Domaine Barolet-Pernot Pere et Fils is a small Estate located in Saint Romain. They currently have 14 hectares (34 acres).
The Estate dates back from 1570.
In 1619, the 2 Barolet brothers, Pierre and Philibert, are taking care of the winemaking. The current logo on the label is a tribute to the two brothers. At that time, it was only under the name Barolet.
In 1957, the union between André Barolet (from Saint Romain) and Huguette Pernot (from Puligny) gave a new name to the winery : Barolet-Pernot.
In 1980, Didier (son of André and Huguette) took over the Estate with his wife Céleste.
Since 2017, their son Romain is in charge of the Estate with the help of his brother Stéphen and his sister Sophie.

"Sous la Velle" takes its name from its location 'under the village' of Saint Romain. The vineyards enjoy a steep and south facing exposure, planted on marl scree with the vines taking root in the limestone and offering a beautiful minerality to the wine. The nose expresses small red and black fruits, blackcurrant, cherry, raspberry and violet. The mouth provides a rich, supple and elegant wine with a good structure, pure fruit and vibrant acidity.
After destalking the grapes, the juice, skin and pulp are put into the vat for cold maceration. It lasts from 15 to 18 days. The alcoholic fermentation will follow, lasting from 5 to 6 days. These steps may be punctuated by push-downs. Aging in oak for 12 months.

Opus One is made from 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec .
The Opus One is remarkably elegant and bright offering sumptuous aromas of fresh red and blue fruit, baking spices and vanilla, and a delicate fragrance of spring florals. The initial bouquet is augmented by more nuanced notes of sage, rosemary, and black olive. Juicy flavors of black cherry, blackberry and cassis flood the palate and creamy, fine-grained tannins deliver a delightfully round structure. The purity of fruit is really something else here, with currants and fresh flowers, such as violets and roses. Flower stems as well. Fantastic length and structure to the wine, with tightness and focus. Wonderful fruit. Graceful. A blend of 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec. Try after 2028.

Murray Cabernet Sauvignon Red Mountain is made from 78% Cabernet Sauvignon, 10%, Merlot , 6% Malbec, 6%, Petit Verdot.
A beautiful ruby color, this wine is very fruity with lots of plum and just a hint of characteristic Red Mountain minerality. It is very smooth with a slight texture of tannin on the back. This wine is a real Cab crowd pleaser.
As much as possible, winemakers Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.
They age in the oak barrels until they are ready to bottle.Neutral Oak 52%, New Oak 48% (American 57%, Hungarian 15%, French 14%, European 14%).
After primary fermentation, all wines are pressed directly into 59 gallon oak barrels. Aging for 19 months.
