The Domaine Thierry Mortet Estate
The Domaine was officially created in 1992, when Thierry’s father retired and his estate was divided between his two sons. Thierry studied enology and viticulture in Beaune before joining his parents and brother and working at the Domaine
Thierry uses Burgundy barrels from Rousseau et Toutan, one third new each year. Annually, the estate bottles 1,100 cases. Thierry strives for fruit and finesse in his wines. Generally his top wines age well for 10-15 years.
The Domaine Thierry Mortet Vineyard
Thierry started in 1992 with a 4 hectare vineyard. It now measure 7 hectares (17.5 acres) and produces 85% red wine and 15% white wine. The vineyards spread over four villages: Gevrey-Chambertin, Chambolle-Musigny, Couchey and Daix (west of Dijon).
Thierry Mortet uses classic winemaking techniques: pre-fermentation maceration for 3 or 4 days, total fermentation time of 2 weeks. The grapes are harvested by hand, are sorted and are 100% de-stemmed. The result is expressive, full-bodied, generous, pure wines.
Starting with the 2010 vintage, the Estate is now certified Organic !
Thierry Mortet Gevrey Chambertin Vigne Belle is made from 100 percent Pinot Noir.

The wine offers a subtle and complex nose. It displays a sweet and delicate mouthfeel. Very nice wine with black fruit aromas. Dense, good concentration. Good length and well integrated oak.
Review:
Flint, dark stone and tar notions flash momentarily at the first sniff of this wine, before red-cherry notions with an edge of dark chocolate take over. The palate expresses itself in juicy, rounded but still fresh fruit that is dense and smooth at its core, ripe and dusted with cocoa. Tannins are fine and seemingly elastic, smoothing the fruit and concentration.

Bellevue Cotes de Castillon Cuvee Vieilles Vignes is made from 65% Merlot, 35% Cabernet Franc. Aged in mostly new oak barrels (90% French oak and 10% American oak), and some Château Haut Brion 2nd Barrels.
The wine offers a rich and intense bouquet of blackcurrant, blackberry and strawberry. It is smooth and full in the mouth with a velvety texture. Acidity combined with firm but well-integrated tannins are a fine supporting cast to the black fruit flavors at the end.

Cé is for Céline. She is like the Merlot grape varietal. Pleasant and calm.
Ma is for Marina. She is like the Cabernet Franc grape varietal. Tough and with a lot of character.
The color is deep and inky.
The nose is spicy, fruity and oaky with some nice vanilla and coconut aromas.
The mouthfeel is complex, with ripe red and black fruit flavors. Some spiciness and integrated oak flavors.
The wine starts as the Vieilles vignes, but some wine is aged in 500-liter American Oak Barrels for 18 months.
They are using a mix of different toastiness for the barrels. Some high toast and some are medium toast.
This is a fun wine that can be enjoyed with any food, charbroil burgers, grilled vegetables, cheeses ... or even with dark chocolate desserts.

2015 Castillon Cotes de Bordeaux Cé Ma Cuvée Céline Lydoire focuses this wine on Bellevue's old Merlot plots, blending in Cabernet franc from southern exposures on gravelly soils. It's her top selection, treated to 18 months in new 400-liter oak barrels; she started making it at the behest of her French customers, who wanted a step up from her cool and refreshing Cuvée Tradition. This is just as cool, but more saturated in its distinctly Castillon fruit flavor—think wild strawberries and blueberries with an earthy mineral undercurrent. That silky fruit gains its supple impression from the new oak, which boosts the textural richness. As I thought about how to score this wine, I found myself writing, "If that were from California, I'd be all over it." Absolutely. But it's also got Castillon limestone clarity. And, it's $27. Belle Glos Balade Pinot Noir is made from 100 percent Pinot Noir.
Bright cherry red with bold, vibrant aromas of blackberry jam, raspberry tart and toasted oak accented by subtle notes of rose petal, violets and cherry cola. This wine is juicy and generous on the palate with baked cherry, fresh strawberry, cranberry and baking spices. Perfectly balanced with bright acidity and a supple mouthfeel. Fine grained tannins provide an authentic textural distinction and structural depth.
Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. Only 435 half-liter bottles were filled in December 2019. - Luis GUTIERREZ

"Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. Castiglion del Bosco Campo del Drago, Brunello di Montalcino is made from 100 percent Sangiovese.
Castiglion del Bosco is one of the most prominent producers in Montalcino, both for the history of the estate and for its size, with 5,000 acres unchanged in the last 400 years. In 1967, when the Consorzio del Brunello di Montalcino was born, Castiglion del Bosco was one of its 25 founding members. This extraordinary property whose origin dates back to the 12th century was acquired by Massimo Ferragamo in 2003, who in turn totally restored the property to its original glory.
As Castiglion del Bosco‘s most representative wine, Brunello di Montalcino is an example of the Sangiovese grape‘s perfect symbiosis with the terroir of Montalcino.
Campo del Drago enjoys one of its highest expressions when paired with the succulence and softness of pigeon, whose breast is served here at its most delicate. The bold spicing of the wine is perfectly at one with the flavor combination bestowed to the meat by the beetroot, celeriac and the exotic overtones of coffee.
