The grapes are coming from vines planted on gravelly soils.
Average age of the vines is about 10 years old.
Grapes are machine-harvested, so that the grapes are pressed about 10 minutes after picking,allowing to preserve the freshness of the fruit, and avoiding micro-fermentation that would take place by leaving the grapes for too much time in the vineyard after picking.
Each grape variety is harvested and vinified individually.
After picking, grapes are soft-pressed, and the primary fermentation is completed in about 10 days. Then fermentation takes place for 5-6 months, where the cuvée reaches the appropriate level of acidity for foaming, which is performed in stainless steel tanks, thermo-conditioned, for about 20-25 days.

Cortenova Prosecco Spumante NV is 100 percent Prosecco
This Prosecco comes from the highly esteemed area of Valdobbiadene. There are two recognized quality zones for Prosecco, Conegliano and Valdobbiadene. Of the two, Valdobbiaden has always been recognized a having the superior quality due to its naturally higher acidity and its more northern location.
The vineyards lie at 350 meters above sea level. The vines are an average of 25 years old.
The grapes are soft pressed and the free run juice is placed in stainless steel. There is a brief maceration period of 4 hours. Specially selected yeast are added and fermentation is controlled at 20° C. There is no malolactic fermentation and the wine is transferred to autoclaves and a second fermentation is induced following the Charmat tradition. When the desired atmospheric pressure is reached (usually 1 month) the wine is bottled.
Light straw colored with greenish reflections. The perlage is fine and continuous. Fragrant bouquet full of flowers and almonds. In the palate it is fresh and clean with a soft body and a pleasing sparkle. The fruit is subtle and reminiscent of apples and pears with a hint of almond in the background. The finish is inviting.
Can be drunk by itself as an aperitif or with seafood and fish, pastas with cream sauces, chicken and fresh cheeses.

The grapes for Georges Cartier Brut Tradition have been carefully selected from the 3 emblematic areas of Champagne. Chardonnay is sourced from the Côte des Blancs, Pinot Noir from Montagne de Reims and Pinot Meunier from the Marne Valley.
Each grape variety brings its own character and specific quality to the wine: Pinot Meunier brings fruit and roundness, Pinot Noir brings character, power, structure and balance, while Chardonnay contributes to the finesse, minerality and elegance of the result wine.
The blend in 2022 will be 70% 2018 vintage and 30% of reserve wines (consisting of 2014, 2015 and 2016 vintages).

Tasting Notes This refreshing and gently frizzante white wine has hints of tropical flavors with delicate notes of pear, apples and lemon zest and tastes of stone fruit from the apricot family.
Food Pairing Notes Light, refreshing, with hints of citrus, apple and peach, Ca’ Secco doesn't overpower the palate and goes nicely with anything from pizza to seafood and it's heavenly with oysters. The famous “Bellini” (Venice 1948) : 2 ripe pureed white peaches (or peach nectar) + 1/4 ounce simple syrup + 1/4 ounce lemon juice +16 ounces of chilled Ca’ Secco.
Other Notes This zesty, nearly dry white wine, comes from an unusual mix of grapes: Chardonnay, Sauvignon Blanc, Riesling, Gewürztraminer and Muscat; fermented a second time in pressurized, temperature-controlled tanks, where it becomes sparkling before bottling.

The Ca'Momi Estate
When Dario de Conti, Valentina Guolo-Migotto and Stefano Migotto came to America, they wanted to make wine in Napa Valley, while capturing the spirit of their Italian heritage. They take great pride in selecting premium sources of their wine grapes with the majority of the fruit coming from Napa Valley and the rest from other carefully selected areas of California.
Napa Valley is renowned for its Cabernet Sauvignon, and also applauded for producing elegant Merlot, Chardonnay, Pinot Noir, Zinfandel and Sauvignon Blanc. In addition to Ca’ Momi’s wide variety of red and white still wines, they produce Ca’ Secco, the first ever Prosecco-style sparkling wine made in California.
The house in the watercolor painting on our label (see image at right) really is Ca' Momi, our house in Veneto Italy.
We named the house in honor of Momi dea Bionda, a local character who was famous for his obsession with the house, his grapes and his wine. We liked the idea of keeping the memory of him alive. Momi was a memorable character. In his later years, he would ride around the property on an old Moto Guzzi motorcycle withthat had a sidecar attached. Across his lap he carried a rifle, to scare away those hoping to steal a taste of his grapes, and in the sidecar rode his best friend Lidia, a faithful dog who continued to ride in the sidecar even after she went blind. Some of the locals say that he haunts our home. We prefer to think that his ghost is just keeping an eye on things. His dog, too. We love the idea that Momi still watches over our home and its vineyard. In fact, we think we have seen him quite a few times.

Lismore Pinot Noir is made from 100 percent Pinot Noir
Complex bouquet of crushed rose petals, wild jasmine and fresh French herbs followed by a palate full of cranberry, raspberry and a long savory finish.
The grapes were picked at optimal ripeness. 30% whole bunch fermented in large 5000 liter vats with gentle pump-overs twice a day. The process allowed for a long extraction period which lends to the fruit expression and structure of this wine. The free run wine was drained off and the fermented grapes were then pressed in a traditional wooden basket press. The wine was racked into 225, 300 and 500 liter barrels where malolactic fermentation took place and the wine was aged for 10 months. 35% new French oak was used.

"The 2018 Pinot Noir comes from Walker Bay and Kaaimansgat and includes 30% whole-bunch fruit, aged for 11 months in 25% new oak. The bouquet sports vivid red cherry and raspberry fruit that is exceptionally well defined and beautifully integrated with the oak. The palate is medium-bodied with supple tannins, well-judged acidity and a slightly fleshy texture. There is just the right amount of salinity here, and the finish is kept on a tight leash, allowing the detail and precision to be fully expressed. "Walker Bay and Elandskloof are the twin sources of 30% whole bunch-fermented Pinot from Sam O'Keefe. Juicy, floral and charming, it's a graceful, fruit forward style with some clove and tobacco spice and refreshing acidity. Le Jade Chardonnay is made from 100% Chardonnay
The wine comes from south-facing vineyards planted on clay and limestone hills overlooking the Etang de Thau, a coastal lagoon situated between the port of Sète and Cap d'Agde.
Le Jade Chardonnay offers a wonderful yellow color, a complex nose of white flowers, mild tobacco and vanilla. Rich and full-bodied mouthfeel; concentrated with just a touch of sweetness.
Serve with a gratin of scallops, pan-fried sole, or grilled oysters with shallots, parsley and a touch of cream. Also great with goat cheese or chocolate cake!
