Tempranillo is native to Spain and is used to create red wines that are typically blended with Grenache and Carinena varieties. The black grape comes from the Spanish word, temprano, meaning early, which refers to the fact that the variety ripens earlier than most red grapes in Spain. Tempranillo was grown in the 20th century to create jug wines in California and has been planted in the United States, South Africa, Turkey, Canada, Australia, and Argentine. Tempranillo grows well at high altitudes and produces deep, ruby colored wines that are aromatic with berry, tobacco, vanilla, plum, herbal, and leather notes. The grape variety was thought to be directly related to Pinot Noir and it was thought that Cistercian monks left cuttings of Pinot Noir at monasteries as they made a pilgrimage to Santiago de Compostela. However, there is no proof that the variety is related to Pinot Noir. Tempranillo grapes need to be grown in cool regions to produce a less acidic wine, however, to create sweet wines that are high in sugar, heat is required. The wine pairs well with steak, a bacon burger, crab, barbecue meats, and pizza with red peppers. Tempranillo also pairs well with veal parmigiana or haddock.

Pierre Olivier Sparkling Rose NV is a value sparkling rosé, made with Tempranillo grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.
This wine is aromatized with a very little amount of Raspberry flavor, giving a nice mouthfeel, with an extra aromatic boost.
The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.
"Pale pink salmon. Just a touch off-dry, this is a very pleasant sparkler that reveals aromas of spicy red apple with a hint of cinnamon that carry through to the palate. Well made and exceedingly pleasant to drink."

Sourced from a vineyard at 505 metres above sea level in San Vicente de la Sonsierra, the wine takes its name from the site it is located on. The soils are primarily composed of depleted limestone in the subsoil and pebbles on the topsoil. These types of soils offer long-ageing capacity, freshness, volume and structured wines.
Fresh, structured and complex, this wine is very aromatic, with intense aromas of wild black fruits, accompanied by deep balsamic aromas and licorice. A silky texture and mineral notes, it is round, powerful and polished on the palate with flavors of black fruits, prunes, balsamic and spice. A long and persistent finish.

Stunning salmon-pink hues. The nose is intense and fine, dominated by notes of red berries. On the palate, the combination of fine bubbles and delicate aromas produces a delightfully light and silky rosé.
Machine harvest. The base wine is fermented at a low temperature. The second fermentation takes place at 14°C for 2 weeks, followed by dosing.

This Organic Red Blend from Tierra de Castilla is 70% Tempranillo and 30% Syrah. It’s made in a Rhone style, with whole berry fermentation proceeded by skin contact. Chocolate, cherry and rose petal aromas on the nose. Very open and alive - this has a great energy from the aromatics alone with soft cedar shavings, vanilla bean and bramble fruit. Juicy and lively, this is full of fun - fruity and concentrated. The tannins are just wonderful, creamy and slightly grippy, extending the flavours vertically. Tons of juicy, succulent fruit - this feels quite modern but still with that flash of sunshine and ripeness. Long lasting with purity and delicacy that make it so enjoyable. A wonderful creation from Michael Silacci. This is not your typical blockbuster at all, this is a darling of a wine. 0.5% Malbec completes the blend. The Opus team chose to pick early and quickly given the heat spikes in 2022, starting with the Merlot on 24th August. Ageing 18 months in French oak.
