Winemaker Notes
This Bordeaux style blend was left on the vine to mature to its peak before it was hand harvested and hand sorted. It underwent a cold maceration for 5 days before fermentation. Extended skin contact rounds out the palate and integrates the rich tannins. Finally, it aged in French oak barrels for 18 months prior to bottling for a round and smooth finish.

This wine is made from 100% estate-grown fruit. Our vines are sheltered in the foothills of Carter’s Mountain in the Monticello American Viticultural Area (AVA).

Richly appointed, with dark blue and purple fruit and a plush mouthfeel. Notes of plum liqueur and freshly roasted coffee grace the palate as dark chocolate and anise entwine with the wine's well-defined structure and satin-lined tannins. The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. The 2019 Cabernet Sauvignon Serpent's Back shows a more aromatic, high-toned side of this site. Bright red/purplish berry fruit, pomegranate, cinnamon and sweet floral accents are all laced together.
