Beautiful fruit cascades almost immediately to more savory flavors: crushed rock dustiness, cocoa and cedar. A good, firm mineral spine runs through to the long, bittersweet finish. The 2021 Cabernet Sauvignon is cut from the same cloth, with plenty of richness and depth, yet it stays slightly more focused and tight on the palate, with medium to full-bodied richness as well as beautiful darker currant, cassis, darker chocolate, graphite, and hints of flowers. It's concentrated and has beautiful mid-palate density, ripe yet building tannins, and a great finish. It's another undeniably delicious, hard-to-resist Cabernet Sauvignon from the talents of winemaker Thomas Rivers Brown. Give bottles a decant if drinking any time soon and enjoy over the coming 10-12+ years.

Pine Ridge Napa Valley Cabernet Sauvignon is made from 80% Cabernet Sauvignon, 8% Merlot, 7% Petite Sirah, 5% Malbec.
While admiring the cranberry red hue, forward fruit aromatics of black cherry and cassis begin to make your mouth water before the first sip! On the palate, juicy notes of blueberry compote and cherry cordial meld seamlessly with hints of cinnamon and cream soda. The wine methodically transitions from the bright, round entry through the viscous midpalate and onto a broad-shouldered finish. This is where hints of clove, graham cracker and toasted marshmallow are juxtaposed with those of dark roast coffee and Bing cherry. This wine can be enjoyed now but will benefit from another 10 to 20 years of bottle age.

The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Opulent textures expand across the palate with flavors of red fruit, blueberry, and chocolate-covered raspberry. Dunn Vineyards Napa Valley Cabernet Sauvignon is made from 100 percent Cabernet.
This Napa Valley wine is a blend of their Howell Mountain fruit and a small quantity of valley floor fruit that they purchase. This valley floor fruit contributes to the wine’s earlier approachability and softer tannic structure.

Prager Smaragd Klaus Riesling is made from 100 percent Riesling.
Franz Prager, co-founder of the Vinea Wachau, had already earned a reputation for his wines when Toni Bodenstein married into the family. Bodenstein’s passion for biodiversity and old terraces, coupled with brilliant winemaking, places Prager in the highest echelon of Austrian producers.
Smaragd is a designation of ripeness for dry wines used exclusively by members of the Vinea Wachau. The wines must have minimum alcohol of 12.5%. The grapes are hand-harvested, typically in October and November, and are sent directly to press where they spontaneously ferment in stainless-steel tanks.
Klaus sits adjacent to Achleiten and is one of the Wachau’s most famous vineyards for Riesling. The vineyard is incredibly steep with a gradient of 77% at its steepest point. The southeast-facing terraced vineyard of dark migmatite-amphibolite and paragneiss produces a tightly wound and powerful wine. The parcel belonging to Toni Bodenstein was planted in 1952.

Austrian Riesling is often defined by elevated levels of dry extract thanks to a lengthy ripening period and freshness due to dramatic temperature swings between day and night. “Klaus is not a charming Riesling,” says Toni Bodenstein with a wink. Klaus is Prager’s most assertive and robust Riesling.
Food Pairing
Riesling’s high acidity makes it one of the most versatile wines at the table. Riesling can be used to cut the fattiness of foods such as pork or sausages and can tame some saltiness. Conversely, it can highlight foods such as fish or vegetables in the same way a squeeze of lemon or a vinaigrette might.

Tenuta di Arceno Valadorna is made from 60% Merlot, 32% Cabernet Franc, 4% Cabernet Sauvignon, 4% Petit Verdot .
The first impression of the nose is earthy with notes of cypress, vanilla bean, and spice. There are deep fruit flavors of black cherries, plums and blueberries followed by pleasant hints of chocolate and dried rose petals. On the palate, the tannins are chewy and accompanied by lively acidity; contributing to a long finish dominated by flavors of dried figs and licorice. The 2016 Valadorna is a time bomb of joy that will stand the test of time and age well in the cellar if patience permits.
This Merlot-led blend is sourced primarily from the Valadorna and Capraia blocks, which produce the estate’s most complex and mineral-based expressions of this variety. The blocks are located within the cooler part of the estate, naturally irrigated by the stream that undulates through it, and feature sandy brown soils and lower yields than typical. These blocks are often the last Merlot blocks to ripen on the estate.
Review:
Solid and radiant in the glass it shows notes of pink grapefruit, flowering geraniums, pressed blueberries, plums and rosemary. There is more in the background in the brightness of the lemon, lime and bergamot notes. Full body, well-polymerized tannins that are decidedly vibrant and tense at the moment and an impressive long finish that will relax over time. Better from 2024.
