chardonnay Three Jacks Vineyard, from vines planted in 1995, was barrel fermented and matured in 31% new French oak for 14 months. It's one of the best iterations I've tasted, combining expansive flavor and texture with precise, laser-like acidity. It offers delicate, pure scents of apricot, dried tarragon, white pepper and citrus blossoms with a stony undercurrent. The medium-bodied palate has dynamic energy from its oily texture and shimmery acidity, and it finishes with tense, mineral-driven flavors. It has much more to give as it unfurls in bottle and will be long lived in the cellar.

Johann Michel Cornas is 100% Syrah
This Cornas is a blend from 2 different vineyard sites:
- 60% of the final blend is from vineyards located on a hillside (16 year old vines on the "coteau"), planted on sandy soils, decomposed granite and some rocks, giving the structure, spiciness and licorice flavors to the blend.
- the other 40% of the final blend comes from the bottom of the slope (40 years old vines on the "pied de coteau"), planted on sandy soils, bringing acidity and balance to the wine.
Expressive, deep, rich, silky and juicy. Well structured and round, it displays red fruit, leather, black cherry, liquorice and black berry aromas.
