Bavencoff Bourgogne Pinot Noir is made from 100 percent Pinot Noir.
Color of medium intensity, purplish in its youth at present, changing to ruby then garnet, after several years in the bottle.
The nose offers intense aromas of cherries, kirsch and fresh strawberry. The palate is the perfectly balanced between round tannins and an elegant freshness. It is harmonious and medium-bodied with a silky and elegant texture and a delicious lingering finish.
Alcoholic fermentation in stainless tanks for 3 weeks. Malolactic fermentation : 80% in stainless tank and 20% in one year old casks (Allier).Manual harvest.
Produced from 100% Pinot Noir planted on clay and limestone soils.
Grilled or boiled red meats, roasts, mild game, soft cheeses like Camembert and Brie.

This Bourgogne Chardonnay is fresh and bright. The aromas are expressive with Honeysuckle, Broom and Mushroom. A nice balance between the acidity and the fruitiness, complementing the minerality. It will drink well during its youth but will gain some extra aromatic complexity after a few month in the cellar.
Very pleasant as an aperitif. Our Bourgogne Chardonnay also goes very well with cold meats, fish, grilled and marinated vegetables as well as goat cheese.
Wine was slightly filtered before bottling.

VARIETAL 100% Pinot Noir
CRUSH Night harvested by hand beginning in mid-September, concluding at our coolest sit on October 13. Cluster and berry sorted by hand, de-stemmed, no crushing
FERMENT 7-day cold soaks, followed by native fermentation in open-top containers, with the grapes fermenting on their skins for an average time of 14 days.
AGING 16 months, French oak barrels, 7% new, remainder once-used. Never racked prior to bottling. Bottled un-fined, unfiltered.
NOTES Singularly great. 2018 was an all-time vintage for California’s North Coast, achieving rarely before experienced heights. A mild summer gave way to Autumnal perfection, allowing cooler areas the opportunity to ripen their crop while chemistries remained perfect. What arrives in bottle is nothing short of a pinnacle representation of Sonoma County Pinot Noir — profound depth of pure, red Pinot Noir fruits, caressing textures balanced by deep minerality and a quenching acidity.
Chaume Bourgogne Rouge Pinot Noir 2022 is made from 100% Pinot Noir.Color: bright ruby red
Bouquet: blackcurrant, raspberry and hints of blackberry
Bouche / Palate: smooth attack, balanced, fine tannins and smooth finish
Butterflied lamb, char-grilled steak, venison. Dishes like cassoulet or duck with olives if they're more rustic. Roast goose.
Lismore Pinot Noir is made from 100 percent Pinot Noir
Complex bouquet of crushed rose petals, wild jasmine and fresh French herbs followed by a palate full of cranberry, raspberry and a long savory finish.
The grapes were picked at optimal ripeness. 30% whole bunch fermented in large 5000 liter vats with gentle pump-overs twice a day. The process allowed for a long extraction period which lends to the fruit expression and structure of this wine. The free run wine was drained off and the fermented grapes were then pressed in a traditional wooden basket press. The wine was racked into 225, 300 and 500 liter barrels where malolactic fermentation took place and the wine was aged for 10 months. 35% new French oak was used.

"The 2018 Pinot Noir comes from Walker Bay and Kaaimansgat and includes 30% whole-bunch fruit, aged for 11 months in 25% new oak. The bouquet sports vivid red cherry and raspberry fruit that is exceptionally well defined and beautifully integrated with the oak. The palate is medium-bodied with supple tannins, well-judged acidity and a slightly fleshy texture. There is just the right amount of salinity here, and the finish is kept on a tight leash, allowing the detail and precision to be fully expressed. specific AVA, but rather look for a blend that is big, bold, and super tasty!
Juicy and vibrant, with aromas of raspberry puree, blackberry and spring flowers.
Vines are planted on Arroyo Seco Sandy Loam soils on the following vineyard sites: Rancho La Viña, Kessler-Haak, Clos Pepe, John Sebastiano, Aubaine, Rosella's and Sierra Mar.
Vinification is traditionnal with minimal intervention.
Wine went thought Malo-Lactic fermentation and was bottled without filtration.

Monteagrelo Cabernet Franc has beautiful ruby red with purple highlights.
It displays aromas of ripe red berries with a nice wood smoke complexity, thanks to the aging in French oak barrels. The wine has a very good structure, but the tannins are still quite round and integrated.
Aged in French and American oak barrels for 15 months. No filtration and no fining.
The finish is very long and will allow the wine to be consumed with food, such as grilled meat or cheese.

Laurent-Perrier Grand Siecle No. 26 is a blend of 58% Chardonnay, 42% Pinot Noir
white gold in color with delicate and persistent bubbles, Grand Siecle No. 26 offers a very complex nose which mixes honeysuckle, lemon, clementine and fresh butter aromas, followed by notes of hazelnut and a touch of honey. The feel in the mouth is very delicate and fresh with candied lemon and fresh hazelnut aromas. The palate is silky and mineral with notes of honeysuckle, flaked almonds and clementine.
It pairs with high quality produce and refined dishes, including shellfish, noble fish and white meats such as Thai style langoustine tartare and fine roasted poultry.

This is really something. Electric on the palate. The aromas are so complex with sliced fresh and dried ginger, subtle pie crust, tarte tatin and hints of nutmeg with some salted caramel. Toasted bread, too. Always subtle. The palate is full- to medium-bodied yet hemmed-in with a freshness and balance that draws you back. Savory and vibrant. It's full of energy. Spectacular. Fascinating. Symphonic blend of 2012, 2008 and 2007. 65% of the 2012, 25% of the 2008 and 10% of the 2007. Eight grand cru. Chardonnay 58% and 42% pinot noir. Disgorged February 2023. 10 years on the lees. 7g/L dosage.
