Ferrata Ceneris Etna Bianco is made from 80% Carricante and 20% Catarratto.

Ideal with shellfish, raw fish or preparations with more intense flavors, fresh and semi-aged cheeses.

Ferrata Etna Bianco Veni is 100% Carricante 

Straw yellow colored with hints of almonds, vanilla and ripe fruit notes on the nose. On the taste, it is very rich in savoriness and freshness. 

No irrigation. Hand harvest at the end of october.

Destemming and soft pressing into a pneumatic press (Extraction of the 60% of the Juice, Mosto Fiore).
60% of the juice was fermented in stainless steel tanks and 40% was fermented in French Oak barriques (no new oak, only second use barrels).
No ML Fermentation.
Batonnage in Oak.
Ageing in Oak and Stainless steel for 12-14 months, plus an additional 6 months minimum in the bottle.

Vinification: Manually selected grapes, filling of tanks by gravity. Fermentation with native yeasts in concrete vessels without epoxy. Aging in concrete vessels. The 2020 was a very particular vintage, characterized by limited yields and a high speed of maturity, which made it one of the fastest and most challenging on record.

In the search for the purest expression of the identity of Finca Piedra Infinita vineyard, we reached this small plot of 0.73 hectares. Located on its north-east side, it shows the typical facet of Paraje Altamira soil, with large gravels and granite stones covered with calcareous material at a depth of 50 cm.

Just short of perfection in 2020, but this is still a world class wine from the brilliant Sebastián Zuccardi, sourced from a 0.74-hectare parcel on gravel and limestone soils within the Piedra Infinita estate. Scented, ethereal and energetic, this is a detailed, complex, unwooded Malbec with blood orange and blackberry flavours and some underlying grip and backbone. Rinaldi Panta rei Monferrato Rosso is a blend of 50% Barbera and 50% Cabernet Sauvignon.

This wine is quite tasty, smooth, silky and powerful.
It is loaded with dried red fruit notes from the appassimento of the grapes and it also has a lot of spicy aromas and flavors from the oak ageing.

Grown on limestone soils. 
The average age of the vines is 30 years old. 
10% of the wine is appassimento. Appassimento is an Italian term for drying harvested grapes, traditionally on bamboo racks or straw mats, for a few weeks up to several months to concentrate the sugars and flavors. This process is used in making Amarone, Recioto and Sforzato.
This drying method is not traditional in Piemonte but is popular in other part of Italy like in the Veneto region.
Thanks to this new method the wine is rounder and softer, boasts beautiful notes of red dried fruits.
Pantarei is aged 14 months in French oak ((the wood is Allier, medium toast) barrels and 6 months in bottle before release.

Viña Siegel is a family operated winery with a well-established tradition and long history. For generations we have been dedicated to the art of crafting wines with strong identities. Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Their ripe and round tannins clearly express the terroir of Colchagua. Siegel Special Reserve Carmenere has been aged for 12 months in French oak barrels. It has an intense violet-red color, with aromas of black fruits, spices, dark chocolate and dried figs. The palate is balanced and juicy with velvety tannins and a long finish.

Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occurring at 27-29°C for a deeper colour and better structure. Smooth pump overs happen once a day at the winemaker’s discretion. Post-fermentative maceration for 2 weeks. Then the wine is separated from its lees and malolactic fermentation ensues. Once the wine has fermented it is smoothly clarified and cold stabilisation occurs when necessary.

It pairs well with spicy foods, pasta with mushrooms and roasts
