Waterstone Special Select Cabernet Sauvignon Napa Valley Project C is made from 100% Cabernet Sauvignon.
The backbone of this Cabernet Sauvignon is derived from a vineyard in the Atlas Peak AVA of Napa Valley where soils are volcanic in origin and have limited water retention. The balance of fruit is sourced from Coombsville and Oak Knoll. The small berry clusters and intense fruit from low-yielding vines create a wine with full flavor and longevity.

Integrated oak adds a light note of sweet nutmeg to this wine. Ruby in color, it has a fruit-forward entry with silky tannins that builds across the mid-palate and through a long and balanced finish. Structured while still approachable, this wine remains true to the signature Silver Oak winemaking style and will continue to improve through 2047 given proper cellaring conditions.

This potpourri of Napa cabernet character takes your palate on a tour of so many of the regions, including all the mountains, such as Howell, Veeder and Spring Mountain, as well as Atlas Peak, Stags Leap, Yountville and St. Helena. Precision and polish to the wine. Drinkable now, but better to hold.

Clif Lede Cabernet Sauvignon Stags Leap is made from 82% Cabernet Sauvignon, 8% Merlot, 7% Cabernet Franc, 3% Petit Verdot.
Our Stags Leap District and Calistoga estate vineyards build the foundation of this wine with support from valued grower sites located in Oakville, Rutherford, and Howell Mountain. Composed of small batches from a variety of blocks of varying age, this wine represents a diverse range of carefully selected rootstocks and clones. Yields are maintained at sparse levels, with a focus on canopy management and vine balance. The resulting blend boasts a remarkable depth and complexity that is quintessential Napa Valley.
Grapes were picked in the darkness of the early morning hours. The freshly-harvested fruit immediately underwent rigorous selection by our three-tiered sorting process, which included our cutting-edge optical sorter. Whole berries were gently delivered by gravity to tank using our crane system, minimizing disruption of berry integrity. Cold soaks lasted approximately seven days, and fermentations were managed via a combination of délestage, pumpovers, and punchdowns. Extended maceration ranging from four to five weeks fine-tuned our tannin profiles, allowing us to perfect mouth feel and wine complexity. The wine was aged in French oak barrels, 48% of which were new, for twenty-one months.
Elegantly soft and lithe the 2021 coaxes the taster with warm dark chocolate and luscious black cherry aromas. More graphite, chocolate cake, crushed mulberries, and iron notes leap from the glass. The entry is filled with dark fruit flavors of cassis, blackberry, and blue berries and they’re all tinged with floral notes of jasmine and violets. So silky and drinkable at the first sip, this well-concentrated wine feels tight and restrained with more tastes, holding its trove of black fruits, cedar, cinnamon and dark chocolate in a rich blanket of extra-fine tannins. Its complexity, layering and lingering finish are something special.

Waterstone Cabernet Sauvignon Napa Valley 2011 is made from 85 % Cabernet Sauvignon, 13% Merlot, 1% Cabernet Franc, 1% Petit Verdot.
Vintage: The 2011 growing season proved to be a challenge in Napa Valley. A wet winter and spring extended with rainfall into mid-June, delaying bloom and set. A long, cool growing season followed, which forced growers to open canopies to ensure sunlight and warmth. Harvest was further hampered by autumn rain storms, which encouraged an earlier-than-normal harvest. Overall, quality of fruit is high, and lower alcohols are expected for the vintage.
Vineyards: Well-established hillside vineyards are the foundation of this wine, giving the finished blend its intense inner core of fruit. The complexity and balance of this vintage was achieved through diverse sourcing.
Vinification: The grapes were hand picked at optimum ripeness. Following destemming, the grapes were stainless steel-fermented and received extended skin contact before being transferred to barrels. The wine was aged in small French oak barrels for 24 months (80% new barrels) where the wine completed malolactic fermentation. The wine was racked prior to bottling.
Tasting Notes: Aromas of cedary oak, currants, black cherries and ripe plums are rich and concentrated on the palate. The firm tannins underlying the wine’s core provide balance, leading to a long, lingering finish. The 2011 vintage is reflected in this wine, favoring balance to overt ripeness.

In this time of multimillion-dollar vineyard estates and celebrity winemaking consultants, when it seems that financial backing has replaced skill as the key to success in enology, it is rare that a simple idea can give birth to wines that stand out for flavor and balance, rather than pedigree alone. A collaboration between veteran winemaker Philip Zorn and longtime wine executive Brent Shortridge, Waterstone Winery was formed in 2000 when the two men were introduced and discovered a shared interest in creating luxury wines at affordable prices. Bringing together their previously established relationships with Napa Valley growers and vintners, the pair set out to develop balanced wines of varietal character through intelligent sourcing. Preferring to focus on the wine itself rather than the accumulation of land and facilities, Zorn and Shortridge own no vineyards themselves, nor do they own the facility where their wines are made. Dedicated winemaking, strong relationships with top growers and long-term grape contracts are the keys to Waterstone’s quality and success.

Domaine du Colombier Hermitage Rouge is made from 100 percent Syrah.
Perfect with beef ribs, grilled meats and cheese.
Manually harvested with destemmed grapes and fermented for about 2 to 3 weeks in temperature controlled vats, with an ageing period of 12 months, 65% in oak barrels and 35% in concrete tanks.
Review:
Brought up in 30% new demi-muids, with the balance in used barrels, the 2017 Hermitage is beautifully pure and layered, with smoking good notes of crème de cassis, white flowers, crushed rocks, and violets. Deep, full-bodied, and concentrated on the palate, it has plenty of tannins and is going to need 5-7 years of bottle age. This is a sensational Hermitage from Colombier that will drink well for 25+ years.
These wines are made by the talented Florent Viale and shine for their purity as well as character. While the winemaking here is traditional, with the wines destemmed and brought up mostly in used demi-muids, the purity of fruit can give the impression that wines are more modern styled than they are. They will all benefit from short-term cellaring.

Thorn Clarke Terra Barossa Cabernet Sauvignon is made from 100% Cabernet Sauvignon
The range is named is named in honor of the rich soils in the region which are a major factor in the Barossa’s reputation as one of the great wine regions of the world.
The wine shows a bright red with a purple hue on release. Lifted blackcurrant balances the fresh herb characters on the nose. A hint of eucalyptus is evident. The palate has bright currant characters throughout. Spice and chocolate add to the complexity of the wine. The tannins are ripe and grainy and give the wine good structure.
