Salmon hue with bright red tints. Fine and energetic bubbles. A ripe, complex and youthful bouquet of slightly tangy red fruit (redcurrants, blackcurrants), ripe citrus (blood orange) and roasted cocoa beans. After some time in the glass, the wine reveals sappier, floral and sweet notes with a saline, almost briny, core. The first impression of the wine is of a generosity, softness and concentration. One has the sensation of biting into juicy, ripe fruit and blood orange, it is a fabulous aromatic explosion with luscious and slightly tangy overtones. The concentrated and dense body takes over and reinforces the impression of substance, of concentrated liqueur on the mid-palate. The finish stretches out, perfectly-honed, gradually revealing umami notes thanks to the precise and crisp mineral freshness.

Wolfberger Cremant d Alsace Rose Brut is 100 % Pinot Noir. 

The wines from Alsace date back to 589 A.D., but Cremant d’Alsace has more recent beginnings, starting in 1900.  Dopff au Moulin (founded in 1574) was the first to produce Cremant d’Alsace in the Method Champenoise style.  Cremant d’Alsace received AOC status for sparkling wine in 1976.  Two types of Cremant are produced today, resulting in about 2.5 million+ cases of Cremant d’Alsace production annually:

This large Spumante estate with just over 100 acres of vines produces high-quality Prosecco. The non-vintage Rebuli Prosecco di Valdobbiadene Extra Dry is light-bodied and flowery with plenty of white peach, orange and pineapple notes in its exotic aromatics and flavors. description: This is a Pét-Nat Prosecco. 
Pét-Nat is short for Pétillant Naturel (French for Naturally Sparkling).
It is the same vinification method as "Methode Ancestrale" used in Bugey Cerdon. 
The wine is bottled before the end of the first alcoholic fermentation. Unlike Champagne method (in which the base wine completes his first fermentation in tank and only the secondary fermentation takes place in the bottle adding sugar and yeast also known as liqueur de tirage, which will requires the wine to be disgorged), Pét-Nat method doesn't imply the wine will be filtered or disgorged upon fermentation. 
This gives Pét-Nat its light and fizzy mouthfeel, generally with a little sweetness and low alcohol. Most of the times, bottles are slightly cloudy from the presence of lees.
The wine is vibrant with complex lemon citrus, pear and verbena. It finishes dry with delicate yeasty notes.

The Opus One 2018 offers profuse aromas of blackberry, cassis, and black cherry. Elegant notes of violets, white pepper and rose petals follow and together they deliver a very seductive bouquet. The seamlessly layered flavors build to a crescendo of fresh and juicy black-fruit, accented with hints of orange zest, licorice and dark chocolate. If you prefer a thinking person's wine you'll run out of superlatives to describe this Riesling from Dr Loosen's Oregon project with J Christopher Wines. From a personal favourite, the old vines of the Medici Vineyard, the winemaking shows serious patience and determination. Fermented in a 3,000-liter, neutral oak German Fuder cask. It rests on the full lees for two years and is then held in bottle for three to five years before release. Aged, savoury and delicious. Aromas are savoury and saline. Lanolin, dandelion, seafoam, and beeswax with hints of fresh herbs and dried lemon peel. The palate is brilliant, savoury and bright and complex. Energetic flavours of wet slate, savoury bee pollen, white tea and lanolin notes. The finish offers crushed stone vibrancy.

Charles Smith K Vintners Powerline Estate Syrah is made from 100 percent Syrah.

Friendly, approachable and vivacious, yet also dark and mysterious. Black cherry, allspice, black ash, and orange blossom. Thyme and flint with ark fruit, cedar, kelp, black pepper, juniper, crushed rock, and tons of complex floral notes. Fear not, embrace it.

While just bottled a week before this tasting, the 2019 Syrah Powerline Vineyard certainly wasn't showing any worse for it, offering a stunning bouquet of ripe red and black fruits as well as white pepper, sandalwood, tobacco, and new leather. Pure, medium to full-bodied, and vibrant, with supple, polished tannins, this brilliant Syrah is going to keep for 10-12 years, if not longer.

Lovely salmon pink color. A very delicate nose of strawberry and redcurrant fruit with floral undertones. There is a silky richness on the palate full of red berries balanced with a subtle bready texture. Very accessible. Will also develop nicely over time.

G.D. Vajra Barolo Coste di Rose is made from 100 percent Nebbiolo. 

The Coste di Rose is a very seductive wine right out of the gate. Cherries and roses burst on the nose, with hints of amarena, red hard candy, wild berries, wet stone, mint and thyme. The palate is radiant and expressive, with all of the signature elements of Coste di Rose in nice evi-dence: the ethereal character, the saline, up-front tannic structure, and further whiffles of roses and cherries in the finish.

Review:

This wine shows a darker and more savory profile than Vajra’s Costa di Rose, its black-cherry flavors tinged with notes of licorice and tobacco. Scents of lavender and violet lend a delicate touch to the wine, which continued to gain verve and freshness with time in the glass.

An extremely fine and grouped effervescence. The dress is crystalline, luminous, and slightly golden. The nose is fruity, fresh, and tangy. Both greedy and elegant, it expresses pastry notes and aromas of fresh fruit: nougat, frangipane, candied orange, and mirabelle plum. A delicate note of passe-crassane pear carrying a touch of Williams pear liqueur can be guessed. A tonic wine, with a nice tension around the aromas of fresh fruits. Nectarine, yellow peach, and a tangy note of rhubarb develop in the mouth. The end of the mouth is clean, frank, saline, and mineral leaving a touch of bitterness and verbena.

Having retained all its youthful acidity because there was no malolactic fermentation, the Champagne is brilliantly lit. Acidity and a light texture from the Pinot Noir in the blend give the wine a crisp edge with still-young citrus.

It is not a secret the magnitude this wine can reach. In this vintage, femininity reigns supreme. Perfume, flowers, cassis. All anchored to sense of place with stone, ancient soil and chanterelles that make this wine a wine of the earth.

Kirsch, ripe black cherries, roasted herbs, violets, and orange blossom notes all emerge from the 2018 The Hidden Syrah Northridge Vineyard, which is all Syrah brought up in neutral oak. Rich, full-bodied, and beautifully polished, it packs loads of fruit yet stays light on its feet, with no sensation of heaviness. As with all of these Syrahs from Smith, it's going to benefit from 2-4 years of bottle age.
