Burgundy is a region in France that is located 100 kilometers from Paris, stretching another 360 kilometers to Lyon. The tiny vineyards are dotted along the narrow valley and divided into the Chablis, Cote d'Or (divided in Côte de Nuits and Cote de Beaune), and Cote Chalonnaise, Maconnais, and Beaujolais districts. The region has many different soil types and microclimates and has been identified into 400 separate classifications. The soils are predominately clay-limestone, limestone, and marl. The vineyards cover 25,000 hectares and are divided into 99 wine appellations that are made up of 5,200 wine growers. 85% of the vineyards are no larger than 10 hectares. 180 million bottles of wine are produced annually. The Pinot Noir grape produces 90% of the wine that is grown in the region. The most common white grape grown in the region is Chardonnay. The Cote d’Or is where Burgundy's most famous and most expensive wines are found, and is split into two parts: the Cote de Nuits, which starts just south of Dijon and extends to a few kilometers south of the town of Nuits-Saint-Georges, and the Cote de Beaune, which starts at Ladoix and ends at Dezize-les-Maranges. The region is 40 kilometers long, and in some places, less than 2 kilometers wide.

The wine offers an expressive nose of white flowers, stone fruits and buttered bread notes. The mouth is mineral and elegant, and delicate toasty nuances bring extra length in the mouth alongside a fresh acidity and a good balance.

Pernot Belicard Meursault Vieille Vignes is made from 100 percent.
The wine is produced from old vines Chardonnay coming from a small parcel of 1.63 acres in the village of Meursault.
This wine offers stone fruit aromas on the nose combined with tropical fruit notes and a hint of toasted oak. The mouth is wide and rich. Complex and textured, bright acidity, a good tension that brings length and balance to the wine that finishes on mineral and citrus fruits.
Pair with Ham with Epoisse cream, Burgundy Snails, Pyrénées sheep’s milk cheese.

Philippe Milan Bourgogne Blanc is made from 100% Chardonnay

Philippe Milan Bourgogne Rouge Cote Chalonnaise is made from 100 percent Pinot Noir.
Light color - translucent - but loads of flavors. Long finish, quite exceptionnal for a Bourgogne Rouge. Very aromatic, with perfume aromas and cherry flavors.
Philippe Milan Maranges Rouge is made from 100 percent Pinot Noir.
This is very Burgundian in style, with fruity, rich and strong flavors. This reminds me of a Marsannay Rouge, Elegant and strong at the same time, with some oak flavors, quite well integrated.

This wine has been aged in Oak (25% new Oak)
This is a little more structured and the style goes more toward the
"vin de garde", or wines meant to age. This wine needs some food, or sometime
in the decanter right now. It is well structured and reminds me of a Volnay. As
a matter of fact, the parcel is located right next to Volnay. The finish is
long and still quite juicy with chewy tannins lingering.
Pierre Olivier Brut Vin Mousseux NV is made from 100% Airen.
A value sparkling brut, made with Airen grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.
The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.
Royet Bourgogne Blanc Hautes Cotes de Beaune is made from 100 percent Chardonnay.

Elegant pale yellow color with fine bubbles. Floral and fruity on the nose, with aromas of fresh butter and cake. On the palate, the wine is crisp and harmonious - a delightful sparkling wine.
Machine harvest. The base wine is fermented at a low temperature. The second fermentation takes place at 14°C for 2 weeks, followed by dosing.
Harmonious, fresh and clean aromas of fresh apple, lemon, orange blossom, white flower. Pure, crisp, silky and fine texture. Ripe fruit flavors and good acidity.
The vines are 40-45 years old of age on average. All of the wines are 100% barrel fermented and 100% M-L fermentation
Excellent with poultry served with a creamy sauce. (The locals enjoy it with Poulet de Bresse / Bresse Chicken).

"The eponymous 2020 Ossian was produced with Verdejo grapes from old, organically farmed vines around the village of Nieva (Segovia), a zone where phylloxera didn't reach. They consider 2020 their finest vintage to date, with a big change from 2018 and when they have achieved a much better understanding of their vineyards. It has notes of pit fruit and sweet spices, with good weight on the palate, moderate alcohol (13.5%) and ripeness and good freshness and balance.
