Jean-Claude et Nicolas Fayolle Hermitage Rouge Donnieres is made from 100% Syrah.
Made from 40-year-old vines planted on granitic and rocky soils in the Lieu dit "Les Donnieres" at the bottom of the Hermitage's hill.
Intense inky ruby red color.
The wine has plenty to offer with red and black fruit aromas, as well as a good minerality.
The finish is very long, clean and juicy and offers a great spicy mouthfeel.
Soil is clay, silica and round pebbles.
Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed).
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
Tey will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.
Delicious with grilled red meat such as venison or lamb and most cheeses.
Review:
Cedar and cracked pepper notes mark the nose of the fully destemmed 2019 Hermitage les Dionnieres, backed by ripe blueberries and black cherries. Smooth, ripe and creamy in feel, this full-bodied yet supple Hermitage looks to be a top-flight effort. With the concentration and balance evidenced on the long, silky finish, it's delicious now and should still be going strong well into the next decade.

"Glass-staining violet. Deeply pitched black and blue fruit, licorice and floral pastille scents are sharpened by a spicy cracked pepper flourish. Youthfully chewy and focused on the palate, offering ripe blackcurrant, bitter cherry and fruitcake flavors that take on a mineral nuance on the back half. Charles Thomas Cotes du Rhone Blanc 70% Grenache Blanc, 15% Roussanne, 10% Marsanne, 5% Viognier
Bright yellow in color. The nose has a nice aromatic expression with white peach, apricot, candied lemon and lime notes. The palate is tasty and has a great generosity, a nice sweep on the attack and a crispy and acidulous finish.
Traditional vinification. The grapes are pressed upon their arrival in the winery. Low temperature fermentation in thermo-regulated stainless steel. Each grape variety is vinified separately and then assembled before ageing.
Excellent wine for an aperitif. It pairs perfectly with grilled fish, platters of seafood and shellfish. It also goes well with simple dishes: pizzas, salads, tabbouleh or steamed vegetables. Cheeses: Goat cheese, Blue cheese and hard cheese such Comté.
Fayolle Crozes-Hermitage Rouge La Rochette is made from 25-year-old vines planted on loess and red granitic soils. 100% Syrah.

Cazaux Vacqueyras Blanc Les Clefs d'Or is made from 50% Clairette, 30% Roussanne and 20% Grenache Blanc.
A wine with lively acidity, expressive aromas of fennel and white flowers. It is long and full in the mouth with minty and anisy aromas mixed with white peach flavors. Refreshing and mineral character.
Clairette grapes are green harvested to concentrate and harmonize aroma. Each grape varietal is hand picked separately. Pressing with skin contact at low temperature. Aged 12 months in stainless steel tank. (No oak)
Enjoy this wine with all sorts of fish starters, squid salad with olive oil and basil. A must try with fresh oysters.
Chavy-Chouet Bourgogne Blanc Les Saussots is made from 100 percent Chardonnay. A medium yellow straw color in the glass. On the nose, you will find layers aromas of cured lemon and hints of coconut and mango. On the palate, the juice has clean flavor, fresh acidity, and excellent balance. Vanilla notes follow through to the slightly creamy finish.
The grapes from this wines are grown from the Meursault area. (either outside of the AOC limit or with younger vines).
Seafood, fish, salad or by itself as an aperitif.

Krug Rosé 27ème Édition is a blend of 38 wines from 9 different years, the youngest of which is from 2015, while the oldest dates back to 2005. ▪ It was completed with 10% traditionally macerated Pinot Noir of the year blended from plots in Aÿ and Mareuil-sur-Aÿ, to add a unique spiciness, colour and structure. At first sight, its subtle pale pink colour holds a promise of elegance. On the nose, aromas of rose hips, cured ham, mulberries, redcurrant, peony, pepper and pink grapefruit. Thirty-eight wines from nine vintages spanning 2005 to 2015 - 55% of them reserve - went into this blend of 57% Pinot Noir, 23% Chardonnay, and 20% Meunier; a nonpareil of shimmering depth. On the pure, precise nose, raspberries and roses mingle with suggestions of woodsiness, honey-cured ham, and parmesan rind before vibrating with white peach and red currant, honeyed cashew, and a soupcon of tobacco leaf and cucumber on the palate - where the tension between its almost ethereal refinement, thanks not least to the unending mousse, and the luxuriance of its finish is simply (or not so simply) delicious.

Dark ruby color. Aromas of cherry, currant, vanilla bean and hint of tar. Full-bodied, with flavors of cherries, cocoa powder and oak. A touch of sweetness on entry with a little bit of air with soft tannins that are starting to integrate well.
The latest step in the project is Vinsacro (formerly Valsacro) Dioro. The earlier Valsacros were made from a field selection of the older vineyards. Now, thanks to the new facility Amador has been able to build an upmarket version of Vinsacro (formerly Valsacro) with a four-stage selection process that includes an initial field selection of the fruit followed by a second table selection as the grapes come into the winery. After fermentation wine from selected tanks is transferred to new French oak barrels for 12-14 months of barrel age. Finally, the best barrels are set aside for Dioro and the remainder used to "upgrade" the normal Vinsacro.
Vinsacro Dioro is a blend of grapes from 100+ year old "vidau" vineyards where many varieties were planted together in the same plot.
Today the grapes are harvested and vinified separately. The final blend depends on the vintage but typically it's Tempranillo (50%), Garnacha (20%) and remaining 30% is a mix of mainly Graciano (10%) & Mazuelo (10%) with a little of Monastrell (5%) & Bobal (5%).
