This limited edition wine is a celebration of their rich history, tradition, and relentless pursuit of quality across generations.
Caymus has a signature style that is dark in color, with rich fruit and ripe, velvety tannins – as approachable in youth as in maturity. We farm Cabernet grapes in eight of Napa’s 16 sub-appellations, with diversification enabling us to make the best possible wine in a given year. This Cabernet offers layered, lush aromas and flavors, including cocoa, cassis and ripe dark berries.

The 2019 Cabernet Sauvignon Serpent's Back shows a more aromatic, high-toned side of this site. Bright red/purplish berry fruit, pomegranate, cinnamon and sweet floral accents are all laced together. The Serpent's Back is the most refined of these three Cabernets, but it has plenty of Calistoga punch.

Since our inaugural release last year, this wine has quickly become one of the most compelling in their portfolio. Offering a gorgeous deep purple hue, our 2019 captivates with a bouquet of crushed blueberry, summer savory spice, and a delicate tobacco leaf note. The palate is remarkably balanced with well-integrated
tannins and fresh acidity that wraps around boysenberry and black fig along subtle notes of rosemary and a crush rock minerality, which lends tension through the long finish.

In 1971 Charles F. (Charlie) Wagner and his wife Lorna Belle Glos Wagner asked their son Charles J. (Chuck) Wagner, who had just graduated from high school, if he would be interested in joining them in starting up a winery. If Chuck declined the offer, Charlie and Lorna were planning to sell out of their ranch in Napa Valley and move to Australia. Chuck accepted his parents’ offer to launch the winery, Caymus Vineyards.
The Wagners produced their first vintage in 1972, consisting of 240 cases of Cabernet Sauvignon. Since then, Caymus has focused their efforts in the production of quality Cabernet Sauvignon. Today’s production is 65,000 cases.
Caymus Vineyards remains 100% family-owned by the Wagners. Charlie, Lorna Belle, and Chuck worked together as a remarkable team for over 30 years building Caymus Cabernet. Today, Chuck, his two sons, Charlie and Joe, and one daughter, Jenny, have joined the family team. Farming grapes remain the priority with the family farming about 350 acres of choice Napa Valley land.
The Wagners took the name Caymus from the Mexican land grant known as Rancho Caymus, given to George Yount in 1836, which encompassed what eventually became the town of Rutherford and much of the surrounding area.

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.
The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.
Pairs well with Oysters or shellfish and Sole Meunière.
Robert Mondavi The Reserve Cabernet Sauvignon To Kalon Vineyard is made from 94% Cabernet Sauvignon, 3% Cabernet Franc, 3% Petit Verdot.
The story of Robert Mondavi Winery begins here, with the To Kalon Reserve. This tier represents the pinnacle of the wines produced by the winery. The 2021 vintage offers fresh black fruit with dark chocolate, dried herbs, and hints of vanilla and violet. Flavors of black plum and blackberry with red fruit and a hint of graphite on the finish. Elegant and plush with sweet, beautifully integrated tannins and a lengthy finish.

2021 Robert Mondavi The Reserve To Kalon Vineyard Cabernet Sauvignon is a beautifully crafted wine with impressive intensity, depth, and a balanced structure that carries the day. From the To Kalon Vineyard in Oakville, the portion owned by Constellation, comes this blend of 94% Cabernet Sauvignon, 3% Cabernet Franc, and 3% Petit Verdot. Pure blackberry fruit, cassis, graphite, and violet aromas leap from the glass, nuanced by fragrant, toasty new cedar wood. Full-bodied, framed by an array of plush dark black fruit notes, currants, crème de cassis, and polished tannins that are firm and elongated, with ironstone mineral accents. Faust Cabernet Sauvignon is made from 85% Cabernet Sauvignon, complemented with Merlot, Petit Verdot and Cabernet Franc.

The 2022 Post & Beam Cabernet Sauvignon displays seductive aromas of briar patch and plum sauce on the nose before leading onto a palate that is well-structured yet elegant. Round and textured on the palate, the entry is layered with cassis and blackberry. The finish exudes vanilla, mocha, and cocoa flavors alongside resolved tannins.

Notes of plum liqueur and freshly roasted coffee grace the palate as dark chocolate and anise entwine with the wine's well-defined structure and satin-lined tannins. Long Shadows Saggi Red is made with 58% Sangiovese, 30% Cabernet Sauvignon 12% Syrah. Among Tuscany's oldest and most prestigious wine families, Ambrogio and Giovanni Folonari teamed with Allen Shoup to produce a wine that showcases Washington State's terroir with plenty of Italian character. Saggi (meaning "wisdom") is a stunning blend of two outstanding Washington Sangiovese vineyards. Candy Mountain Sangiovese gives the wine its dark fruit flavors and appealing notes of anise. Dick Boushey's Yakima Valley Sangiovese, planted in 1992, adds vibrancy and liveliness. Because Cabernet Sauvignon has the potential to overtake Sangiovese, the Folonaris work closely with Sagemoor Vineyards to carefully select blocks of Cabernet they know from experience deliver elegant character and refined tannins. Syrah, also from Sagemoor, adds to the wine's dark color and rich mid-palate.

The 2018 Red Wine Saggi is mostly Candy Mountain Sangiovese (58%) with Cabernet Sauvignon (30%) and Syrah (12%). Gilles Nicault has created a sensational, one-of-a-kind blend here. The wine explodes out of the glass with potpourri and anise tones alongside a beautiful core of red and dark fruits. The palate offers tobacco, milk chocolate and boysenberry flavors, serious depth and concentration, insanely good range and an opulent sense of texture. The 2022 Jayson Chardonnay achieves a beautiful equilibrium of richness, buoyancy, and intricacy. Aromas of sweet Meyer lemon, crushedalmond, and grilled pineapple lead to a concentrated palate of bright lemon curd and orange blossom honey underscored by fresh pear andtoasted nuttiness with a hint of baking spice. The texture is classic Pahlmeyer, plush and detailed, while the presence of bright Carneros fruitbrings energy and litheness. This generous, buttery and spicy wine is sourced from several parts of Napa Valley and brings gorgeous richness to the nose, palate and finish. Elements of brown butter, marzipan, toasted almonds and poached pears flood the flavors, with vanilla bean and a touch of sweet coconut. Barrel fermented in 36% new French oak, it’s full-bodied and nicely viscous in texture.
