Our 2021 Gaspare Vineyard Cabernet Sauvignon is made from our grapes grown on the BSEW Estate in the Gaspare Vineyard blocks. Our vineyard is located in the Oak Knoll District of Napa Valley, which is known for it’s moderate growing climate which encourages consistent ripening throughout the growing season. Our 2021 vintage exhibits aromas of blackberry, brown sugar and cedar. It has a dark fruit flavor finished by powerful but elegant.

The 2021 Gaspare Vineyard Cabernet Sauvignon has a deep garnet-purple color. The nose is a little trapped behind the oak at this youthful stage, allowing glimpses and blackcurrant jelly and juicy plums notes with hints of menthol and anise. Full-bodied, the palate similarly sports a good amount of oak, backed up by the seductive black fruits and approachable, grainy tannins, finishing with a spicy kick.

Vineyard Notes
The Poetry Vineyard, carved into a steep west-facing hillside, reaches from the highest elevations of the Stags Leap District appellation to the valley floor. This vineyard draws its uniqueness from shallow, volcanic soils atop fractured shale. Due to the stressful nature of the site, planted with high vine density and farmed to very low yields, the vines develop slowly and produce small flavorful berries. The vineyard is planted to legendary, proprietary heritage selections of Cabernet Sauvignon.
Production Notes
In the cool darkness of night, grapes were hand-picked into twenty-five-pound bins to minimize crushing. By early morning, the grapes were subjected to rigorous selection by our three-tiered sorting process, which includes our cutting-edge optical sorter and a slow, individual berry hand sort. Whole berries were gently delivered by gravity to tank by our unique crane system, which kept the berries intact. Cold soaks lasted from five to eight days, and fermentations were managed through a combination of pump overs and délestage. Extended maceration of up to six weeks ensured exceptional extraction and fine-tuning of tannin profiles.

There is an effortlessness and ease to the 2021 Poetry that springs from the continuity and familiarity of its caretakers and the experience of the vines themselves as their roots dig deep into the shallow unforgiving terraces of rock and rhyolitic crevices. Wafts of warm summer mulberries, fractured rock, and violet perfume envelop the glass. Wild blackberry preserves form the flavor on the entry and combine with tantalizing, black truffle, sea salt, and steak au poivre juices. The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Pago de Carraovejas Cuesta Liebres is made from 100% Tinto Fino. The plot is located on a terraced hillside located at 900 m above sea level with slopes that range between inclines of 30% and 40%. Red cherry color with purple hues. Ripe fruit aromas, vanilla notes. Suave and unctuous in the mouth. A strong and noble character.
The harvest is carried out by hand using small crates and after passing through a refrigerated container it is transferred into tanks via gravity. The alcoholic and malolatic fermentation is carried out in small French “Haute Futaie” Oak casks with unique and original local yeasts and fermenting bacteria from the vineyard itself, to bring out the very best of the terroir, respecting the uniqueness of each and every vintage. Long Shadows Saggi Red is made with 58% Sangiovese, 30% Cabernet Sauvignon 12% Syrah. Among Tuscany's oldest and most prestigious wine families, Ambrogio and Giovanni Folonari teamed with Allen Shoup to produce a wine that showcases Washington State's terroir with plenty of Italian character. Saggi (meaning "wisdom") is a stunning blend of two outstanding Washington Sangiovese vineyards. Candy Mountain Sangiovese gives the wine its dark fruit flavors and appealing notes of anise. Dick Boushey's Yakima Valley Sangiovese, planted in 1992, adds vibrancy and liveliness. Because Cabernet Sauvignon has the potential to overtake Sangiovese, the Folonaris work closely with Sagemoor Vineyards to carefully select blocks of Cabernet they know from experience deliver elegant character and refined tannins.
